I was thinking asparagus, too! But I would just roast them, even though you have the other greens... with the cheese and cream those will both be less "green" than the asparagus. That also allows for a lighter veg, too.

If you really want a bit of other color, you could roast the asparagus with Parm cheese...

I think you definitly need something red or orange.
How about roma tomatoes, halved drizzled with olive oil and a few herbed breadcrumbs and parm cheese and stuck into a hot oven for 20 minutes?
Or beets? they're not popular with lots of people....but maybe your family could be convinced that pic kled beets are good.
I very often serve pickled beets and eggs at Easter....not many even touch them....but they sure do look pretty in the footed crystal dish!!

The first thing I thought of was also asparagus, it is so springy! It would be lovely roasted. Maybe you could throw some red pepper strips in to roast with the asparagus, that would perk things up!

I like the idea of roasted red pepper with roasted asparagus... Linda made me think how about mozzarella and tomato salad with fresh basil?

We love baked brown beans with our ham. I use a cheater recipe that goes together in minutes. It's brownish red when put together.

Cheater Baked Beans

1 Can kidney beans drained
1 Can lima beans drained
2 Can Brown Beans
1 1/2 Cup of chili sauce
2 Tbl brown sugar
1 Tbl Dijon mustard
1 Tbl Worcestershire sauce
2 Tbl molasses
3 Slices bacon cut in half

Preheat oven to 325 degrees F. In a medium baking dish, mix kidney beans,lima beans, brown beans, chili sauce, brown sugar, Dijon mustard, Worcestershire sauce and molasses. Top with bacon. Bake 1 hour in the preheated oven, until thick and bubbly.

We always have Candied Sweet Potatoes but their just about the same as Yams.
How about a Ceasers Salad with Cheese, Peperoni, Tomatoes ,
Red Peppers,green olives, Etc.
Don't forget the Pineapple Sauce. OH! It's a fresh Ham.

We always have Ravioli, with Meatballs and Sausage along with the Ham .
So there isn't any room for more veggies.

We actually always have both baked beans and sweet potato casserole with our ham, but I wasn't sure if those would go with sauerkraut. Is Lou right, are you Italian? I figured you were Polish or Czech with the ham with sauerkraut!

Lou, I think Eileen is Irish, LOL, definitely not Italian.

I also have sweet potatoes, I like them savory and the girls like them sweet, so they get cooked and then finished both ways.

I like whole onions, quartered nearly through then finished with a pat of butter and a drizzle of balsamic vinegar and I love roasted asparagus. I also like roasted butternut squash or spaghetti squash served with just some butter and a grate of parmesan or a quick "stir fry" of zucchini and yellow squash or a gratin of yellow squash and tomatoes would be colorful and fresh.

I love beets and have fresh beets in the refrigerator to cook, but I'm loathe to share them so I'll probably not cook those. (grin)

Hmm great suggestions..pondering my thoughts. I am doing Italian appetizers like Easter Pie,Stuffed Mushrooms and Clams Casino and Ceasre Salad. I actualy have Eggplant Copanata cooling on the stove to serve with Crostini. Lou... I am Irish both my mother and father...but the hubby is Sicilian ( looks like he should be on the Sopranos,clothes jewlery and all we even have a Soprano style backyard kitchen hot tub etc LOL!!!) so after 19yrs together I guess its rubbed off! I didnt know fresh Ham was German. As a kid my Grandma Kelly always made Fresh Ham with sauerkraut for New Years day and Easter. I carry on the tradition. I already made LindaC Carrot Cake its in the freezer waiting to be frosted. Thanks for the suggestion i do love roasted asparagus!

I'm making baked tomatoes: cut large tomates in half & drain upside down on paper towels for a few minutes. Sprinkle with bread crumbs, minced green onion or chives, basil or oregano (or both), salt & pepper, & drizzle with olive oil. Bake at 400 degrees for 15 - 20 min.

I thought of something else. Very easy to make.
You can use Red Peppers for color.

Here is a recipe for a Pepper dish I made up a while back.
I used a very large Green Bell Pepper, cut in half.
You can use Red.

Lou's Open Face Stuffed Pepper Prelibato ( Pepper Exquisite )

Use your favorite stuffing.
I used stuffing with par cooked Sausage.
You can also use seafood. Use your wildest imagination.
Maybe you better not ?????
Lay the two halves of Pepper on an oiled baking tin or
whatever you prefer.
Put Provolone Cheese on the bottom @Pile on the Stuffing.
Lay more Provolone on top of the stuffing.
Put sliced Tomatoes on that and sprinkle with
Garlic Powder, Onion Powder,Black Pepper and
a little of Old Bay Seasoning (optional)
Finale : Lay some Bacon strips across the top.
Bake in a 350 Degree Oven for about 15 minutes or
until the peppers are as tender as you like them.
ENJOY !!!

Stuffing
1 Celery stalk, (10in. Piece ) and ½ of a Med. l onion (chopped small) and
Cooked in Micro Wave until tender (about 2 ½ min.)

In a large Bowl mix:

1 cup of small bread cubes
1cups of Italian Bread crumbs
1 /2 cup of Rice Crispies (optional )
1 tablesp. Parsley Flakes
2 tablesp. Of Locatelli , Parmesan or Romano grated cheese
1 teasp. Of Onion Powder
½ teasp. Of Garlic Powder
½ teaspoon of Old Bay Seasoning
Salt to taste ( ½ teaspoon to start )

1 piece of Italian Sausage 10 in. long, skinned and
cut into small pieces. Sautee till medium rare.
Add the cooked Onion and Celery.
Put 1 egg into a cup of chicken stock (or Chicken Soup Base )
beat well and mix this into the other ingredients. Add a little water,
if the mixture is too dry.
Add more sausage, or whatever you like, etc..
If you have any Stuffing left over, freeze it for later
