Pumpkin Muffins

Ok, this is my second thread looking for a recipe I'm sure I read here, maybe I am officially losing my mind. I'm looking for a pumpkin muffin recipe that didn't have too much sugar in it - if my memory is to be trusted (HA!) it had less than a cup of sugar in it. It called for pumpkin pie filling. I was hoping to make it for a breakfast I'm having tomorrow.

Here's a recipe from one of my favorite little cookbooks.

PUMPKIN PIE MUFFINS
(source: Mostly Muffins - by Barbara Albright and Leslie Weiner)

2 c. all-purpose flour
3/4 c. firmly packed dark-brown sugar
1-1/2 t. baking powder
1/4 t. baking soda
1/2 t. salt
1 t. ground cinnamon
1/2 t. ground ginger
1/4 t. ground cloves
1/8 t. ground nutmeg
3/4 c. canned pumpkin
1/2 c. lightly salted butter or margarine, melted and cooled
1/4 c. buttermilk
2 eggs, lightly beaten
3 T. molasses
1 t. vanilla
3/4 c. coarsely chopped pecans or walnuts
3/4 c. chopped pitted dates

Preheat oven to 400°F. Grease twelve 3x1-1/4-inch muffin cups.

In a large bowl, stir together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. In another bowl, stir together pumpkin, butter, buttermilk, eggs, molasses, and vanilla until blended. Make a well in center of dry ingredients; add pumpkin mixture and stir just to combine. Stir in pecans and dates.

Spoon batter into prepared muffin cups; bake 20-25 minutes, or until a cake tester inserted in center of one muffin comes out clean.

Remove muffin tin or tins to wire rack. Cool 5 minutes before removing muffins from cups; finish cooling on rack. Serve them or cool completely and store in an airtight container at room temperature.

These muffins freeze very well.

Makes 12 muffins.

Grainlady Note: I have substituted 2 t. Pumpkin Pie Spice for the spices called for in the recipe.

Thanks, grainlady, this isn't the recipe I was thinking of, but this looks great too so I'll give it a whirl. I appreciate your taking the time to post it.

Hi, I'd love to trade seeds with you. This was my first year growing gourds and I'm already planning to do it again next year! Please look at my trade list and see if we can trade for several of your gourd seeds. Haven't added many 2007 seeds yet but most are same as previous years. Thanks, Linda Here is a link that might be useful: My trade list

I am going to agree with somebody but right now - I'm not sure who. Burgess Buttercup is a variety that I grow every year and I'm very happy with the "pumpkin" pies that we make. This area also can be a challenging climate to grow some varieties of squash and pumpkin. It is getting them completely to maturity where things sometimes fail. If the fruits are immature, they may not keep long enuf for a fresh Thanksgiving pie! With the buttercup, I've still got them around for Christmas! I grew up eating pumpkin pies made with Pink Banana squash. They were wonderful but that was in a different climate. The other C. maxima that I've tried to grow have been the kabochas. They also had trouble maturing but I finally may have found a good variety - Cha Cha. Despite a very cool start to the growing season, they came thru for me and made delicious pie! Steve

Hi Cindee Nice to hear from you again!! Gardening and cooking goes together, I have to use what I grow. And when I have a lot is time to share with friends. I wish you could be here for the pumpkins and tomato recipes! They came out really good. We had the pumpkin muffins for breakfast, a basil tomato tart for lunch and for dinner Manhattan Clam chowder with the tomatoes again and for dessert a pumpkin cupcake. The rest of the cupcakes are for friends. The T. Smudge tomatoes are some of my better tomatoes this season, they do look purple on top, but that is the way they are supposed to look, nobody beat them up.lol Let me know how they do for you. Silvia
