If you still want to roast the breasts, you can wrap them in bacon, but this will change the flavor. You could also put butter on them, but then they would require a lot of basting. There are plenty of better things to do with boneless skinless breasts than to roast them - are you open to that? Personally, I would marinate them and grill them, but you can also marinate them before roasting also, and that could help keep them from drying out. I make a lot of different kinds of marinades, from Italian to Japanese style. I also like Mojo Criollo, which is Caribbean. Lemon juice with garlic and olive oil (and possibly herbs of your choice) makes a nice marinade.

I put in a Photo of 2 breasts, standing with Stuffing.

Made a mistake on the time. I corrected it further down.

Baked it in a Waterless cooker with a Lid for 1 1/2 hours,
or until the internal temp reached 180.

There are other messages in there also, as what to do.

Without the skin, I would lay some bacon strips across.
Filling kept it moist and it only takes 5 minutes to make

Dont' roast them....bake them!
Dip the breasts in something like buttermilk or yogurt, or beaten egg....and roll them in something crunchy, like toasted berad crumbs or crushed cornflakes...and slap them on a a foil covered cookie sheet and into a 375 oven for 20 to 25 minutes or until the thickest part is no longer pink when you cut into it.
You can season either the crumbs or the dip with garlic and parsley and paprika...or curry powder and soem ginger, or garlic and oregano....lots of variation.
But don't "roast" them, bake them.

If you haven't done anything with them yet try this:

4 skinless/boneless chicken breasts
salt, ground black pepper, garlic powder
4 tablespoons mayonnaise
4 tablespoons grated Parmesan Cheese
1 cup coarse bread crumbs or Panko
Chopped parsley

Season chicken lightly with salt, pepper, and garlic powder. Combine mayonnaise and parmesan cheese.

Coat each breast with 2 tablespoons mixture, putting more on top. Place in a lightly greased baking dish. Sprinkle with bread crumbs and top with parsley. Bake at 400 until juice run clear (20 - 30 minutes).
