I've been happy with Cook's Illustrated's recipe. I typically julienne thick-cut prosciutto and use that in place of the pancetta, and I tend to use cremini rather than white mushrooms. Other than that though, unfortunately I can't remember what changes I made that warranted it a "best ever chicken marsala" vote from my wife when I made it last, as posted on WFD 328. Cooks Illustrated - Chicken Marsala Ingredients 4 boneless, skinless chicken breasts (about 5 ounces each) 1cup unbleached all-purpose flour Table salt Ground black pepper 2tablespoons vegetable oil 2 1/2ounces pancetta (about 3 slices), cut into pieces 1 inch long and 1/8 inch wide 8ounces white mushrooms , sliced (about 2 cups) 1medium clove garlic , minced (about 1 teaspoon) 1teaspoon tomato paste 1 1/2cups marsala wine (sweet) 1 1/2tablespoons lemon juice from 1 small lemon 4tablespoons unsalted butter cut into 4 pieces, softened 2tablespoons chopped fresh parsley leaves Instructions 1. Adjust oven rack to lower-middle position, place large heatproof dinner plate on oven rack, and heat oven to 200 degrees. Heat 12-inch heavy-bottomed skillet over medium-high heat until very hot (you can hold your hand 2 inches above pan surface for 3 to 4 seconds), about 3 minutes. Pat chicken breasts dry. Meanwhile, place flour in shallow baking dish or pie plate. Season both sides of chicken cutlets with salt and pepper; working one piece at a time, coat both sides with flour. Lift breast from tapered end and shake to remove excess flour; set aside. Add oil to hot skillet and heat until shimmering. Place floured cutlets in single layer in skillet and cook until golden brown, about 3 minutes. Using tongs, flip cutlets and cook on second side until golden brown and meat feels firm when pressed with finger, about 3 minutes longer. Transfer chicken to heated plate and return plate to oven. 2. Return skillet to low heat and add pancetta; sauté, stirring occasionally and scraping pan bottom to loosen browned bits until pancetta is brown and crisp, about 4 minutes. With slotted spoon, transfer pancetta to paper towel--lined plate. Add mushrooms and increase heat to medium-high; sauté, stirring occasionally and scraping pan bottom, until liquid released by mushrooms evaporates and mushrooms begin to brown, about 8 minutes. Add garlic, tomato paste, and cooked pancetta; sauté while stirring until tomato paste begins to brown, about 1 minute. Off heat, add Marsala; return pan to high heat and simmer vigorously, scraping browned bits from pan bottom, until sauce is slightly syrupy and reduced to about 1 1/4 cups, about 5 minutes. Off heat, add lemon juice and any accumulated juices from chicken; whisk in butter 1 tablespoon at a time. Season to taste with salt and pepper, and stir in parsley. Pour sauce over chicken and serve immediately.

this is one of my favs that I use with leftover or grilled chicken from the store - more of a warm weather meal. From The Splendid Table Almond Chutney Chicken in Lettuce Roll-Ups Ingredients: Chicken Salad: One 3-pound roasted chicken(take-out works here) 1 medium red onion, cut into 1/4-inch dice Grated zest of 1 large lemon Juice of 3 large lemons, or more to taste 2 jalapenos, seeded and minced, or hot sauce to taste 9-ounce jar Major Grey Chutney, cut into bite-size pieces if necessary 1/2 cup mayonnaise Salt and fresh-ground black pepper to taste 3 large stalks celery, cut into 1/4-inch dice 1 cup whole salted almonds, coarse chopped Lettuce Cups and Herbs: 1 large head Bibb lettuce, leaves separated, washed and dried 1 large bunch fresh basil, washed and dried 1 large bunch fresh coriander, washed and dried 8 radishes, thin sliced 1 large cucumber, peeled, seeded and sliced into thin rounds or 2-inch sticks Method: Pull the meat from the chicken carcass, discarding the skin and bones. Cut it into bite-sized pieces. In a large bowl combine the onions, lemon zest and juice, jalapeno, chutney, mayonnaise, salt, and pepper. Fold in the chicken. Taste the mix for lemon, mayonnaise, and herbs, adding more as needed. Let it stand 20 minutes to blend flavors, or refrigerate overnight. To serve, blend the celery and nuts into the chicken mixture. Mound the salad at one side of a big platter. Pile up the lettuce leaves at the other side, and cluster sprigs of herbs in the center. Tuck the radishes and cucumbers next to the herbs. Put a few herb leaves in the bottom of a lettuce "cup," top them with a spoonful of the salad, a slice each of radish and cucumber, and roll up. I hear ya' about the cooking and more cooking and more cooking...... I bake this Moroccan Chicken recipe instead of grill it...have made it 4 times already, it is that good! Grilled/Baked Moroccan Chicken Good with rice pilaf or couscous and a green salad. 1/2 cup extra virgin olive oil (good quality) 1/4 cup chopped scallions (white part only or chopped onion) 1/4 cup chopped parsley 1/4 cup chopped fresh cilantro 1 tablespoon minced garlic 2 teaspoons paprika 2 teaspoons ground cumin 1 teaspoon salt 1/4 teaspoon turmeric 1/4 teaspoon cayenne pepper 4 boneless skinless chicken breasts or 8 chicken thighs/pieces or leg quarters or chicken halves Optional use 1 heaping TB ras-al-hanout seasoning instead of the ground spices Combine oil, scallions, parsley, cilantro, garlic, paprika, cumin, salt, turmeric and cayenne pepper in the container of a food processor. Process until smooth. Rub the mixture on both sides of the chicken breasts and let stand 30 minutes. Preheat the grill to medium hot. Grill chicken breasts 5-7 minutes on each side, until done or bake at 375 for one hour for half a chicken or 45 minutes for chicken pieces Pizza Chicken Roll-ups - variation from my friend Keren 4 chicken breast halves sliced horizontally into 2 pieces and pounded thin Deli pepperoni very thin slices, 2-3 slices per roll Deli provolone cheese 1 slice per roll Pasta sauce, large jar of Prego or homemade tomato sauce Mozzarella cheese slices, 1 per roll On each piece of pounded chicken breast, layer on 2-3 slices pepperoni and 1 slice provolone cheese. Roll up and secure with a toothpick. Grease a 9x13 or equivalent baking dish. Pour in 1 cup of the pasta sauce. Place rolls in dish and pour rest of sauce over all. Cover with foil and bake at 350 for 30-40 minutes. Uncover and top with the slices of mozzarella then return to oven to melt cheese. Sprinkle with chopped basil or parsley and serve over hot cooked spaghetti that has some melted butter and garlic salt, pepper added.

Ribs and chicken are two of my favorite things to BBQ/grill. Whether with charcoal or gas, both need a fair amount of time to cook using indirect heat, maybe 50-70% of the total cooking time. If with charcoal, you need a BBQ with a lid. Put the coals on one side only and use the other side for indirect heat. With a gas grill, same thing, heat it up and then turn off one section of burner. You can "sear" the outside of the meat at the beginning or the end or a little of both (needed for BBQ sauce), it's the same. Then move the meat to the indirect section. I use soaked wood chips to add to the flavor. Add sauce only at the end and then give it a quick hit to the direct side. The sugar most have will burn quickly. Use a thermometer with chicken to make sure it hits 160 degrees. To avoid sticking, clean the grill first with a wire brush after it's very hot. Oil it just before putting the meat on, using a paper towel dipped in vegetable oil that you hold with tongs. Some fish can stick when doing this but usually nothing else will. Another approach instead of oiling the grate is to lightly brush the raw chicken with mayonnaise. Doing so adds no flavor but its water/oil emulsion will prevent sticking. Same thing usually works with a skillet, like a cast iron one, to avoid using too much oil. (PS - I like liquid smoke in some sauces. It's not needed if you're using bottled sauce or a sauce of your own concoction using bottled sauce as a base)
