Time To Test Recipes! (Recipe Included)

Hi everyone,

Friday or sometime this weekend, mom and I will be trying out one of the recipes I wrote down: Pink Lady Cake. Here is the recipe for those of you who want to try. I just got the ingredients today.

Pink Lady Cake

1 18 ounce box strawberry cake mix

3 eggs

1 teaspoon lemon extract

1 20 ounce can strawberry pie filling

Preheat oven to 350 degrees . Beat cake mix, eggs, and lemon extract in bowl. Fold in pie filling. Pour in sprayed, floured, 9 x 13 inch baking pan. Bake for 30-35 minutes. Cake is done when toothpick inserted in center comes out clean. Serves 12-16. Add prepared vanilla frosting or frozen whipped topping, thawed.

We're using the frozen whipped topping for ours. I'll be sending a few slices over to the neighbors too :). Happy baking everyone! Enjoy!

Oh and for those of you who are wondering, we did use my new cast iron skillet the other day. Mom and I had French toast for supper. All I can say is, it was the best French toast I ever ate!

LindaC, we have an ice storm going on here, February is giving it one last "hurrah", I guess.

Brad, that does sound very springlike and I'll bet the neighbors love you.

I knew you'd love that cast iron pan!

You can add sugar to taste to any pickling recipe, it only helps by binding up some of the free water (reducing water activity which you want to do). If you like sweet jalapeno rings, you might want to check out the honeyed jalapeno rings from The Joy of Pickling, or search this forum for Cowboy Candy. Welcome to Harvest! Honeyed Jalapeno Pepper Rings Yield: 8 half pints Ingredients 2 1/4 pounds jalapeÃÂ±os cut into rings and, if you like, seeded 8 small garlic cloves, sliced 24 peppercorns 2 Tbsp honey 2 Tbsp of pickling spice 2 tsp pickling salt 4 cups cider vinegar 1/4C (4 Tbsp) or less olive oil (may be omitted) 1. Divide sliced garlic and peppercorns between 8 half pint jars. Add the pepper rings. 2. Place pickling spice in a spice bag or scrap of cheesecloth. Bring cider vinegar, salt, honey, and spice bag to a boil in a non-reactive pan. 3. Immediately pour the liquid over the peppers in the jars, leaving a little more than 1/2 inch headspace. Pour a scant 1.5 tsp of olive oil (no more!) to each jar if desired. 4. Wipe rims, add lids and rings (finger tight). Process in a water-bath canner for 10 minutes (start timer when water is boiling) or pasteurize the jars for 30 minutes in 180-185 degree F water (be careful because once the temperature falls below 180 you have to start timing all over again, and over 185 the pickles will soften. Use a calibrated thermometer). Remove from canner, let cool on towel or rack for 24 hours. 5. Store the cooled jars in a cool, dry, dark place for at least 3 weeks to allow flavor to develop.

Thanks again for all the input, everyone. After sharing some jars from my test batch I can definitely say that I'm going with the low-sugar this year. My main reason for wanting it was simply the amount of sugar in the normal Ball recipes - I tend to give away quite a bit of what I make and the only complaint I've recieved, quite regularly, is that it's too sweet. The reduced sugar level definitely lets more of the fruit flavors shine through, without the overpowering taste of sugar. For reference, I used the recipe in the box, 4 cups black raspberry juice (from ~1.5 quarts of berries and enough water to come halfway up them in the pan) and 3 cups of sugar - Yeild was around 2.5 pints...I could have probably got some more, but I didn't realize how fast this stuff jels up. Normally, after finishing the rolling boil, I let it sit for about 2-3 minutes - this way the foam forms a kind of "skin" and is much easier to skim off - The low sugar set so quick that I lost nearly a quarter of a pint just in skimming th foam. ...Will be clearing out my freezer this week and making up some jelly - Should get around 10-12 pints each of black raspberry and blackberry with what's in there now, and yes, I will be firing up the water canner. Thinking about taking some down to the local farmer's market as well to see if the owners would be interested in selling any. -Thanks again for the info, I do appreciate the comments and concerns...

I found a recipe on line at EatingWell that is pretty similar to Coconut's recipe except it uses greek yogurt (or regular yogurt with some of the whey drained off like for yogurt cheese) in place of half the Neufchatel cheese. I think I'll do that. With only my DH and me at home, we need to have something that is healthier but I don't feel we have to go overboard. The Eating Well recipe uses egg whites instead of whole eggs and uses melba toast and olive oil in the crust. I think I'll use whole eggs and graham crackers because I love a graham cracker crust. I've seen some recipes that use some nuts and two tablespoons of butter in the crust instead of 1/4 cup butter and I think I may do that. I looked at the Cook's Illustrated recipe, but it uses cottage cheese for part of the cheese. I've made a cheese cake with that once before and I wasn't totally satisfied with it. But the fresh strawberry topping from that recipe looks like a winner so I think I'll use that. Lou, I like my cheese cakes dense and creamy I think. I may try your recipe another time. It looks like it is crustless - is that correct? I tested the pan by putting in some water. It leaks out slowly where the two ends of the sides meet. I guess that's pretty hard to avoid. I'm hoping that the cheese cake batter is enough thicker to not leak out.

ATK recipes are very subjective, but for a cookbook that offers a wide range of things, I find most of the recipes very good. That said, you have to remember: 1) These are Yankee recipes; tested and tasted by Yankees, most of whom don't always like a lot of spice; this doesn't mean however they are lacking in flavor. Most of their recipes tend to be very conventional, rather old-fashioned, and geared to the general public, which may or may not be you. For example, I find their taste test choice of Nathan's hotdogs way too salty; and feel it's too subjective due to their availability in that particular part of the country. Often what tastes best to testers is what they are used to, and what is familiar; evidenced by my preference for Kosher All Beef hotdogs which are not Nathans. 2) The science behind their methods is pretty sound. They usually have a reason for testing/adapting a recipe the way they do. Whether or not it's something you would like is up to you, but I have learned some new techniques from ATK that I use and believe has helped improve some of my cooking. (For example, their pizza dough recipe has been adopted by me!) Not everything is worth keeping however; see point #4, below. 3) Yanks like to save money. Although I too, don't always agree with their choices, for the most part their recommendations are good. I like knowing a $30 knife will do the same thing that the $100 version will. If indeed they prefer an expensive digital thermometer like the Thermapen, I know there's a good reason for it. 4) They cook their meats entirely too rare IMO. I had an argument about undercooked pork with my husband, who was following one of their recipes precisely to the letter. Let's just say...I don't eat undercooked pork. Or beef, or lamb or chicken. He refused to believe that the pork chop need another minute or two, which irritated the carp out of me. Of course, it was fine for reheating later on, being undercooked as it was! I recently tested a recipe from Cook's Country that was a revised version of German Chocolate Cake. As a person who makes German Chocolate Cake (from scratch) at least twice a year (and has one made for me on my birthday), I look forward to the real thing. Making it over with cornstarch in the frosting and on the low-fat side just doesn't cut it for me. I would rather eat a smaller portion and enjoy it to the fullest for a few more days, than change anything about it. The fact that it looks familiar doesn't mean that it is. ''Revising'' something like this simply isn't necessary. I appreciate the thought that goes into the process, but some things should just be left alone!

Brad, that cake sounds so very good and it would fit in just perfect here. We are having unseasonably warm weather and it was up to 66 today.

French toast is one of my favorites, but I've never fixed it in my cast iron skillet. Will have to give it a try because I bet it would be excellent.

Your cake sounds very good,
and I agree, very spring-like.

But I won't be baking in the next few days.
It got up to 88 today,
is 68 now,
And both tomorrow and Friday
are supposed to be in the mid 80's again.
UGH! ! ! !
It is much too early in the year
To be that warm ! ! ! !

Thank you, everyone!

LindaC, no snow here! Just rain and cold temps. I hate not seeing snow on the ground in the winter. It's so dull and gloomy without it.

Annie, lol I help the lady out with her garden. They come up on weekends from Maryland and they're very nice people. I've shared plenty of food with them! The last thing I remember taking them was Christmas cookies and I think I'm overdue on sharing LOL.

Bcskye, wow! We've had a few days like that recently and it has been nice. A tip about making the French toast in the cast iron skillet, make sure the oil's hot enough before frying. The first piece stuck a little to the pan but it was good!

I'll post pictures when it's all done! :) I just LOVE strawberries. Mom was wondering if the cake should be kept in the fridge because of the pie filling? The instructions don't say to.

Funny, I wasn't even thinking of spring when I posted this. Now that I think about it, it conjures up images of people sitting in the garden enjoying this cake on a warm spring day with some lemonade :).

Brad, your cake sounds delish. Your vision of a garden party sounds wonderful. Whenever I make a cake with whipped topping I always put it in the fridge and serve cold. It's 78 here in NC right now and I even have azaleas starting to bloom so I may have to try your cake recipe. Thanks for sharing!

Caminnc, wow azaleas already in bloom! My daffodils and crocuses are peeking up from the ground but I think the cold days we've been having in the meantime have been keeping them in check. You're welcome for the recipe. If anyone wants a copy of the book I got it from, it came from the Dollar General and it's called Quick And Easy Family Baking-Cakes, Cookies, Pies & Breads That Anyone Can Bake. It's a brand new book (Copyright September 2011) and it has all sorts of hints and tips along with the recipes.

In an earlier post of mine, someone mentioned they enjoyed my threads. I thank you and everyone else who's been helpful and kind to me here and the rest of GW. I just wanted to say cooking and gardening are two of the brightest spots in my life right now. I enjoy these hobbies with utmost happiness and I'm always glad to help out everyone in any way I can. I'll cherish them for as long as I can.

A funny story about the cake mix and the pie filling. They're slightly larger than what the recipe calls for. The pie filling can is 21 ounces and the cake mix box is 18.25 ounces. A little more to go around LOL :).
