Tamales with duck fat

I finally made the tamales using duck fat, and they came out great. Here's a photo of them in my steamer - I didn't photograph them on the plate because we wanted to eat them as soon as they were done. I served them with green tomatillo salsa, and the filling was made with chicken, some achiote paste, a couple of tablespoons of mole (that I bought at a chili/mole stall at Grand Central Market in downtown L.A.), plus some chili sauce that I made using pasilla, guajillo, and ancho chilies plus garlic and oregano. The pasilla chilies were green (not dried), and so I smoked them when I was smoking a turkey breast and some sausage on Sunday. I adjusted the heat of the sauce by adding some of my smoked habanero sauce, which is very potent, and so I did not need to use much. Anyway, the filling was very flavorful.

The masa part was made with 2 cups masa for tamales, 1-1/2 tsp baking powder, 1-1/2 cups chicken broth, 1 tsp salt, 1/3 cup duck fat, and 2 tbsp non-hydrogenated shortening. They came out very light and fluffy. This amount of masa made 13 tamales - we ate four each, and so we have five left over. Steaming took about 1-1/2 hours.

The duck fat was a great idea! I didn't want to use all of it, which is why I used part shortening, and I have enough to make another batch, and I have a lot of the filling left over.
