Put 2 turkeys in the oven before you leave in the morning...nothing fancy, just plop them in whatever pan you can find and cover with foil....set the oven at 275 and go ski.
If you are going to the Summit county area of Colorado, the slopes will close at 3....so that gives you lots of time to get back to the condo and shower and mix up about 4 packages of stove top stuffing, open up several packages of buns and thicken the meat juices and break up some greens for a big salad.
If you are lucky there will be some left for sandwiches the next day.

Another thing I have done is a spiral sliced ham....it heats rapidly so no need to cook it all day....serve it up on some more of those buns with an assortment of cheese mustard and greens tomato etc for sandwiches.

In my experience, everyonew as ravenous as soon as they came off the slopes....so I always had lots of things like cheese and sliced meats and bean dips etc.....and while they were getting the "I'm starving" over with I could do something like shake and bake pork chops in the oven or even make mashed potatoes for the turkey.

Well, it's quick and easy and you just have to doctor it up...get a BIG GIANT can of chili (it's the best canned I've tried) from Smart and Final (if you have one in the area) and use your crockpot and maybe another large pot on the stove-- add some extra beans, small-chopped/diced green bell peppers (the mystery ingredient), and chili spices and heat it up in the crock pot and in the pot on the stove, and then serve with grated cheddar, crackers, diced onions, sour cream, Tabasco or Frank's hot sauce, etc and you have yourself an easy meal.

You can also serve chili over baked potatoes with cheddar, scallions, etc.

Ummm, p.s.--not such a good idea to leave a pot on the stove unattended, so I amend that suggestion--I skimmed by your original post that said you'd be out all day skiing!

Put a pork shoulder in the crockpot or in a low oven all day. When you get back, shred it and add BBQ sauce for sandwiches. Or you could put a brisket in the oven that morning for BBQ. You could also put on a crockpot of beans that morning and make slaw or potatoe salad when you get in that afternoon.
I would probably make the pulled pork or brisket now, freeze it and then take it out to thaw that morning and reheat that afternoon.
I remember the days when the kids were at home and we did that, what fun.

I've been hosting skiers all winter long, and the one thing I can vouch for is how welcome a carbo high menu is. Those carbs are needed to replenish energy for the next day of fun in the snow.

For an easy, delicious meal, I recommend crock pot chili served over a baked potato, along with condiments: sour cream, grated cheese, onions, and a salad and garlic bread. Brownies are an easy dessert.

How about a spaghetti with a meat sauce? You could make the sauce at home, freeze and transport. Add a salad, some garlic bread, chianti and dinner is done.

The thing my kids complained about....if they complained at all....they were just glad Momma was cooking!
Any how they said...seems like everyone cooks stuff that is tomato based....BBQ sandwiches, chili, spaghetti sloppy Joes etc.
So since the other cooks were making lots of tomato-ey stuff I tried to do stuff that wasn't based on tomatoes.
But I did always bring a huge container of home made spaghetti sauce....and a turkey and a ham!! LOL!

I second the baked potato idea, they are fast, cheap, high in carbs and can be topped with chili and cheese, or broccoli and cheese, just cheese, leftover taco filling, scrambled eggs, smoked fish, ham and cheese, chicken alfredo, nearly anything you can think of. A baked potato "bar" lets everyone choose their own toppings and serve themselves.

Great ideas! I knew that I could count on you all. I am leaning towards baked potato bar or the spiral cut ham. Now, I have to go buy the mountain of snickers that I must have in order to ski all day (perk!). I am the most popular mom on the slopes because everyone knows that my pockets are stuffed with snickers.

Years (and years) ago when I skied at Vail, the homeowner would put a big beef tenderloin in to roast in the morning. When we came off the slopes, the smell was wonderful! We all enjoyed it so much, we took up a collection from all of us skiers to give to the homeowner to help defray the cost.
