Cooking with "real" rice.

I am used to making my mother's recipe for a quick chicken dinner. Place chicken parts in a baking dish, add chicken broth, garlic, celery, carrots and seasoning. Cover and bake at 350 for 1 hour, 15 minutes. Serve with cooked Minute rice. I have a nice, new small enamel clad cast iron pot and I want to cook this dish in it. I would like to add basmati rice into the mix before cooking and make sure there is plenty of liquid and some butter. If I set the oven to 350, how long should I cook, with rice included and covered with the cast iron pot top? I suppose if the meat and vegetables are done before the rice, I can always remove them to a plate and continue cooking the rice, but I would like it all to finish together. Thanks.

I do Nita's recipe with chicken sometimes. Comes out perfect every time. I do add about half an additional can of tomatoes, because DH loves them.

Party Bake Pork Chops
Betty Crocker New Dinner For Two Cookbook copyright 1964

4 lean pork chops, 1" thick
4 thin slices onion
1/4 cup uncooked rice (not instant)
1 can (1 lb. 13 oz.) tomatoes
1/2 to 1 tsp. salt
pepper

Trim any excess fat from chops. Season chops well on both sides with salt and pepper. Brown on both sides in lightly greased hot skillet. Top each chop with a slice of onion, 1 tbsp rice, and cover with whole (From Ang ~ I crush them through my fingers as adding) tomatoes. Add any remaining tomatoes and juice to skillet. Cover tightly; simmer over low heat or bake in foil covered baking dish at 350 degrees for 1 1/2 hours or until tender.

I make a dish using pork chops on rice that's mixed with chicken broth. It's baked in the oven, covered.

I'd say an hour is good for your dish.

Down here in South Louisiana where we grow and eat lots of rice, our preference is for "extra long grain" white rice. Those on diets will boil-cook their rice to remove some starches. For absolute convenience and ease the microwave cooker is hands down the best method IMO.....followed closely by an electric rice cooker. Nothing is easier to clean than a Progressive rice cooker and it is so convenient to store leftover rice in the cooker placed right in the refrigerator for next day use. Can't do that with an electric rice cooker...... When cooking long grain rice by steaming methods as directed above.....a ratio of 2 to 1 is actually quite high. But if it works for you, don't mess with success. FYI...people use anywhere from 1 to 1 ratio of water to rice....all the way UP to 2 parts water to 1 part rice (by volume). By adjusting the amount of water in the ratio, you can control the texture of the final cooked rice. That final texture is usually a personal preference thing. When I cook 40 lb. batches of rice.....I use 1 1/4 parts water to 1 part rice (by volume). This ratio gives me the texture that I prefer. Many Asian rice cookers use a 1 to to 1 ratio. When I steam cook a few cups of rice, I will use 1 part rice to 1 1/2 cups of water. Also, those of you who prefer a "softer" texture rice might also consider using a "short" or "medium' grain rice rather than the "long" or "extra long" grained varieties of white rice. Wild rice will take a bout 30 minutes or more longer to cook than basamati. Why would you want to "dilute" the wild rice? It's wonderful!! Deliciosioso to the max...yum yum!! I measure out the wild rice I think I will need....and it really swells...so 1/2 cup will feed 4 as a side. Then I heat a non nonstick pan pretty blazing hot and parch the wild rice....it sort of pops a little....toss and stir it for about 4 or 5 minutes until it all looks uniformly "popped" then turn off the pan and let it cool a bit. Then when it's cooled off add a couple of table spoons of chopped onion ( a couple of green onions is good) and about 1/4 cup chopped mushrooms...portobellos are really good....and add 2 tablespoons of butter and saute until the veggies are cooked.....then add 1 1/2 cups of chicken broth...or water...but broth is better, cover tightly and simmer about 40 minutes, checking often to see if you need to add more liquid. My pot is a 1 1/2 qu Le Cruset and the lid fits so well It doesn't steam away any moisture. Also a Tablespoon or so of dry sherry added toward the end is very yummy. Linda C

Suzy, from what I found, use a 1 : 1.5 ratio for large quantities of rice. For example, cook 8 cups Jasmine rice with 12 cups water, covered with tinfoil at 350 F for 45 - 60 minutes (check at 45 minutes to see if rice is done, if not, leave it in for another 15 minutes. Also, oil and butter are not necessary for excellent flavor (at least for Jasmine rice). Mind you that this recipe will vary based on the type of rice you will cook. This is why I broke down and bought a huge rice cooker years ago...when you need it, you need it! LOL!

Sunnysmom- I followed the link to chowhound and to be honest Instant Pot sounds like a lot of work. The poster talks about scrubbing the rice, rinsing the rice, etc. Is it really worth the effort? I care about results vs. effort expended. The BS claim of saving up to 70% energy is nonsense. Without hard numbers it is nothing but marketing which can claim anything they want. I ask because I shop for rice cookers every once in awhile. I always start out with an inexpensive model. Then I decide I need this feature, and that feature, and I could not possibly do without fuzzy logic. If the truth is known I do not use rice all that often so do not need anything all that fancy. I just want something that is easy and quick to use. Something that gives better results that using instant rice. Or spending all the time to cook "real rice" without a machine doing the hardwork.

I would soak the rice in an equal amount of water for about 10 minutes (longer, if you prefer), and then add the soaked rice and soaking water to the cooking dish first. There is probably enough extra liquid in the dish for the rice to cook. When I cook rice in a pressure cooker, I use one and a half parts water to one part of rice, if I add vegetables. You can check your dish half way through to see if you need more water or stock.

You didn't say how much rice or stock you were using.

I think the rice would more likely be done before the meat and vegetables.

I make Arroz con Pollo (chicken and rice) with "real" rice, I don't care for the Minute stuff, and it's baked for about half an hour if I brown the chicken before, an hour if I don't.

So, I think an hour would be plenty, and I'd check a couple of times to see if the rice needed more liquid, as you do not say how much rice and how much broth you use.

Annie reminded me that I do chipotle chicken and rice in a dutch oven on the stove. It takes about 1/2 hour.
