Makayla makes lunch and Lemon Bars

We were off school for a snow day. We went to grandma's and had lunch it was popcorn shrimp.

Grandma had some Meyer lemons from her friend Beachlily so we made lemon bars.

We also made lemonade.

Grandma taught me how to make brisket but it is not done yet.

I hope that we have another snow day but grandma does not.

I am also a grandma. I promise you your grandma treasures these snow days. AND their delicious products. She wants as many snow days with Makayla as she can get.
I love the lemon eyes!!

Tell us how the brisket and lemon bars tasted. Bet they were marvelous.

Jessica, he really likes to cook, he cans his own salsa (but has decided that mine is better, smart man!) and actually enjoys Penzey's, Trader Joe's and that Mediterranean grocery. I tried to convince him to sign up but he says that the forum is "my own space" and he's not going to "intrude on it". I think he's just scared of you! My Meyer lemon tree only has a dozen lemons on it, and it appears that they are all getting ripe at the same time :(. When this happens, I freeze some of them whole, in Ziplock bags with the air removed, and then I defrost them later in the microwave, zapping them 10 seconds at a time until a bit soft (without the bag, of course). If I want to zest them, I do that before defrosting them. Also, if you are making lemonade, I recommend that you save the rinds in the freezer (I use the foodsaver for this), and then you can pop the rinds into chicken stock that you are making or put them inside a chicken that you are roasting. I am very frugal with my Meyer lemons because I love them so much and am sure that you are enjoying them too. Mine are also in season right now, and I wish the season lasted longer, which is why I also have a Eureka lemon that gets ripe at a different time of year. Still, I prefer the frozen/defrosted Meyer lemons to a Eureka lemon. Save your Meyer lemon rinds! Lars

coconut, how WILL Aunt Coke be able to cook Thanksgiving dinner without help? It won't be the same, you know. Poor Aunt Coke... Diane and RR, she will indeed be five in November. I know, it's hard to believe. Sigh. I'm going to cry when she gets on that bus for Kindergarten..... Deanna, just borrow some young mother's small children! I borrowed nieces and nephews and neighbors until I got Makayla and Bud. (grin Yes, Bruvver does need to learn. First, though, he needs to learn to use the potty. I make soups or stews and freeze them. In the morning, I pop the frozen square (if I've forgotten to thaw it) into a pot or the microwave and warm it up. Add noodles if needed, put into preheated thermos and we're good to go. My teens like it. I pack a tuna noodle salad about every other week. I will sometimes use canned salmon instead, but they prefer the tuna. Some days, my husband will make a frozen pizza early in the morning, let it cool and the kids take slices of that to eat cold. They really love that. They get hot lunch at school once a week, on "Chef Day", when there's something really good that they want. Once in awhile I still buy lunchmeat and let them make a few sandwiches with it, but it's not very often. We can't send PB&J with my daughter because there are several kids at her school with severe nut allergies and she worries about causing a problem for them. Carrots are the usual veg of choice for the lunchboxes, and they prefer to have a fruit snack when they get home so I have stopped trying to get them to pack fruit in their lunches. I am less strict about lunches than I am about breakfast and dinner, the goal is to get something fairly healthy that they will actually eat and enjoy into the lunchbox. Gloved and gowned, I once dug through the luncheon garbage from grades 1-5, looking for a lost retainer. I was horrified at the number of whole apples and bananas thrown away, and the number of lunches that were not even opened. Bag after bag lunch, obviously lovingly packed, some with cheery notes or hearts on them! Baggies with whole sandwiches, or whole bags of vegetables or fruits. I felt so bad for those moms, and for the teachers who had to deal with hungry, crabby kids for the afternoon. And irritated with the unknown kids, who were wasting so much nutritious food when so many children in the world go hungry every day. It was disgusting. I know Grandma loves it when my brother and I come over, and she lets me cook lots of good things. Brother likes to eat them, so he's happy too.

Thank you dcarch, I can't get on you tube at school, so I have to do it at Grandma's house. If I can get my brother to stop playing monster truck games long enough to use the computer.

I had to laugh when you said that you didn't think Grandma wants another snow day. Hah! She loves it when you come and spent time with her......otherwise we wouldn't even know about you and your brother. Good job!

You might be running out of snow days at this time of year, but I"m sure Annie will let you cook as much as you want.

You should have your own cooking show, for young people, I"m sure it would be a hit.

Everything looks so yummy and it makes me hungry. I agree that your grandma loves having the two of you over and cooking with you or letting you do it yourself. Keep up the good work.

Yes, John, she does look "pro" doing it. Especially those lemons for eyes, LOL.

She's wanting to find a new recipe every time she comes over, and try it, then if it's good we'll print the recipe and put it in her own cookbook. We're trying for some easy stuff that she can make herself, as her Mom works midnights and is sleeping during the day. She thinks it would be nice to make dinner sometimes so it would be ready when her Mom gets up.

Oh, Makayla, your lemon bars look terrific. I really like them but usually only get them when I go to a tea room. Maybe I will have to make some next week.

Makayla, you're adorable!

My son 'J' has had a lot of snow days too, and he's loving it.
He also loves pasta, and makes his favorite pasta dish often. Other than that, he has absolutely no interest in cooking, or baking, but he loves to eat.
And I know he would've enjoyed everything you posted. And so would I.
