click flooring - put new subfloor on exisiting floor?

All the floors in our 1912, 2.5 storey, house are 4" wide White Pine. There is no subfloor, the planks are right on the joists.

As part of a major renovation, we are relocating the kitchen to its original location, but expaning its foot printand taking out some walls.

We will be intalling Torlys linoleum click planks in the new kitchen.

What do you think is the best method:

1) One contractor says the existing floor is level enough that he would put the new plywood subflor over the existing floor, level that and then install the linoleum planks.

2) Another contractor would take out the pine floor, then install the plywood subfloor directly on top of the joists, make that level and then install the linoleum planks.

For some reason option 2 seemed most logical in my mind, until option 1 contractor said it would be much more labour intensive (3-4 days labour to remove the floor and level the subfloor from the joists).

Is the only disadvantage of option 1 the fact that there will be a bit more of a height difference (probably 0.5 inches) between the new floor and the original floor? Is that enough of a disadvantage to consider paying the extra labour to go with option 2 (level from the joists)?
