Anyone ever cook pasta w/ dandelion greens?

If you haven't you might enjoy this simple to make dish.

Dandelion is fresh on the market now. It's bitter. Cut dandelion into 1/2 pieces and cook in skillet w/ olive oil and butter and garlic. Add cooked pasta to skillet and heat for half a minute, adding grated parmesan cheese. You can also fix this dish w/ red sliced bell pepper to sweeten and add color, or with sliced black olives. Good!

I make a dish called beans and greens, which is the same except for the addition of cooked cannellini beans. I use escarole for the greens but I'm sure I would enjoy it with dandelion. A bitter green is what I want.

Love dandelion greens, garnished with dandelion flowers.

In my experience, long cooking time makes it tough and bitter. The shorter the better.

Mine's the exact opposite of Chi83's, I'm afraid. I ALWAYS bake with the highest quality ingredients--butter, safflower oil, good vanilla (I make my own extra strength because I cannot buy the kind of quality I want), fresh milk etc. We all have mom's Chocolate Cake recipe--the one that's been in the family since the 50's. I even have the magazine page it came from (tattered, stained and now laminated so it doesn't deteriorate any more). But none of us have EVER been able to exactly duplicate the taste of her chocolate cake, to our great dismay. Then 2 epiphanies. Mine: It struck me--Mom always used the cheapest ingredients--store brand everything, and she used evaporated milk (half e.milk/half water) for baking because it was cheaper than fresh in those days. I started buying a bottle of the cheapest veg. oil, using the evaporated milk, and one less egg than the recipe called for (another of mom's cent-saving practices). My chocolate cake was much closer to the original. My sis's--she reminded me that mom always packed the cocoa for measuring. Right, I'd forgotten and was measuring properly. Now? That cake is practically just like mom's--as long as I remember NOT to use my best ingredients and methods, LOL. Mind you, I won't use store brand, imitation vanilla, and the cocoa has to be Hershey's--there are some places I just cannot bring myself to scrimp at all. Note--that recipe tastes very much like Wegman's Ultimate Chocolate Cake, btw. Judging from the ingredients listed on that, it IS very close to mom's recipe (if you ignore all the added chemicals). When I need bacon flavor in a vegetarian dish, I just sprinkle a little of the "bacon bits" made out of TVP. Very little though, they are salty and have more flavor per "bit" than bacon would. I finished off the Cookalong last night by making Alexa's recipe for collards, albeit with a small amount of turkey kielbasa instead of the ham hock. I made it in the crockpot, as one burner is out on my stove and this was a stove-intensive meal. It was yum. I had never made fresh collards before. I liked them a lot, but they are kinda pricey (compared to spinach and kale) so I might not eat them very often. I served the collards with a blackeyed pea stew that BF made with red and green pepper, zuchinni, onion and fire roasted tomatoes. It was FAB, and so colorful! Wish I had taken a photo. That got served over cheesy polenta, to use up some asiago I had languishing in the fridge. Definately a keeper meal and will make again, although next time in may be with kale. Tonight is brussel sprouts. Then I just need to find a way to use up the bottoms of the beets and I will have finished using up all the produce I got for the Cookalong. I am so weird, I have LOVED this cookalong, with all the vegetables that most people turn their noses up at! I hardly ever eat them even though I like them, since they are usually outside my budget. So for me, these two weeks have been a luscious treat! Oh, and here's a freeby for the beets that go with beet greens. Syrian Beet salad (from "Moosewood Restaurant Daily Special" cookbook) 2 quarts water 3 large beets 1 TBLSP chopped chives (or 3 scallions) 2 TBLSP chopped cilantro (or parsley with some ground corriander seed) 2 garlic cloves, pressed 1/2 fresh chili, seeded if you want milder, minced (about 1 TBLSP). I often have to use a healthy dash of Aleppo pepper instead 1 tsp. ground cumin 2 TBLSP lemon juice (or cider vinegar) 3 TBLSP EVOO 1 tsp. salt or to taste In a large pot, bring water to boil. Wash and scrub beets well. Cut beets into quarters and ease into boiling water. Turn to simmer and cook until tender and easily pierced with a knife. Alternately, you can cut the beets into 1/8ths and coat with salt and EVOO and roast at 400 for about 1/2 hour. Put a little veg or chicken broth in the bottom of the pan to prevent the beets from drying out. Cool the beets. Peel the beets after they cool and dice into bite sized pieces. Combine other ingredients into dressing and pour over beets. Chill at least 30 min. before serving. Good cold or at room tem. I serve over a lettuce salad with goat's milk feta, chopped walnuts, and maybe some sliced cuke, pepper or celery. Can also top with sunflower seeds or pumpkin seeds if your are into the anti-oxidant craze. Can sub blue cheese for feta, but not as authentic, IMHO.

Green beans are one of the few veggies that I prefer cooked past tender-crisp. If they're frenched I don't mind them a tad under-done and squeaky, but whole I want them cooked. Just cooked, that is, not killed. I find that green beans vary significantly in cooking time, so like Eileen I tend to boil them until al dente, shock them in cold water (I use an ice bath), then hold cold until ready to simply reheat for two or three minutes in whatever recipe I'm using, usually a simple one. Perfect. Roasted is good, too. I've never had home-canned green beans. If they're anything like commercially canned beans, I'm not interested. Looks like they're in season and on sale around here this week, so I might just have to can a jar or two and see for myself.

I've posted before that I once asked DH to pick up some heavy cream at the grocery, and he came home with a container of Cool Whip. I don't know how I was supposed to make a sauce out of that. One of the absolute weirdest experiences I ever had at a grocery store was when a woman, riding one of those mobility scooters, asked me to help her find a jar of cloves out of a wall of spices. Asked her, did she want the ground cloves or whole cloves. She looked puzzled and said, "I'm not sure". So trying to help I said, "well, what will you be using them in?" She looked embarrassed and said, "My neighbor told me to put them in my pooter." I was just about to say, "I beg your pardon" because I thought I heard her wrong. It took me a few very long seconds to realize that she had been instructed to use them as a suppository. I handed her the whole cloves and excused myself to continue shopping. I'm not sure whether her neighbor was having some fun at her expense, but I didn't want to hear any more of the story.

In PA Dutch cookery, dandelion greens have a tradition as a spring tonic and a welcome harbinger of all the other greens to come. Most often, they are served as a salad, either with a dressing of heavy cream or mayonnaise, cider vinegar, sugar and mustard or wilted by a sweet-sour hot bacon dressing.

Since custom dictates that the plants can only be picked and eaten before the flower buds appear, there is about a two week period when it seems as if every rural church and volunteer fire company is having a ham and dandelion fund raising dinner at the same time.

Bob, I'd definitely like to try them prepared they way you suggested when ours appear. Thank you for the idea.

We would go out on the golf course and pick a large bag of young Dandelions and bring them home to my GM.

She would do as you said and we also ate them without pasta, with some bacon added.

Another dish is Dandelion omelet.

Some families in the neighborhood made Dandelion wine.

Lou, my grandfather used to make dandelion wine. He'd pay us kids a nickle for a big a bag of blossoms when he was going to make it. It had oranges, lemons and raisins in it too but the liquid from the flowers was the most prominent ingredient.

Like ruthanna's area, here the dandelion green is the harbinger of spring, the first fresh green stuff available.

Grandma used to pick the young greens and wilt them, she called it "killed greens", by pouring a hot bacon grease based dressing over them.

I made dandelion wine with the blossoms once, got an extremely sticky and sweet concoction and never made it again, LOL.

I think dandelion greens wuld be good with some pasta as bob described, or in bean soup instead of kale.

Growing up in an upstate New York Italian family, we ate dandelion greens all the time, mom would make us go out side to pick it, in our yard, or the neighbors. She cooked it in soup, with pasta, or just as a salad. I have not eaten it for quite a while, I guess it's time to go find some.

Since a number of you seem to be interested in this dish, I should add that you can do the same thing with swiss chard, especially if you don't like bitterness. The chard is much sweeter. I remove the ribs from the chard, but some people like them.
