does the width of engineered floor matter?

I am planning on putting wood floors in my kitchen. I live near the lake so humidity is an issue, but sand and water aren't. I will do engineered because of the humidity, but was wondering if the width of the boards is also a factor. I like the Anderson Virginia Vintage but it comes in randon widths of 3,5,and 7. Is this combination width too risky in high humidity?

I am basically choosing to go engineered based on what I have read here. The flooring company my Kd recommended has never heard about engineered being a better choice with high hunmidity and they look at me like I have two heads because I am choosing engineered over solid wood.

I would be happy with a narrower width in a handscraped finish. If anyone has any suggestions, I would appreciate it. It doesn't have to be Anderson, just a good quality engineered with this look.
