ISo Banana bread pudding

Hi: We recently came back from a trip to a spa in Alberta. While we were there we were treated to the best tasting desert \i remember having. It was banana bread pudding with caramel sauce in the centre and over the ice cream on top. It was to die for! I have looked, but nothing seems to sound like it. I think the bread was lightly flavored with banana and may have had dates mixed in as the colour was failry dark. There was no pieces of banana to see or taste in it.

Was the bread a yeast bread or a quick bread? There are recipes for Yeasted Banana Bread (including some recipes with dried fruit in them - more like a banana-flavored raisin bread - King Arthur has a Sandwich Banana Bread recipe). There are also recipes for Banana Bread Pudding with Caramel Sauce. Perhaps with a little more searching you can "marry" two recipes to get a copy-cat recipe.

I've made bread pudding using an over-baked loaf of banana bread that was too dry. Too bad I wouldn't have thought about adding the caramel sauce..... :-)

My go-to recipe:
Palm Sugar Caramel Sauce
(2 servings)
1/4 c. palm sugar
1 T. half & half
1/2 T. Lyle's Golden Syrup

Cook and stir 2-3 minutes in a small pan (or in a small bowl in the microwave for 1-2 minutes) until smooth and caramel color. Add chopped pecans, if desired. [I pour this over chopped fresh apple bits and top it with granola.]

Thanks. Yes, : think you may be right. Something was different, and I don't think it was regular yeast bread. The sauce looks perfect. I'm in Canada and have never seen palm sugar. May in a health food store. Are there any substitutions?

Zucchini bread will probably fall apart and get mushy in bread pudding. It'll be a lot better if you put something airy and glutinous with it. Best bet would be a braided challah because of the long strands and airy crumb. Don't cut the challah too small--let it give some structure and something for the zucchini bread to cling to. And, whatever you do, don't stir it a lot or you'll have zucchini bread soup. You can soak the challah in the custard, but your best bet, for your star ingredient, would be to fill up your pan with the breads, as densely as you can, so the zucchini bread doesn't dissolve, pour on the custard/flavoring mix, and add as much bread as you can. You can press at this point. Just don't squash it too hard. A plastic plate to keep the bread down would be better than a real weight. For the custard, you're right to cut the sugar. If you want it to be a sweet dessert maybe add a little, but it shouldn't require it to be good, especially if you're planning a hard sauce. You could also add some dried fruit to add sweetness, instead. Soak it in the custard for an hour before you mix with the bread. Or you could macerate the dried fruit in liqueur and cook off the alcohol. I haven't tried this, but it occurs to me that an alternative to a traditional bread pudding that might work is to slice the zucchini bread maybe half the height of the pan, dry the slices, then line the pan in two layers of slices and pour the custard over. Let the custard settle and soak in and add more to fill the pan, and maybe another round if it needs it. That would be a lot less stirring and squishing, and the large pieces would have more integrity. More like making a French toast pie. If you want to add fruit, nuts, etc., do it between the layers of bread. Good luck!

here is the recipe I use at work. 2 cups milk 1/3 cup sugar 1/4 cup cornstarch 4 egg yolks sprinkle of salt Mix all the ingredients together in a microwave safe bowl. I use a 2 quart pyrex glass bowl. Microwave for 2 minutes and stir. Repeat this 2 or 3 more times. It depends upon your microwave as how long it will take. We only have a small one at work. I dont know the wattage. Peel and slice your bananas into 7up or orange juice to prevent them from turning black to fast. Let set for a couple of minutes and drain real well and add to pudding mixture. Put into a baked pie shell or a graham cracker crust. Top with meringue made with the remaining 4 egg whites and bake at 400 degrees for 13 minutes or until desired color. Or you can skip the meringue and use whip cream on top. The salt may be omitted, all it is for is that it takes the really sweet taste out of it and makes it taste much better. THIS SAME RECIPE MAY BE USED FOR COCONUT CREAM PIE.THE ONLY DIFFERENCE IS THAT YOU OMIT THE BANANAS AND ADD A 1/3 CUP OR MORE OF TOASTED COCONUT. IF YOU TOAST THE COCONUT IT GIVES IT A STRONGER FLAVOR. I USE THE MICROWAVE TO TOAST IT. PUT IT ON A PLATE AND MICROWAVE IT UNTIL IT IS CRISP AND BROWNED. BE SURE TO CHECK IT EVERY FEW SECONDS AND STIR IT WHEN YOU CHECK IT OR IT WILL BURN IN ONE SPOT AND NOT BROWN IN THE OTHER SPOTS. THIS IS REALLY EASY. If anyone has any questions or would like a similar recipe for butterscotch pudding please let me know. In fact I was thinking with Marilyn Sues recipe which sounds really good I think my butterscotch recipe might work.

The Rose Levy Birnbaum banana cake posted here by jgarner a couple of years ago. I don't even like bananas and I like that cake, I make cupcakes and don't bother to frost them, I just call them "muffins" instead. You could also make a smoothie or two, if you care for smoothies. I don't, but lots of people do. I don't know if it's the same as Deanna's, but I have this recipe for freezer jam, it's from Kraft-Canada. No-Cook Strawberry Banana-Split 2 cups crushed strawberries 1 cup mashed bananas, about 3 ( fully ripe) 3 cups sugar 3/4 cup water 1 (85 g) boxes Certo, pectin crystals Mix fruit and sugar until well blended. Let stand 10 minutes. Bring water and pectin to boil in saucepan; boil 1 minute, stirring constantly. Add to fruit mixture; stir 3 minutes. Pour into clean jars or plastic containers. Cover with tight fitting lids. Let stand at room temperature until set. (This could take up to 24 hours). Store in freezer, or if jam will be used in 3 weeks, store in refrigerator. TIPS: Add 1/3 cup chocolate liqueur to jam mixture before pouring into jars. SERVING SUGGESTIONS: Warm jam, then use as a toppng for hot waffles, ice cream sundaes, or banana splits. For a quick and easy milk shake, add a spoonful jam to vanilla ice cream in a blender container. Add milk, then blend until thickened and smooth. My recipe is a keeper for us. It is 6 to 8 over ripened bananas mashed and set aside. Into a bowl, add 4 cups of flour, 2 teaspoons of baking soda, 1/2 teaspoon of salt, mix with your fingers or a fork and set aside. Into the mixing bowl, add 2 sticks of room temperature softened butter and 1 1/2 to 2 cups of brown sugar and cream it until it is nice and whipped. Then add 4 eggs and an 1/8 teaspoon of vanilla, and beat them into the butter. Then, add the bananas and mix until they're mixed in. Then slowly add the dry ingredients until it just reaches the fully moistened stage, but not beaten into a smooth batter. Don't make your flour work too hard. Then, divide the batter evening between two normal sized loaf pans sprayed with pam or lightly greased and floured. Bake for about an hour at 350 degrees. Always, moist, rich, and lots of banana flavor. Dense and wonderful spread with butter or sweetened cream cheese. Great to add mini chocolate chips to this recipe or some chopped toasted walnuts. You can eat this bread plain and cold or it will even toast up wonderfully for a richer buttery banana flavored treat. I make this recipe EVERY Monday morning from whatever leftover bananas I have. I know it by heart. We go through a LOT of bananas here. I usually buy two to three of the three pound bunches from costco a week. They are cheap, healthy and filling for snacks and of course, the banana bread is a food staple in our home. (The brown sugar amount is based on my mood. I stick in a little more sugar if I feel like it.)

What do you think of this. Could I cut it to incorporate the caramel?

BANANA NUT BREAD PUDDING
3 lg. ripe bananas
1 c. milk
1 pkg. yeast
1 tbsp. salt
1 c. pecans, chopped
1 c. whole wheat pastry flour
1 c. apple juice concentrate
1 c. unbleached flour
1/3 c. honey
1/2 c. chopped dates
1 tsp. vanilla
Warm milk; add yeast and salt. Set 10 minutes. In another bowl, mix honey, dates, vanilla, flours, juice. Then add mashed bananas and nuts. Mix. Add to yeast mixture. Pour into coated 9 x 11 inch pan. Let stand for 1 hour. Bake at 350 degrees for 30 to 35 minutes.
Servings: 8.

Palm sugar - also goes by the name coconut sugar and coconut palm sugar. I've been using it for several years now because it's low-glycemic (doesn't raise blood sugar) and still works like sugar in baked goods (unlike stevia and chemical sweeteners). I've always ordered it on-line, and only recently have I seen it in the natural food section of the grocery store here in the middle of Nowhere Kansas.

You could use dark brown sugar, maple sugar, or a natural sugar like turbinado, but you'll miss a flavor you don't get with other sugars.

I also had an afterthought... Does the spa serve banana muffins, and could the day old muffins be the bread base for the dish?
