Why is my Chicken Mushy???

I want to make Teriyaki Chicken & Pineapple kabobs for 50 people.

IÂve tried 2 tests and the chicken is a bit "mushy" Â like the outside of the chicken was breaking down. Or perhaps the sauce I put on at the end was giving some weird mushy mouth feeling???

My first "test", I cut the boneless, skinless breasts and pineapple into bite sized pieces and Marinated over night in a Teriyaki Sauce. I attributed the problem with this test to the fact that the meat marinated 24 hours with the pineapple and the pineapple broke down the chicken  being so acidic.

My second test, I brined the chicken for just one hour for flavor and moistness since I would not be marinating very long. I used my favorite apple juice brine. I then cut everything into bite sized pieces, tossed with the pineapple and Kikkoman Teriyaki & Pineapple Glaze, let sit for 1 hour, then baked.

The second test was better, but still not something I would serve to anyone. What is going on??? In both cases, I did brush the Kabobs with remaining sauce when they were almost done. Could the "mushiness" be contributed to this somehow??? Could the pineapple sitting in the sauce cause some weird reaction?

I was ready to give up, but I think I will "test" one more timeÂ

Any ideas???
