Cold air return vent questions

We are DIY remodeling a 30 yr old ranch house which originally had electric baseboard heat and central air. Within the past 10 years geothermal was installed. New duct work was installed for the heat and the existing ac vent was used for the cold air return.

When we removed the ceiling it was noted that the there were three vents in the kitchen originally. Apparently, during one of the remodels, one vent was closed off. We now have the option to install all three vents again, but I'm not sure if it is necessary.

The room is ablong, about 15 x 35 with the kitchen at one end and family room at the other.

Why should we or why should we not install all three vents again, and how far from the walls, or where in the room should be vents be located?
