Do you use it or toss it?

The carcass is what I mean. I have a pot of chicken soup simmering on the stove. I roasted a big fat chicken the other day so now I'm using the carcass for soup. Do you save the carcass from chicken, turkey etc? I think I enjoy the soup more than the big dinner.

I just use whatever I have in the fridge. Leftover veggies, gravy etc. then add some sort of starch. Rice, noodles, maybe potatoes. Whatever I have. Today it's rice with celery and carrots. Something I did this time was roast the chicken with rosemary and half a lemon in the cavity. I put the entire carcass in to simmer with the lemon. It really made a nice stock. Very flavorful! What's your soup secret?
