Do you ever make deli style meats at home?

I just bought a big turkey breast, on the bone, on sale for 99 cents per pound. :-) !! It's the kind that has the salt solution already added. At first I thought I would just roast, slice and freeze. But, I love Boar's Head Salsalito turkey. You can tell it's actually turkey, not shredded bits put back together.

How do they get that super moist and sliceable texture that only deli meats have? Is it all chemicals and shrink wrap? I'm under the impression that I shouldn't brine it because of the added salt solution. I'm happy to poach it or smoke it on the pit all day if I have to. I haven't been able to find much by googling.

And if you have any other favorite meats to chime in about, please do. Salami, pastrami, whatever. They're all good.
