I like baked/grilled tomatoes...

... as a side, especially for company. In browsing a couple of my older cookbooks & recipes, I realized I haven't fixed them for a LONG time. Too fixated on trying new recipes, & out of sight, out of mind, I suppose.

The quick way I fix them is to slice off the top, drizzle with olive oil, & sprinkle with bread/panko crumbs, basil, & salt & pepper. Broil 3 to 5 minutes.

I have two favorite recipes from the California Heritage Cookbook for when I want something more elaborate.

Chile Cheese Tomatoes

6 to 8 servings

3 large or 4 medium tomatoes

1 c sour cream

1/2 tsp salt

1/4 tsp pepper

1 tsp sugar

1 Tbsp flour

2 Tbsp finely chopped scallions or green onions

2 Tbsp chopped green chiles

1 c grated sharp Cheddar cheese

1/2 c grated Montery Jack cheese

Cut the tomatoes in half & hollow them out. Save the pulp for another use. Drain the tomatoes upside down on paper towels while preparing the filling.

In a small mixing bowl combine the sour cream with the salt, pepper, sugar, flour, onions & chiles, stirring until well blended.

Arrange the drained tomato halves right side up in a broiler-proof pan. Spoon the sour cream mixture into the tomato cavities, mounding it evenly over the tops.

Mix the grated cheeses together in a small bowl & set aside.

Place the tomatoes in the broiler & broil about 4 inches from the heat until bubbly, 3 to 5 minutes, watching closely to keep from burning.

Remove from the broiler, sprinkle the cheeses over the tomato tops, & return to the broiler for another 2 to 3 minutes, until the cheese is melted & golden.

Baked Cheese-Stuffed Tomatoes

8 servings

8 medium tomatoes

2 c grated Swiss cheese

1/2 c light cream

2 egg yolks, slightly beaten

2 Tbsp grated onion

1/2 tsp dried marjoram

1 tsp dry mustard

1 1/2 tsp salt

1/3 c seasoned bread crumbs

2 Tbsp melted butter

Peel the tomatoes & carefully core & scoop out the pulp, leaving the shells intact.

Chop the pulp coarsely, discarding the seeds. Combine the pulp with all the other ingredients except the breads crumbs & butter.

Spoon the cheese mixture into the tomato shells.

Toss the bread crumbs with the butter & sprinkle over the cheese mixture.

Place the tomatoes in a greased 8x12 or 9x13 shallow baking dish. Bake at 350 degrees for 20 - 25 minutes. Serve at once.

Note: Tomatoes may be prepared early in the day & held in the refrigerator before baking.
