St. Patrick's Day is not a holiday, so there was no time to make anything elaborate.

Cheap $1.79 a lb store corned beef, soaked overnight to remove all salt and nitride, bagged it with nice seasoning and sous vided at 144F for 48 hours. So tender and delicious juicy beef, flavorful and not salty because it was marinated in seasonings while cooking for 48 hours. I am glad that I bought 4 slabs at $1.79 a lb. Plenty to enjoy this year.

Cabbage, simmered in some corned beef juicy, not too bad.

Found some giant 14" long carrots. Cut some deep slits for better flavor infusion, and sauteed in corned beef fat. You should try corned beef fat. Better than bacon fat.

Corned beef fat crispy crackling powder sprinkles on the dish for garnish.

I am sure you all had a great St. Pat's Day, Irish or not.

Nice looking corned beef dinner DC. Your pictures almost makes me wish I liked carrots. I said almost. Look at those perfect slices of corned beef.

I found another leprechaun at the TS today. He matches the one to the right of the picture in the CP. This one has a squeeze box (little accordian) instead of the pot of shamrocks. I also found a package of shamrock confetti in my sewing room that I forgot I had so I will be scattering that on the white tablecloth. I wonder what else I have that I've forgotten? I would like to find some more of those little B & B plates, they are such a pretty green. Frou, thanks, you still have plenty of time to do a table. Punk, can you believe I had 12 of the octagon placemats and found 4 more that matched at a TS? That should hold me for the holidays unless, I really have a mob show up, LOL. I'm corning our own flat cut brisket this year-- used a recipe from Bob Appetit-- the brine contains Lager-- it's brined for a total of eight days-- will be interesting to see if it's as good as Dad's old corning recipe. Also planning to do a Beer Cake-- it's originally a German recipe but hey if it's got beer it COULD be Irish. Home Cookin Chapter: Heirlooms , Traditional & Ethnic Gugelhupf Bierkuchen (German Beer Cake) ======================================= 1 cup molasses 1/2 cup butter at room temperature 1 (12 ounce) bottle beer 1 cup raisins, plumped and dried 2-2/3 cups sifted all-purpose flour 1/2 teaspoon salt 1 tablespoon baking powder (double action) 1/4 teaspoon baking soda 1/2 teaspoon EACH, ground cinnamon, nutmeg, ginger (I use 1 teaspoon cinnamon) 1 cup coarsely chopped pecans or filberts, toasted Glaze (see recipe below) . Instructions: Preheat oven to 350°F (180°C). Grease and flour a 9 or 10-inch tube, bundt or gugelhupf (sometimes spelled Kugelhopf) pan. Combine the molasses, butter, and beer in a saucepan and heat only until the butter melts. Stir in the raisins or currants and let the mixture cool for 15 minutes. Sift together the dry ingredients. Stir in the nuts. Pour the cooled beer mixture over the dry ingredients and stir until smooth. Pour the batter into prepared pan. Bake in preheated 350° F (180°C) oven for 45 60 minutes (I check at 45 minutes, mine took 50 minutes). Remove from oven and let stand for 15 minutes before turning out on a wire rack. Let cake cool a bit before drizzling glaze over it. GLAZE: Mix 1 cup icing sugar and enough maple syrup (or liquid honey) to moisten the icing sugar to the drizzling stage. Pour glaze over the top of the cake and let it run down the sides.

Happy St. Pat's Day to all who celebrate. Sometimes I pretend the day doesn't exist and I'm mostly Irish with a touch of Scotland and Wales thrown in - all immigrant coal miners in the mid 1800's. DD is half. As a child growing up in Castle Shannon (a suburb of Pittsburgh) March 17th was the feast day of St. Patrick, not really the huge drinking event as it is now. The day began with a Mass in the Cathedral and then we'd march in the St. Patrick's Day Parade. I took step dancing lessons before someone decided that garish costumes and curly wigs were mandatory, sang all the old Irish songs with my dear Da, drank Brewley's or Lyon's tea with cream and sugar, and baked soda bread with currants with my Grandmother. We will have a special meal to celebrate this weekend when the kids come over for a birthday celebration. They always ask for corned beef and colcannon rather than the Irish stew or shepherd's pie we often had as kids. I took my son to Ireland for 10 days and we had great craic as they say - which means fun. He gallantly put up with me when I joined in the singing in the pubs at night but I spared both of us the embarrassment of dancing any jigs or reels. I hired a driver so that we could both sit back and relax and enjoy the scenery and not deal with the roundabouts and driving on the wrong side. dcarch, heretofore I have pressure cooked my corned beef, but this looks fantastic. I'll have to try doing it that way now that (thanks to guidance by you, foas et al) I now have a sous vide setup.

Okay, in honor of the holiday, and once you're tired of second rate tenors botching 'Danny Boy', here's a non-insulting Irish joke, and a groaner of a pun:

Now, if any of you have only heard schlocky versions of 'Danny Boy' and need to hear how powerful that song can be, listen to the Aussie Judith Durham (lead singer of the sixties group, The Seekers--you know, 'Georgy Girl', 'World of our own', etc)--I don't know if it's ever been done better, even by legendary singers like John McCormack.

I can't listen to the second verse without choking up.

I have said, using sous vide, I had tested a 5% less corned beef shrinkage, that is why it's more juicy.

Speaking of Danny Boy. It is a hobby of mine to search and collect popular English song which has a French version.

Beautiful plating ! I love corned beef and cabbage and potatoes...haven't made it in years and years. I used to always use a corned beef round...very very lean and use a pressure cooker. It was always moist. This was in the 70's though and meat was different then.

I wish I had your set up for the slow cooking. My son has had it in the one kitchen he was using when in VA. He didn't use it much though . Now all he does is the meat curing. He is doing a "stage" in Charleston SC at the moment for 4 days. c

Jasdip, thanks. Just typical traditional ingredients for a corned beef meal.

Trailrunner, Thanks. I visit a few other forums. There is so much interest recently in sous vide cooking with several sous vide cookers at around $200. There must be at least 10 who I know of went and bought SV cookers, and they are not even typical home cooks. They are grillers and smokers.

It does look enticing even though I don't like corned beef and cabbage...so save the carrots for me.

*I'll make this short,,,the HG doesn't know how to boil water so for one birthday I asked for him to cook dinner from scratch. When I told him steak on the grill, baked potatoes in the MW, and cut up lettuce did not count he was thrown. So he took the day off to accomplish this feat...I mean fest. Although it was corned beef, it was a birthday present I will never forget.

DC I was being polite. I usually say I dislike them immensely because that sounds nicer than saying " I hate".

I can eat them raw. Just not cooked. Regardless of how they are prepared.

OK, so Ann T can have my share of corned beef and I'll eat the carrots and potatoes, and I love cabbage. I'm just not wild about the corned beef...

Cathy, I guess it's the thought that counts. Right? (grin)

Pretty. I didn't know you could soak all the junk out of storebought corned beef. Still....we're pretty happy with our costco brisket and Ruhlman's pickling mix.

I'm with Ann on the cooked carrots...ick. I always munch a raw carrot when I'm prepping them for corned beef and cabbage or pot roast.

No, not tempura. If tempura comes with carrots they get passed over to Moe.

Not even glazed with honey or maple syrup.
