Oh my gosh I guess! Get off your feet woman!

When I have left over lasagna ingred from making lasagna for pot luck or freezing Ijust discovered this - I make myself those large shells since they are easy to 'make fresh' i.e. unassembled, till each night, as you go. Boil the shells in a oven proof pot, drain, pop the ricotta in, pour some sauce over and a little cheese, into the oven, and voila, a one pot meal.

Does working all day count? LOL I did put a load of towels in the wash a few minutes ago. I just finished the staring in the fridge, freezer, and the pantry trying to decide on something for dinner.....I'd like some of that lasagna PLEASE!

Constructive? Well, I went to work and then I took a walk throught the garden. All kinds of things poking up, so now I can start to plan. Made a dinner of salad, asparagus, homefried pototoes for Dad and grilled some filets.

But wait, you babysit the hairy beast and they get a pan of lasagna? Will you watch Dilly for me? I would be happy with a pot roast.

Sometimes you eat the bear, sometimes the bear eats you. Today I ate the bear.

The weather changed dramatically for the better yesterday and today. It really got the juices flowing. I did some significant garden prep work. But most important, I attended to three matters which have been haunting me, one for days, another for months and one for years (believe it or not!). I got closure on the first two and took a major step toward closure on the third.

Mingled with those happenings, I had two meals. First was a late breakfast of a muffin and coffee. The other was one of my favorite meals, salmon shioyaki cooked with a bit of soy sauce with steamed asparagus and white rice. The major part of the salmon fillet was prepped and refrigerated to make lox. Several good breakfasts and snacks ahead!

Thanks for asking, Linda. Such a productive day is very rare for me.

It was a good day here!

Yes, I worked at the office this morning, but this afternoon was spent with the chain saw chopping the last of the felled tree into fireplace lengths, pruning the butterfly bushes and a few roses and raking the leaves off the south facing hosta beds. The pips are up about 2 inches already, if I waited any longer I would have shredded the leaves. I also noticed that in pruning the OOC Meyer Lemon tree, the trimmings smell like lemon and am considering if the trimmings are worth saving for a lemon smoked chicken later this spring..... what do you think?

And, now that you babysat the hairy beast and made lasagna, I think you should head east, we'll hit the Jersey shore for a great lunch and a few cocktails, spend the night at my friends condo on LBI that I get to use free off season then come back here for a spa weekend at the new place that just opened in town.... how fast can you pack?

Linda, your amazing! Wanna come and help with our Main Street fundraising dinner? Twenty Amish women (and our MS group) are making a meal for at least 1,000 people. Chicken, buttered noodles, mashed potatoes, broccoli salad, rolls, pie and cake. No one else wants to make rolls. How long would it take me to do 1,000 with no freezer space??

That was the meeting at the end of the day. My Korean friend was here for the day learning how to bake. We made Annie's Honey Wheat Bread, Sticky Buns and six dozen frosted Pineapple Cookies. Cotehele played with Dungee (her Maltese) all day. We both slept well last night. :)

Our church did a meal for RAGBRAI ( google it!) and intended to feed 1000. we needed 3000 dinner rolls...a friend and I made something like 300 one afternoon...
The main problem was refrigerator space. The food police were there with their instant read thermometers making sure the hot food was hot and the cold food cold. we emptied all the shelves from the refrigerators and filled it with plastic food service containers.
We also do a big meal for 350 or so...an ice cream social with sandwiches, potato salad, beans and pickles.....and an appliance dealer rents us a freezer.
If your meal is for charity think about asking for freebys from local businesses.

Linda, sometimes we just have productive days. You had one. I don't think I did.

Some drunk driver hit a power pole at 11:30 Wednesday night, we were without power until 8:30 yesterday morning. The office didn't open until 10 am and then all the computers were screwed up, so I spent most of the day with IT and on the phone attempting to repair our server out of Lansing which provides our case tracking. I worked until 7, then had to run Ashley's portfolio to her at her new job, she needed it today and didn't have time to come and get it because she was working. That was a 50 mile round trip, and I ended up going through a McDonald's drive through for a burger for Cooper (who rode along) and a mocha for me. That was supper and I still haven't swept the dog hair out of the Jeep, and tonight I'm going to pick up Bud and Makayla, they're spending the night, so nothing productive will happen tonight either!

Heck, when someone watches Cooper they expect ME to cook for THEM!

The weather here was incredible yesterday so we took full advantage. DH worked at the law office for a couple hours in the morning. Then, he finished clean-up & repairs from last weekend's monster storm completing spring clean-up in the process. I offered moral support from my garden swing while he scooped up the last of the muddy muck from the flooding. After a quick shower for DH, together we made bread, 2 batches of cookies (his & hers), put a whole chicken in to roast for dinner, finished watching a PBS documentary of Queen Victoria from Netflix while the chicken roasted, ate dinner, & then turned the leftover chicken into enchiladas for the freezer. A productive day here.

Okay now I'm craving LindaC's lasagna! Constructive/productive day, well we have a 8 week 28lb. puppy. We will have him a week tomorrow and I feel like I have a four legged newborn at home! I am getting NOTHING and I mean NOTHING productive done, other than protecting our furniture and Mr. Peppers from being eaten! But it will be all worth it, hopefully!

Good heavens! 28 pounds at 8 weeks!! What's he going to be when he grows up? A moose! I can't imagine 28 pounds of 8 week puppy stuff....and what's he going to be in another 8 weeks!! Holy cow! 4 months of chewing maniac.
If I lived closer...I would bring you supper....and a couple of beers!!

Come on over Linda and join in on the madness! Mosby is an American Mastiff, a gentle giant, we just have to get to the gentle part. We've always had Great Pyrenees, but living in NC the hair got to be a problem, so we are used to large dogs, I just forgot how much work a large puppy is!

I have a bad thing about mastiffs!! When I was little...very little about 7 or so...there was a family who raised Mastiffs on the route where my daddy and I would regularly take a walk. There was a pen with several huge dogs in and I was fascinated!
Then one day the woman was feeding them in the pan and they turned on her and killed her. I have always been a little afraid of dogs that are big enough that I can't easily control them. I am baby sitting my daughter's very large golden. I'm OK with her because she is 11 years old and calm and gimpy....but when she was young and I knew that if she turned on me there was nothing I could do...I was a bit frightened of her...I am also a little afraid of cows and horses unless there is a fence between us!!
But...I would love to play with a 28 pound puppy!!

I'm craving lasagna now too! Sounds so good Linda.

Gina, wow that is one BIG 8 week old puppy. We got my new one at 8 weeks and he was 5 pounds. He's part shepherd/lab. He is now a little over 6 months and is 55 lbs. and a total ball of energy but so much fun. I totally relate with the chewing!:)
