Comments (25)Thanks everybody for your good thoughts, prayers, candles and sunflowers. I really appreciate them. My husband might come home tomorrow, he is doing much better since they dropped the Warfarin and changed a couple of other meds. There are still a lot of nice people in the world. When I left this morning, one of our neighbors was mowing his lawn (normal walk behind mower). When I got home a bit ago, my complete lawn was mowed and the two bushes in front of the house which I had started to cut back before the whole mess got going, were neatly trimmed and the garden watered as well as the birdbath refilled. Seems when another neighbor saw what he was doing, two more jumped in and did the trimming and watering....See MoreGluten Free Bread Recipe

From 125 Best Gluten-Free Recipes by Donna Washburn and Heather Butt ~Highly recommend all their books! White Bread 9x5 inch loaf pan, lightly greased 1 3/4 c rice flour (use brown, white or blend) 1/2 c potato starch 1/4 c tapioca starch 1/4 c nonfat dry milk powder or skim milk powder (I omit and use milk for the water below.) 2 T granulated sugar 2 1/2 t xanthan gum (a must for gluten free baking, bit pricey but a little goes along way) 2 t granulated yeast 1 1/4 t salt (I found the first time I made it was a bit "bland", so the next time I didn't level the 1 1/4 t, and much better.) 1 c water 2 t cider vinegar 2 T vegetable oil 2 eggs 2 egg whites In a large bowl, combine the dry ingredients well. In a mixer with regular paddle attachment combine liquids and beat until well blended. With mixer on lowest setting, add in dry ingredients. Stop machine and scrape bottom and sides. Turn up mixer to med speed and let go for 4 minutes. Spoon prepared dough (looks like thick cake mix) into loaf pan, let rise in warm, draft free place for 60-75 minutes or until the dough has risen to the top of the pan. Preheat oven to 350F and bake 35-45 minutes or until when the loaf sounds hollow when tapped from the bottom. ~I have bread machine instructions too, if you'd like those. Here's the newest recipe I tried from this book..And we loved it! Comments (16)Matti5 - so glad to hear you were finally diagnosed and feeling so much better. I live in Canada - I had the blood test you speak of. In Ontario, if you have the test at the hospital - it's free of charge. If you have the test at the Dr's office it costs $130.00. I had it at the hospital and the results came back negative for Celiac. I've had 2 endoscopies and 1 colonoscopy and all is well. In fact, after the second endoscopy and biopsies, the Internist called me on a Saturday morning to tell me everything was perfect. Two years ago I had a total hysterectomy - the doctor had to leave my cervix as it has adhered to my abdominal wall. I tell you - I give up! This is sooo frustrating. bigbaby - I also fear that I will get tired of my own cooking. I am definitely going to look into the cookbook "Everyday Grain Free Gourmet". My 20 yr old son has a red meat allergy, so we eat a lot of chicken, turkey and a bit of fish. When he was little, and I'd make a hamburger patty for him, he'd push it away. He would do the same with roast beef and pork. I was concerned and took him for allergy testing. The doctor confirmed he was allergic to beef, pork, veal, lamb. He can eat free range beef (but having gone without it most of his life, he doesn't like the texture). Will definitely post on Tuesday after my Dr's appt. Can't wait. Sue...See More- 15 years ago
