Do you heat shock your produce?

I read about this in the Food Network magazine but the original article is in Modernist Cuisine.

Does anyone does this? Does it work?

In the comments it says that produce from a supermarket already went through this and there is no need to do it again. This time of year all my produce comes from the supermarket.
