I am another who just loves Sharon's Salmon Quiche! Yum! And I adore Deborah's Paella Salad, too! I wouldn't have hurt feelings if someone wasn't too crazy about a recipe I posted as long as they don't "bash" it and just nicely state that it wasn't for them. We all have different tastes as is so obvious by this thread alone! But I do see Sherry's point, too. There are a couple of recipes I've tried that many of you rave about and I just scratch my head and go "huh?", but we'll leave those be. Here are a couplr of T&T's... Baked Parmesan Fish 1 lb haddock 1/2 tsp salt 1/8 tsp ground black pepper 1/2 c sour cream 1 T freshly grated parmesan 1/4 tsp paprika 1/8 tsp dried tarragon 3 green onions, sliced 1 tomato, sliced 1. Preheat oven to 350F 2. Roll fish into small rolls and place seam side down in ungreased baking dish. Sprinkle with salt & pepper. 3. In a bowl, blend together sour cream, parmesan, paprika and tarragon. Spread over the fish and bake 20 minutes or until fish flakes easily. Top with green onion and tomato, serve hot. Salmon Baked in Foil Source: Minneapolis Star Tribune 1 whole salmon, 6\-8 lb and cleaned 1 c sliced carrots 1 c sliced onion 1 c sliced celery ½ tsp fresh thyme Salt to taste 8 peppercorns, crushed 1 garlic clove, crushed 1 bay leaf 2 c dry white wine Preheat oven to 400F. Cover a baking sheet with foil. In bowl combine carrots, onion, celery, thyme, salt, peppercorns, garlic, bay leaf and wine. Place cleaned salmon in center of baking sheet, stuff with vegetable mixture and seal foil tightly around salmon. Bake 50\-60 minutes or until salmon is opaque in thickest part. Remove from oven and cool. Once cool, remove skin from fish and serve warm or chilled with Hollandaise or your choice of sauce. [](http://www.picturetrail.com/gallery/view?p=10&imgid=260757649) Filets de Sole Au Crevettes (Fillets of Sole with Shrimp) 1 lb sole filets (If I can't find sole I use haddock) 1T lemon juice 1/4 c fresh parsley, chopped 1 3oz can whole mushrooms, drained (I didn't use) 1T dijon mustard 1 tsp cornstarch 1 c cream 1 c cooked tiny shrimp, drained 2 T fine dry bread crumbs 1 tsp butter, melted Brush each filet with lemon juice, season with salt and pepper. Sprinkle one side with parsley, cut fish in half lengthwise. Roll each up loosely, parsley side in, secure with toothpicks. Stand rolls up in 9x9x2 baking dish. Cover and bake at 425F for 10 minutes. Drain off juices, remove picks. Press a mushroom in each roll. Blend mustard into cornstarch, stir in cream. Cook over medium low heat until bubbly, add the shrimp and heat through. Pour the sauce over the fish. Mix bread crumbs and butter and sprinkle over the fish rolls. Bake, uncovered 10\-15 minutes. Serves 4 ~~~~~~~~~~~~~~~~~~~~~~~~~~ Does broiled count? Broiled Tilapia Parmesan INGREDIENTS 1/2 cup Parmesan cheese 1/4 cup butter, softened 3 tablespoons mayonnaise 2 tablespoons fresh lemon juice 1/4 teaspoon dried basil 1/4 teaspoon ground black pepper 1/8 teaspoon onion powder 1/8 teaspoon celery salt 2 pounds tilapia fillets DIRECTIONS 1\. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil. 2\. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside. 3\. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish. Linda

A couple more good ones New Orleans Praline Pie Ingredients: 1 Cup Chopped Pecans 2 Tbsp. soft butter or margarine 1 Tablespoon lemon juice 1 Cup Firmly Packed Brown Sugar, divided 2 Pkgs. (8 oz.) cream cheese, room temp. 1 9 Refrig. pie crust 1 Tsp. Brandy Extract 2 eggs 1 Tsp. Vanilla Extract 1 Cup Whipping Cream Procedure: In a small bowl mix together 3/4 cup pecans, the butter and 1/4 cup brown sugar. Place pie shell in 9” pan and flute edges if desired. Spread pecan mixture evenly in bottom of pie shell. Bake in preheated 4250 oven for seven minutes. Remove and set aside. In electric mixer, beat together cream cheese, 1/2 cup brown sugar, eggs, lemon juice and extracts. Pour into pie shell over pecan mixture. Bake at 425 F for 25 minutes or until center of filling is set. Cool then chill in refrigerator for one hour. Meanwhile, whip cream in small bowl of electric mixer until stiff then whip in remaining 1/4 cup brown sugar. Spread whipped cream over top of cooled pie and sprinkle with remaining 1/4 cup pecans. Chill at least two hours longer. This one is from a great cookbook that my home town church sold years ago. Everything in that book is great. Chocolate Banana Coconut cream pie 1 9in deep dish pie crust 1 T milk 1 T butter ½ cup semi sweet chocolate chips 2 bananas sliced 1 ½ c cold milk 1 (4oz) pkg. Instant vanilla pudding 1 ½ cup flaked coconut 1 ½ cup cool whip 1/2cup toasted coconut Bake pie crust as directed on package. Melt 1 T milk, butter, and chocolate chips in microwave fro 1 ½ mins on high. Stir chocolate until completely melted. Spread chocolate evenly over bottom of pie crust. Layer bananas over chocolate. In large bowl mix 1 ½ cup milk and pudding wth wire whisk for 2 minutes. Stir in 1 ½ cup flaked coconut. Spoon over sliced bananas. Spread cool whip evenly over pudding and top with toasted coconut. Chill 4 hours. We love the key lime pie at Pappadeaux's, here is their recipe. Pappdeaux’s Key Lime Pie with raspberry sauce ***Filling*** * 8 ounces Cream Cheese (softened) * 1 can Sweetened Condensed Milk * 2/3 cup Cold Water * 3 Egg Yolks (beaten) * 1/8 teaspoon Salt * 1/2 cup Flour * 5 tablespoons Rose's Sweetened Lime Juice * 5 tablespoons Key Lime Juice or Reconstituted Lime Juice * 1 teaspoon Lime Zest (very fine) ***Pie Crust*** * 3/4 cup Graham Cracker Crumbs * 1 cup Ground Pecans ( finely ground ) * 3 tablespoons Sugar * 1/2 teaspoon Cinnamon * 4 tablespoons Butter Melted ***Raspberry Sauce*** * 3/4 cup Raspberry Preserves * 1/4 cup Water For Filling: Beat cream cheese until light and fluffy add sweeten condensed milk, beat mixture until completely blended. Use a 2 quart sauce pan to whisk egg yolks with water, add salt and flour. Stir constantly, completely mixing flour into liquid. Add lime zest, Roses Lime Juice and Key Lime juice. On low heat, or in a double boiler, whisk the egg mixture and stir constantly until mixture thickens, resembling pudding in texture and thickness. When egg and flour mixture is thickened add cream cheese. Whisk constantly taking care not to scorch the bottom of pan. Stir until pie filling starts to thicken and is completely mixed. When the filling is thick pour into the prepared pie shell. Chill pie serveral hours before serving. For Crust: Mix all together in a bowl, add melted butter blend well. Press into a buttered pie pan. Place in a preheated at 350 degrees oven for 7 - 10 minutes. When crust is slightly golden remove from oven and cool. For Sauce: Mix in sauce pan until preserves reaches boiling point. Simmer for 4 minutes remove and pour through a fine strainer removing seeds and chill. Sauce may be used to garnish pie when served.

Really hit the spot. I've been thinking about those salmon cakes for a week.To make a basic Hawaiian macaroni salad, you don’t need a recipe; just follow these guidelines: The pasta: Cook 1 pound elbow macaroni (for really local style, cook until soft and fat, but you can go al dente if you prefer). The flavoring: Stir in ¼ cup very finely grated onion. Not minced, chopped or sliced—grated. It should be liquidy (this is how they do it at Diner’s, a local eatery in Kalihi). The mayo: At least 2½ cups for real local style. But there are no rules, so use less if you like. Or more. The add-ins: Carrots, watercress, celery, hard-boiled eggs, pickle relish (try some frozen, thawed peas) whatever suits you. The finale: Salt and pepper, to taste. Stir well; refrigerate. * I don't use pickle relish. I add some grated carrots, dill pickle (diced fine) some grated cheddar cheese and sliced black olives.
