Help for soft diet lunches

I didn't plan this part out and now I'm scrambling.

My younger brother is Downs and had to have his teeth extracted. He was on a relatively soft diet before but could still eat sandwiches. That's all he would take in lunch to work. I can get hot breakfasts down most days and a good supper but I am at a loss for lunches starting next week. He's very set in his ways and new things are difficult but I'm willing to try. He doesn't have access to a microwave but I can pack him a cold bag. I don't want to just send jello and pudding every day but not sure what else to try that may be appealing. He's always been very much a meat and potato guy. Any ideas would be appreciated.
