What to do with two 3.5 lb local chickens?

They're defrosted, and I've done the basic roasting thing recently, but am stuck in a rut. Can anyone suggest something simple, but tasty?

Here's one suggestion
Gypsy StewÃ¯Â¿Â½..Pink Adobe, Santa Fe
1 large frying chicken cut into pieces
3 yellow onions peeled and quartered
8 cloves garlic, peeled and halved ( I chop!)
2 cups dry sherry
1 cup chicken stock
12 medium hot chilis like poblano, roasted, peeled and seeded (or use canned)
6 large ripe tomatoesÃ¯Â¿Â½Again I use whole canned plum tomatoesÃ¯Â¿Â½.cut in 4thsÃ¯Â¿Â½pull apart using 2 forks)
Salt to taste and Ã¯Â¿Â½ pound grated jack cheese
Put chicken, onions, garlic 1 cup of sherry and the broth in a large heave kettle ( add more broth to cover if neededÃ¯Â¿Â½..simmer one hourÃ¯Â¿Â½.cool somewhat and remove skin and bonesÃ¯Â¿Â½.I also cool the pan juices somewhat and skim the fat..
Put chicken tomatoes, chilis and rest of the sherry back in the pot and simmer about 45 minutes.
To serveÃ¯Â¿Â½place cheese cubes in the bottom of bowl and ladle hot soup over the top.
Good made ahead and reheated.

Roast Sticky Chicken 4 tsp salt 2 tsp paprika 1 tsp cayenne pepper 1 tsp onion powder 1 tsp thyme 1 tsp white pepper 1/2 tsp garlic powder 1/2 tsp black pepper 1 large roasting chicken 1 cup chopped onion In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag, seal and refrigerate overnight. When ready to cook chicken put onion in the cavity and put it in the crockpot and do not add any liquid. As the cooking process goes on it will produce it's own juices. Cook on low 8 to 10 hours and it will be falling off the bone tender.

Call nearby feed stores, and ask if they will take small orders from hatcheries. Just yesterday I called the local Wilco to ask if they would take a small order for Polish Crested chicks. They said no, they only sell standard, common breeds, and no special orders, but they suggested I check with another of their stores to see if they would do it. So, I called another store and they said "we have some Polish Cresteds here in the store right now"! It was an hour drive, but I came home with 6 tiny Polish Cresteds the same day! That particular store does take customer requests. I don't know if my 6 chicks were leftover from someone else's order of 25, or what. In any case I was lucky because I didn't want more than about 6 chicks. Ask around! I got my chicks in 3 phone calls.

an answer might be elusive as most farmers feed the feed and use the litter as compost. seems a rather expensive route to use chicken feed with straw? If I were inclined to go a similar route I might choose soy meal which is more pricey per # but much higher in protein(N) than feed.

Don't forget, B&S is reportedly making Duraforce engines for snowblowers - they bought the rights to it. Toro may continue to have LB oil made for that depending on the oil recommendation by B&S. Also, I saw plenty of it at HD the last time I was there. In any event, you could use a substitute oil, like Homelite 'Exact-Mix' synthetic blend. There's no big loss with the LB oil except nostalgia. It was a 2-cycle oil blended to facilitate mixing with gasoline by ignorant homeowners. It's thin so it empties completely from the can and mixes instantly with gas. Even if you were to pour it into the gas after filling the can and didn't bother to shake it, it would still be okay. It has a high degree of solvency which goes along with the old Lawn-Boy 'self-cleaning engine' advertising, which is really true for any 2-cycle. Modern synthetic or syn-blend oils are better in every respect but since they are more concentrated they do require a little attention when mixing with gas. Finally, there is one thing about LB oil that may be lost to us if they stop making it, particularly for the lucky ones who are still using LBs with under-deck mufflers - the smell. I don't know if any other oil will produce the same aroma.

I agree, compumom, that's a bargain. Here I can't even get the "injected-full-of-saline-solution-fed-full-of-antibiotics" chickens for 99 cents a pound, usually, and I refuse to buy the mushy/salty things, I have to look for the organic birds. We don't eat a lot of chicken, only because I've got a freezer full of beef, pork and venison, but if I do I usually buy thighs because I like that much better than the dryer and less flavorful (to me) breast meat. Right now I have 15 "chicken nuggets" growing in the "nursery", so they'll be in the freezer in a couple of months. Until then, I'll buy chicken when I need it. Too bad the closest WF is 200 miles away or I'd have snapped up that bargain. Ah well, someday the companies will decide that there is life in Michigan north of Detroit. Annie

There are just so many ways to cook a chicken... You can roast, fry, grill/broil or boil.
You can roast simply or with lots of garlic or lemon, stuffed or unstuffed...you can fry with all sorts of breading....cracker crumbs, flour, bread crumbs highly seasoned or not.
You can oven bake or grill it cut up or split, with BBQ sauce, honey and lime, Italian herbs and olive oil, Greek seasonings, wing sauce, rolled in ground pecans or almonds, cornflake crumbs or even cracker jack ( I guess if you can put it into crabcakes you can roll chicken in it).
Then you can boil it as in my Gypsy stew or you can make chicken fricassee with carrots and potatoes and dumplings....which can be slippery or doughy....seasoned with herbs or not...
Pick one!! LOL!
Wish I had a chicken in the oven tonight!!

I use the holder that holds them vertical and then roast them. Sorry cannot think of the name. But it is a chrome stand. Some people put a open can of beer in the opening. Not sure of the oven temp or time. But they sure turn out good.

Thanks everyone! I'm trying the Sticky Chicken this weekend, and Linda's recipe next weekend. You had me at melted cheese cubes under the stew - sounds divine!
