Here's my recipe which is pretty well a standard soup recipe and nothing original other than that I like to roast the bones, the garlic and onion when making the stock. Here packaged in twos in the supermarket, after they've removed most of the meat for their trays of wings, breasts etc. But there's still enough meat on the bones for a great and flavourful soup. Soup Ingredients: Homemade chicken stock - about 2 quarts 2 carrots - diced 2 stalks celery - diced 1 leek - diced 1 cup diced rutabaga or orange squash 1/2 cup fine soup noodles salt & pepper oil or chicken fat Ratio of solids to stock should be about 2 cups stock to 1 lb chopped vegetables. Add any more chopped veg if you don't have enough. Stock ingredients: 1 meaty chicken carcass or piece of whole chicken 2 heads of garlic 1 onion - cut in half celery stick - sliced 1 carrot sliced fresh thyme - large sprig 1 bayleaf black pepper & salt MAKING STOCK: 1. Early in day or day before: Preheat oven to 350F. Cut top off heads of garlic. Place on roasting pan together with chicken carcass and sliced onion and drizzle a bit of oil over top of all. (I had two carcasss to roast as they are sold this way in pairs at our supermarket. I also added a couple of beef bones.) Roast in oven about 40 minutes or until all is toasted. and juices from pan. 2. Put bones into a very large pot. Squeeze one head of the buttery garlic cloves into the stock pot, saving the other head of garlic for adding to the soup. Add the rest of the stock ingredients and fill pot with water to cover. Grind in fresh pepper. Bring to boil, turn down heat, put on lid and simmer for a couple of hours. Skim off any grey residue that rises to the top. 3. Afterwards, strain the solid debris from the stock ---(REMEMBER you're saving the stock so don't pour it down the sink - as has been done LOL !). I look through the solids and pick out the meaty chicken pieces to save for the soup. Throw away all the rest of the solid material. Here I let it cool and refrigerate until next day when it's easy to remove solid fat from top. Otherwise continue to make soup. MAKING THE SOUP: 1. Sauté the chopped ingredients in a frypan in a TBS of chicken fat or oil until lightly golden. Squeeze out the buttery cloves from the 2nd head of garlic and add to pan. 2. Put soup ingredients including small bits of chicken into large saucepan and add an appropriate amount of stock - about double the amount of liquid to vegetables. Put on lid and simmer with lid on for about an hour. Add soup noodles during last 5 minutes. 3. Check seasoning, add salt. Also good for the end of the Christmas turkey. SharonCb

I have great results with this tart (from "Once Upon a Tart") - I cheat and use the pre-made Pilsbury pie dough. Provencal Tart with Gruyere Herbs de Provence In preparation for a picnic, make this tart the day before. After the completed tart cools on the counter, cover it with plastic wrap and keep it in the refrigerator until you are ready to pack your basket. The tart crust recipe yields two 9-inch crusts. I par-bake (see below) the extra shell, let it cool, pop it in a heavy-duty plastic bag and freeze it. The next time you go to make a tart, your pulse will jump with excitement when you realize you have a homemade shell ready to be filled - on the next sunny day your second tart will come together in a flash. For the Tart: 12-15 plum tomatoes (2 1/2 pounds), cored and cut into 1/4- inch-thick rounds 2 tablespoons Dijon mustard 1 par-baked 9-inch Crunchy Savory Tart Crust 1 cup coarsely grated Gruyere cheese 1 teaspoon herbes de Provence 2 large eggs 1/4 cup light cream 1 teaspoon salt A few turns of freshly ground black pepper For the Crust: 2 1/2 cups unbleached all-purpose flour 3 tablespoons semolina flour 1 teaspoon salt 12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into 1/4-inch cubes 3 tablespoons cold solid vegetable shortening A glass of ice water 9" tart pan with removable bottom. To Prepare the Crust: 1. Position oven racks so that one is in the center and preheat oven to 400 degrees. 2. Put the flours and salt in the bowl of a food processor fitted with a metal blade, and pulse a couple of times just to integrate the flours and salt. 3. Add the butter and shortening all at once and pulse quite a few times, until the mixture forms little balls, like moist crumbs, and no chunks of butter or shortening remain. You have to pulse, not run, the food processor. The worst thing that can happen at this stage of the crust-making game is for the flours and fats to come together into a paste. 4. Remove the blade from the food processor and dump the dough crumbs into a big bowl. Fill a tablespoon with ice water and sprinkle over the surface of the dough. Repeat with 3 more tablespoons. 5. Use your hands or a wooden spoon to bring the dough together into a ball, adding more water if needed, 1 tablespoon at a time. The dough should be just past crumbly, but holding together. You don't want it to be so wet that it sticks together or turns white in color. 6. Cut the dough in half, and wrap each half in plastic wrap. Press each half with the palm of your hand to form a disk. Refrigerate at least 30 minutes before rolling out. 7. Roll out 1 disk of dough to 1/4 inch thick. Fit it into your tart pan and chill for 30 minutes. Then use the tines of a fork to prick holes over the bottom of the tart. Line the dough with parchment paper or aluminum foil, and weigh down with pie weights or dried beans. 8. Place the tart shell on the center rack in the oven, and bake for 10 minutes. Remove the paper and weights from the pan. Return it to the oven, and bake until the crust is golden brown and toasted all over, 5-10 more minutes for a par-baked tart shell. For a fully baked tart shell, bake for another 15 minutes at 400 degrees or until it's golden brown all over. 9. Remove the tart shell from the oven and set it on a wire rack to cool. Can be prepared a day in advance. Cover and keep at room temperature. To prepare the tart: 1. Position your oven racks so that one is in the center, and preheat the oven to 375 degrees. 2. Put the tomato slices in a colander, and place it in the sink. Let the tomatoes sit for 15 minutes to drain off any excess liquid. 3. Spread the mustard evenly over the tart shell with a rubber spatula or the back of a spoon. Sprinkle the cheese over the mustard, and sprinkle the herbes de Provence over the cheese. 4. Working from the outside in, lay the drained tomato slices in overlapping concentric circles, making sure the crust is covered entirely. 5. Whisk the eggs in a small bowl, or a large measuring cup with a spout, to break up the egg yolks. Whisk in the cream, salt, and pepper. This is your custard. Pour the custard evenly over the tomatoes until it comes to about 1/4 inch from the top edge of the crust. (If you have extra, don't worry about it; if you don't have enough, pour a little cream on top.) 6. Place the tart on the center rack in the oven, and bake for 1 hour to 1 hour and 20 minutes, or until the custard is set. Set custard won't jiggle when you shake the pan and will be firm when you touch it. (The custard will also be hot, so touch it lightly.) The tomatoes in this tart may give off a lot of liquid; don't confuse this with uncooked eggs and accidentally overcook your tart. The liquid will evaporate as the tart cools. 7. Remove the tart from the oven and set it on a wire rack. Allow the tart to cool slightly. 8. To remove the tart from the pan, rest it on a big can. Make sure the tart is steady and balanced. Slide the outside ring of the pan down off the tart. Then place the tart on your work surface, and slide it off the bottom of the pan and onto a rim- less serving dish or a cutting board. Serve warm or at room temperature. Makes one 9-inch tart.

Well I got to the liquor store at 8:59 and they had the nerve to be closed when the sign said 9. Hopefully my wife will go out and buy some in the morning, otherwise she'll have to use my Lagavulin 16, the cheapest Scotch on hand. (I told her it would probably be too peaty; she just looked at me funny and said she'd see what she can do.) Annie and other non-scotch-lovers - My guess is a decent bourbon, or Irish whiskey as Sharon suggests, would be just fine but I'd definitely stick with a more flavorful whiskey as opposed to a rye or other type liquor altogether. (At least the first time around.) Again, just a guess. Sharon - the ginger wine - It's a cheapo screwtop. I must have gone to a dozen liquor stores before I found it; a few laughed and said they hadn't carried it in many years. The store where I finally bought it was surprised that I had such hard time finding it. I'm thinking ginger beer (NOT ginger ale) "might" work as a substitute. It really is and can be a fabulous soup. Old thread but always worth bumping up to encourage others to make a good stock. My X-BIL would always want to toss that big bird carcass. No way. Mom took it home and we pick the bones of any meat with any leftover slices. That meat goes in the fridge. He just wanted done with it. (leftovers are for poor folk) jerk. : )...kidding All the bones and carcass go in a stock pot, some will even break up a bit like the ribcage. Chop corse a big onion, a couple ribs celery, carrot. Parsley stems, leek tops...any mild veg...no cabbage, brussels, hearty greens. No green or red pepper. Barely cover with water. Even 2 inches under. After an hour at a low simmer the veg simmering will release enough moisture to top the contents. Two hours at a low barely simmer is fine. 3hours is fine. Turn off heat without a lid for an hour, then pull out the big bones and strain through a pasta strainer...the sink works well for that. Best to chill as fast a s possible to keep stock out of the danger zone. Some can take the stock out into a deck that has a snow bank or a cooler full of snow or ice. A big bowl of ice under works. Don't put hot stock in the fridge. Get it at least cool first, no lid. Chill over night and make your soup the next day. (we put ours in the truck bed that has a cover to keep critters out...had a sneaky fella wipe out an entire stew one year...after just a hour on the deck in snow) I pack the chilled turkey chunks with any beans rice grains i've cooked into pint deli containers then fill with cold stock...even some raw slivered greens like spinach collards kale, then freeze. It is cold and will freeze quick. A soup 'kit'. The next couple cold months i can pull one out, frozen, after some fresh saute of what i have in the veg bin, then add the block to simmer and thaw in my pot with a cup or two of water. Soup for two-4. Hearty, with some fresh ingredients added.
