Can I grill chuck short ribs?

I know I can braise them, but when I was at the store today I bought some short ribs to grill. I assumed I could just cook them in the Weber with indirect heat for an hour along side my babybacks, but after doing a little research, now I'm not so sure. Maybe I should braise them first, then finish on the grill...?

I'd appreciate any feedback you all can give :-)

You can cook them any way you want but if you grill them with out a long slow braise, they will be tough.

Yep, I agree with Linda!

"Can I?" and "Should I?" are two different questions! (grin)

I always remember "Chuck" cuts by thinking "Chuck it in the oven". hee hee.........
I know.........TMI. It just reminds me that it isn't a grill or pan fry thing!

I deserve no credit for this "recipe" as it was posted by dannos on the members mark discussion part 2. I just recently purchased a couple of roasts to try it though! I copied it directly from his posting. He also recommends a rib cooking method. If you are interested in that you can go to that string and search on chuck roast! Good luck- Lee Quick, delicious, cheap... $1.99/lb chuck roast. Get an injector kit and inject it with Cajun Creole Garic, liberally sprinkle it with Cajun seasoning (both avaialbe at Menards), put in on the rotisserie for about 2 hours - 160 degress in the thick part will yield slightly pink. Chuck roast isn't round, so the ends that are closer to the IR burner will be extra crispy and spicey. I get my chuck roasts at Sam's - there's two in a package and I cook 'em both at the same time. Try the cajun seasoning on pork chops on the grill - it's great, but go easy on the Cajun seasoning cuz chops are a lot thinner than chuck roasts.

This is not to convince you to buy a sous vide cooker, but will give you a reference perspective point regarding temperature and cooking time with short ribs: (copied from the WEB for cooking short ribs at 145F for 72 hours) "Collagen determines, to a large extent, whether cooked meat ends up tender or tough. It is also the determining factor in how long you should cook a given cut of meat. Collagen fibers are the biological equivalent of steel cabling, forming a mesh that holds bundles of meat fibers together. Proper cooking unravels the cable-like structure of collagen fibers and dissolves them into juices, transforming the tough collagen into tender gelatin. In order to unravel collagen fibers, you must heat them. Heat causes the fibers to shrink, and the contracting mesh squeezes juices out of the meat. The hotter the cooking temperature, the more collagen mesh contracts, and the more juices are lost. If you cook the meat at lower temperatures, fewer of the collagen fibers shorten at any given point in the cooking process, so the mesh constricts the meat less. This is why meats retain more of their juices when cooked sous vide. But at lower temperatures, more time is needed to shrink, unravel, and dissolve enough of the collagen fibers to make the meat pleasantly tender." I generally SV cook at 150F for 48 hours. Short ribs is expensive, given the fact that it is mostly bones and fat, here is a suggestion for you for fun: 1. pressure cook short ribs in a separate container with no seasoning and no water for about an hour. You will get a good amount of the most concentrated beef broth(juice) ever for many recipes. 2. Remove the meat from the bones, and use the bones later for more beef broth the regular pressure cooker way. 3. Now with the meat, which has most of the fat rendered already, and find recipes for boneless short ribs and cook until tender. dcarch

Bob_b: I have to disagree with some of the others. Having done them both ways for years, I have found that there is no lost flavor, by boiling them. But you can't boil them vigorously, just Simmer them, very slow, just about bubbling. - - - - - - - - - - - - - - LouÂs Broiled Spare Ribs and Finger Licking Good , Sauce I use Country Style or Sizzlers , cut a little thicker than 1/2 inch,I like a little meat with the bones. For about 3 1/2 lb. of meat. Put a pot of water to boil, on the range top, with just enough water To cover the Ribs. Add: 1/3 teaspoon of Old Bay Seasoning , Garlic Powder and Onion Powder. An Italian pinch of Ground Cloves , Basil and Oregano 1/4 Teaspoon of Black Pepper 2 Bay leaves Simmer for about 90 minutes ( very low , not boiling ) Meanwhile, put in a small bowl : 1/2 cup of Bullseye or Krafts Original Barbecue Sauce 1/2 cup of Ketsup 1/2 teaspoon of Mustard 1/4 teaspoon of Old Bay Seasoning 1/3 Teaspoon of Garlic Powder & Onion Powder An Italian pinch of Cloves , Basil and Oregano Black Pepper - to taste. 2 tablespoons of Brown Sugar and Maple or Pancake Syrup 2 Heaping tablespoons of Grape Jelly and Strawberry Jam Smooth out the Jelly and Jam with a fork and mix well. This may sound like overpowering sweetness but it is not and Caramelizes perfectly. - - - - - - - - - - - - I use a 9x 13 SS pan and lay some Sauce on the bottom. Then I lay in the simmered Ribs and spoon the Sauce on them. If there is some sauce left over , save it for basting when the ribs are almost done. I cook them in an electric range Broiler, set on Low, Placed on a shelf about 8 inches below the burner. They will cook in about 25 minutes. Test after 20 minutes Ummmmmmmeemm Gooooooooood !!!!!!!! Kalbiqui Korean Spiced Barbecued Beef Ribs

2 lbs beef short ribs, cut into 3 inch lengths (with bone is tastiest, but not absolutely necessary)
1 T sesame seeds, toasted and crushed
4 T soy sauce
4 green onions, white & light green parts only, finely sliced
3-6 garlic cloves, crushed & finely chopped
1 1/2 T sesame oil
1 inch chunk of fresh ginger, peeled & grated
freshly ground black pepper (I like lots!)
2 t rice wine or dry sherry (I have used dry vermouth or even once, whiskey when I didn't have the rice wine, to good effect.)
2 t sugar

Slash each rib in several places to let the marinade soak in really well. This is important as the marinade will tenderize otherwise tough meat.

Mix all the ingredients & pour over the meat, spending a little time to work the marinade into all the meat surfaces & the slashes. Marinate for at least 3 to 4 hours, preferably over night.

Heat up your barbecue & grill the beef, brushing occasionally with the leftover marinade for about 12-15 minutes on each side. Timing, of course, depends also on the heat of your grill and air temperature, but the meat should be nicely brown with just a bit of char. Also, though I generally am a rare beef gal, they really shouldn't be any more rare than medium.

These ribs are richly flavored, and a bit salty so they really need to be served with a bland side dish such as plain rice or boiled potatoes. The Koreans eat them with kimchi, rice and a couple of fresh salads, and, having developed quite a taste for kimchi myself, so do I. The amount of sugar can be increased, which will make the sauce into a sort of garlicky teriyaki, but more care with the cooking will be necessary as the sweeter marinade will burn more easily.

Well, I decided to see what would happen if I just grilled them as I had originally planned. While they weren't the most tender piece of meat I've ever had, they were pretty good. Most importantly, my DH really liked them, so it was all good in the end.

Having said that, I probably wouldn't do them again like that, although the Korean Ribs recipe sounds really good, so I might try that one.

I grill short ribs often but they are flanken cut, sometimes called Korean or Hawaiian cut. You could also butterfly regular cut short ribs if you like.

I just had some pretty meaty BBQ Short Ribs for lunch at Ted's Montana Grill. I have some in the freezer right now. I might try to duplicate the recipe. They were obviously braised, not grilled, then set on a big heap of mashed potatoes and drenched in BBQ sauce. The green beans on the side were awful though, over seasoned and over cooked. They replaced them with squash, the manager came out to let me know he had checked the beans and they were all definitly overseasoned so they got rid of them. Good thing, they were inedible.

Or you could try simmering them in a large heavy Skillet with little water and some Wine
Add all the Spices you like, put a lid on it and simmer for about 1 hour.

While your waiting have a glass of wine. It will make everything taste better.
Have a few more glasses and you won't have to worry about anything. It will taste Great!!!

Then throw them on the Barbecue with your favorite Sauce,
for a short while.

Try a couple of pieces for a test run.

I do this with spareribs too. Then Broil them with my
delicious Finger Licking Sauce.

Wow - thanks for the great video! The short ribs that I bought were really meaty like that, and now that I know what to do with them I'm definitely going to try the Korean ribs.
