How much does egg size matter?

I've noticed that in all of Ina Garten's recipes calling for eggs she uses extra large sized eggs, when all other recipes I've seen either don't specify or say to use large. I never buy extra large eggs for this reason.

In know that eggs can be measured by volume (I've never had cause to do that) but the yolk looks so much bigger in the extra large size compared to the white, or is that my imagination? In what types of recipe would all this matter?

Is Ina just doing what all the other media cooks do? Use the very best ingredients, don't skimp with the cheap stuff. Okay, I vote for that in lots of cases, but it almost seems like she's saying that if large is good, extra large must be better, but with eggs it doesn't make sense to me.
