OT: How do you store your brown sugar?

It seems no matter what I try, it always ends up hard as a rock after the first use.

How/where do your store yours? What am I missing here?

I put it into a Tupperware container. It stays fresh and it's easier to scoop out that way.

My grandmother leaves a slice of bread in with her sugar and it's always soft.

I just leave mine sealed up well and get the same results.

Thanks, Fusion, for posting that link, I think it is the study that I have been searching for. Bookmarked it again... I wish I knew how to transfer bookmarks from a dead computer, I lost a lot of good references. Drloyd, after shelling, I dry nearly all of my beans on trays exposed to room light. Since I don't transfer seed into storage containers until the indoor humidity is low (below 40%), some of that seed is exposed to artificial light for 2 months or more. As reported above, I have seen no ill effects from this treatment. However, I make sure that direct sunlight from nearby windows never hits the trays. For drying pods that were not fully dry when picked, I place them under a fan. The air circulation is the most important factor for rapid drying; the use of heat runs the risk of reducing seed life. Drying pods closely under a light might be OK as long as some means of air circulation is provided. I store seeds in the dark because my initial research into seed storage said that heat, light, and humidity were the enemies of stored seed. To be honest, that was quite some time ago, and I guess I never questioned the light aspect... because dark storage has worked so well for me, and you don't mess with what works. (Additionally, as mentioned above, packing bags of seed tightly in boxes also helps me to keep air from reentering the bags, and further moderates the temperature of the seed inside.) It may be that light is inimical to stored seed because stored seed is enclosed in a container, which is most often transparent. With no air circulation inside, heat from radiant sources can penetrate & accumulate very rapidly in a transparent container. I've observed this most notably in ziplock bags, which can heat very rapidly when exposed to sunlight. For that reason, when carrying seed into the garden for planting, I use a small ice chest. Light absorption can directly induce heat into the seed; but I still wonder whether the light itself - and perhaps its spectrum - has any direct effect on seed metabolism. There is anecdotal information that it doesn't, of seed stored for years in a jar in a lighted room. Personally, I still prefer to err on the side of caution, and keep my seed in the dark.

We just bought the 5 shelf iron display. The shelves are not wide enough for the large 9 1/2 qt oval dutch oven. The 5 1/2 qt and 3 1/2 qt round ones look great on it. I am a little disappointed the large oval doesn't fit. I tried putting it on top, but, since it's the largest pot in the mix, it looked strange. Also, we have the 3 1/2 qt braiser, it fits, but, you have to turn it so the handles don't hit the bars on the side. So for now, the stand and the other pans in the mix sit in my bay window. It's the only place I could see all of them and not keep them in a cabinet. For me, they are heavy, it's easier to lift them from about half counter height. And it makes for a nice window display. We paid alot for them, it would be awful just to hide them away.

In our "Pet Center". It's a corner cabinet turned 90-degrees that faces the foyer where we feed our dogs. It's the only cabinet that has two roll out tray shelves (ROTS). I meant to order it as a trash pullout type cabinet with the door attached to the bottom ROTS and an independent top ROTS, but I forgot to tell my KD about it until it was too late (I was so focused on the inside of the kitchen!) I put the bottom ROTS as low as I could. On that shelf is the dog food (for 3 standard poodles) in a 6-gallon Popcorn Factory can with a tight fitting lid; treats are in a 2-gallon Popcorn Factory can. I put the top ROTS as high as possible and store pet meds, leashes, collars, etc. The top drawer holds batteries and flashlights and similar items. I haven't had the nerve to try Silpats on my induction yet. I used parchment fine for bacon, etc, then used it while making tortillas. The flat cast iron was heated hotter for longer, I guess, and the paper scorched badly. When I moved it, there was a cloudy area below it that didn't clean off. Freaked me out pretty severely, but I got some Cerambryte and took it back up 2 weeks later and the cloudy area came right off. I don't know what it was, it really didn't seem surficial, but it must have been. I've been nervous about trying that again, but maybe I'll do it with a Silpat next time, thanks!

I keep mine in Tupperware along with a brown sugar keeper. It's a terra cotta piece that you soak in water. Keeps it from getting hard. You can find them in most kitchen stores.

In a Ziplock freezer bag with all the air pushed out, and then that goes in a Portmeirion canister. The canister is fine for flour and white sugar, but the brown sugar needs the ziplock bag.

I've found the old round Tupperware containers keep it fresher than the newer square ones -- I've just switched back to the one I've used for 40+ years.

I don't. I make it fresh from molasses and white sugar. I think it has a richer flavor that way and it's one less item taking up storage.

I store my flour, and brown, white and powdered sugar in cylindrical stainless containers I got from crate and barrel when I got married (6 years ago). The lids can sometimes be more difficult to remove since they suction on so well, and I've thought about replacing them (my mom comes over and complains about how difficult it is!). but honestly have never had anything but moist brown sugar and non-clumped white sugar!

I just roll over the bag and secure it with a rubber band. It never gets hard. Go figure!

I store in plastic bag in the refrigerator drawer with the cheese etc. it stays soft for a long time

I don't have a recipe handy. It was always on the bottle of Grandma's (brand) molasses I buy for gingerbread cookies. Of course I happened to have a different brand in the pantry at the moment. But I just mix to color. Both Grandma's and Brer Rabbit have both a light and dark molasses. I use the light version for most brown sugar recipes but the dark for less sweet things like baked beans or brown bread.

Oh...thanks to the internet-I found it: 1 cup sugar + 2 TB molasses.

I keep mine in an old square-ish tupperware container with a Brown Sugar BearÂ. :-) Every now and again (since we don't use up the brown sugar very quickly), I need to take the bear out, and re-soak it in water. After I put the bear back in the container with the sugar, the sugar re-softens.

Tupperware. Modular Mates from Tupperware. A super oval #1 modular mate will hold 1 lb. of brown sugar, a super oval #2 will hold 2 lb. of brown sugar. An oval #2 will hold 1 lb. or brown sugar. A square #1 modular mates will hold 2 lb. of brown sugar. A good tip is to place a piece of fresh bread in the modular mate with the brown sugar for 24 hours, remove after 24 hours. The moisture from the bread will keep the brown sugar soft. Tupperware states that staples such as baking products will stay fresh for one year in modular mates.

FWIW, I have found that very gently warming the block of sugar in the microwave (on defrost) loosens it up . . . .

I used to have a lot of trouble with brown sugar going hard when I bought the small boxes. I've been buying the larger bags for quite a few years now and never have a problem. I do the same as scootermom, roll the top of the bag over and secure it with a rubber band...actually I use 2-3 rubber bands spaced evenly to ensure it all stays well sealed.

I also like the larger bag because I can put a measuring cup right down into the bag and use my hand outside of the bag to pat down the sugar into the cup.

I do as others have said: I roll the top of the bag tight so all air is out, then secure it with a rubber band. I then put it into a zip lock bag again making sure all air is out. It is amazing, but since I have been doing this the last 2 years, I have had NO problem with hard brown sugar! Prior to doing it this way, I had problems with the brown sugar always turning hard!

One of those clear Rubbermaid canisters with the white top - never gets hard or dry. I use those for everything - sugar, flour, cat food, rice, etc.

I too think it's kitchen related. No wonder I couldn't find the thread anymore! I guess I shouldn't have said OT in the title.

Anyway, thanks everyone for the great ideas. I'm getting one of those sugar bears to try!
