Three coats is probably why your floor has a plastic look; Traffic is a two coat process over a sealer coat, although I use three coats over stain.

Are your ripple marks chatter or wave?

Without seeing the floor it is impossible to comment further, other than to say that the 'ripple' has nothing to do with abrading between coats; it is probably the result of the sanding process. Naturale may make the floor dull looking and help to hide the marks somewhat.
Whether to live with the ripples or insist on a resand is your decision.

You're right about plastic look. I remember when my contractor finished 2nd coat, the floor was so beautiful, no plastic look. After the 3rd coat, in addition to the plastic look, to the ripples across the grain of the wood about 1 inch apart, I noticed that some areas of the floor look more grainy than other areas (the soft grain of the wood has been removed and I can feel the irregularity of the wood). My contractor said it's normal with red oak!!!

I can't live with those marks but I'm afraid that after fixing it will be worst. If he re-buffs the floor & applies 1 coat of Bona Natural, does it enhance the plastic look? I'm also afraid that Bona Natural is too flat.
What do you mean about re-sanding? Re-sand completely the floor then re-seal & re-apply 2 coats of Bona traffic or he just re-sands then re-applies 1 coat of Traffic? I really like the look of Traffic Satin.

The irregularity in the wood your can feel is called "dishout" and can't be totally avoided. I got two small dishouts in a floor I'm working...that's just two boards in a 950 square foot job. However, if the dishout is throughout the floor, then you may have a legitimate complaint. Flat sawn wood is most susceptible to dishout. Floor finishers have techniques to avoid dishout.

The ripples one inch apart is most likely chatter and not wave. Wave will appear every 4 inches to eight inches across the boards; usually due to loose flooring, a machine problem or sanding a floor without removing dirt and debris first.

Resanding means just that...starting over.

I can't tell you what applying a coat of Naturale is going to do to the 'look' of the floor.
