mayo or applesauce for cake mix

Hi, for years I've read you can substitute mayo or

applesauce in cake mix. I've never done it--I figured some

of you have. How does it turn out? Do you add the same amt. as the oil?

With applesauce, you're going to notice a big difference in the texture of the cake--it will be spongier and tougher than a cake made with fat. But it will be healthier so that may be a reasonable trade-off to you.

Mayo? I've heard of that, never done it. Mayo has spices like mustard in it, not something I really want in my cake. Someone will surely have tried it and will be able to help you, I'm sure.

I've never heard of using mayo either. It's basically oil and eggs. As for applesauce, I have done that. It is better for you, but like azzalea said, the texture will be different.

I already voted for Duncan Hines, but I wanted to share another vote from someone not here. A couple of years ago I took a cake decorating class from the owner of a candy/cake making store. She made the cakes there herself; the store is like a mini Disneyland for candy and cake makers. Anyway, she recommend Duncan Hines mixes (if you are going to use a mix). I took one of the cakes to work one day and someone said she always uses Duncan Hines because it is her favorite.... and come to think of it I think she said it was her mother's favorite too. If I'm making the basic cake (white, yellow, chocolate, etc.) I always sift the powder mix first. I use applesauce instead of oil and I always add vanilla no matter what flavor cake I'm making. If I use the whole egg (I usually use the whites only), I beat the whites separately from the yolk before adding anything else. I've been told that my cakes have the texture of wedding cakes. Now as for variations I have added peanut butter and chocolate (a personal favorite) to a white cake, sour cream to a chocolate cake, strawberries to a white cake (omit water) and I am currently making pumpkin bars from a spice cake mix (which led me to your site because I was looking for a way to turn a white cake into a spice cake so I can double it). Use four eggs instead of three, add a can of pumpkin and a quarter of a cup of applesauce (or oil if you prefer), omit water. Bake as directed on the box.

kristlindgren, I just checked my Great-Grandmothers hand written recipe for Applesauce Cake and it was identical to the one you posted with the exception that her recipe stipulated Presto, not flour. She baked hers for 1 hour at 350Â° in a 9x13 pan. I would love to know where this recipe originated. Any idea?

Scratch baking isn't inconsistent when done by the same baker with the same ingredients, tools and oven. When someone who really doesn't know how to bake well has inconsistent results it's usually because the ingredients weren't handled correctly or measured properly, and the baker doesn't know the oven well enough to know the correct settings for that particular oven. I don't get the mix "doctoring" part if it's more than throw in a few raspberries or a box of pudding mix. The basics, the flour, sugar and baking powder, are the easy part! At least once you've mastered measuring. ryseryse_2004, I read once that cake mixes require the addition of milk and eggs so that the person making it will feel like it's really baking rather than magic box factory stuff. I haven't made a mix since I was old enough to measure, however, so this is just a guess: There have been a lot of changes in how fats are handled for factory made foods. It'll be the fats that create the "chemical" taste that Annie mentioned, and which are most likely to vary. They're also the first things to get rancid and therefore are what most require stabilizers and preservatives, which also have gone through changes. That may very well be your difference. They'll also have an effect on texture, and potentially even dryness. Annie and Maddielee bring up a good point. Plain old frosted cake is kind of out of style. It could be they're engineering the cake mixes to be dryer than they used to be in order to stand up to the very wet fillings, soaks, ganaches, cremes and toppings that are so in.

My daughter uses apple sauce for all recipes that call for egg, cause she is vegan. She subs juice or water for the milk, and oil for the butter.

We like the way the cakes turn out, and know, they are lower in calories.

My cousin makes a chocolate cake with mayo and it's probably the most moist cake I've ever eaten!

My grammy always used mayo in her chocolate cake, and as luckygardnr says it makes it very moist.

I have made the mayo chocolate cake and can't tell it has mayo in it.I don't know why you couldn't substitute it for the fat in any other cake as well.The ingredients in Mayo include Soybean oil,whole eggs,vinegar,water,egg yolks, salt,sugar,lemon juice,natural flavors.They don't list the "natural flavors" but I know when making homemade Mayo you use a little garlic or onion powder.Evidently if one of these is in the commercial mayo it isn't enough to affect the flavor of whatever it is being used in.Personally,I don't see the logic in using it as a fat substitute if one is trying to reduce calories or fat in the recipe because it is made with fat.Mayo is made with either soybean or olive oil,both of which have the same total fat with olive oil being lower in saturated fat.If one is trying to reduce the fat content,substituting applesauce would make more sense than using Mayo.As mentioned the texture will be a little different but it doesn't affect the taste.

There is a recipe for Mayo cake and in the original recipe the purpose of the cake is to have a very moist and different cake not as a fat substitute. The recipe has been around for many many years and long before the diet/reduced fat craze. I don't think it is supposed to be used as a fat substitute...just a different kind of cake. It is very good and as someone else said...very moist.

I almost always use applesauce instead of oil when making brownies. You don't taste the apple at all and it lowers the fat and calories. My kids NEVER know the difference and they get extra vitamins. If the recipe calls for 1/2 cup oil I usually do 1/2 cup applesauce. Sometimes I do add a little oil (1-2 Tbsps)to help the consistency.

Mayo has vinegar in it, sounds yucky in a cake. My husband's first wife used to put a can of drained sauerkraut in her chocolate cake. DH insisted it was delicious. I tried making it, the kraut sank to the bottom of the pan and made it chewy and unpleasant, not good at all!

Jannie--sauerKraut cake is delicious. You need to use the right recipe, of course, one with batter thick enough to support the sauerkraut. And did you chop the sauerkraut? It has to be VERY finely chopped.
