What goes with a Xmas ham?

My family normally has a traditional Cuban Xmas Eve dinner - pork, rice & beans, etc. BUT this yr were having a honey baked ham. What side dishes go well with a holiday ham?

Scalloped potatoes....creamed potatoes....twice baked potatoes ( not all at once)....chunky stewed spiced apples....baked pineapple...

I had ham this weekend at a party, with sweet potatoes. That was great! Ham goes well with so many things! It's good with greens too.

I love it diced and brownd then added to scrambled eggs or an omelette, you could use it in a quiche. Here are a couple of recipes we also enjoy. Lumberjack Hash from Cooking Light INGREDIENTS: 2 teaspoons vegetable oil 2 teaspoons butter 1 cup chopped onion 1 cup chopped green bell pepper 2 garlic cloves, minced 8 cups frozen shredded hash brown potatoes, thawed (about 1 pound) 1/2 teaspoon salt 1/2 teaspoon black pepper 4 ounces ham, diced 3/4 cup (3 ounces) reduced-fat shredded cheddar cheese INSTRUCTIONS: Heat oil and butter in a large nonstick skillet over medium heat. Add onion; cook 5 minutes. Add bell pepper and garlic; cook 3 minutes. Add potatoes, salt, pepper, and ham; cook 16 minutes or until potatoes are golden brown, stirring occasionally. Top with cheese; cook 2 minutes or until cheese melts. You could use it in place of the ham hocks in this one: Navy Bean Soup From Food Network Kitchens 1 pound navy beans, picked over, rinsed and drained 10 sprigs parsley 2 sprigs fresh thyme or rosemary 1 bay leaf 2 large smoked ham hocks, about 1 1/2 pounds 1 medium onion, coarsely chopped 1 clove garlic, coarsely chopped 8 cups of cold water 1 medium carrot, coarsely chopped Kosher salt and freshly ground black pepper Butter for garnish Place the beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to a simmer. Cook for 5 minutes; remove from the heat, cover, and let sit for one hour. Drain and reserve. Tie the parsley, thyme, and bay leaf together with kitchen twine. In a large soup pot or Dutch oven combine the beans, herb bundle, hocks, onions, and garlic with the water. Bring to a boil, cover, and adjust the heat so the soup cooks at a gentle simmer. Cook until the beans and hock are completely tender, about 1\-1/2 hours. Turn off the heat and remove the hocks. Cool slightly. Remove the meat from the hocks, discarding the bones, fat, and skin. Cut the meat into small cubes. Remove the herb bundle and discard. Puree about 3 cups of the beans with a some of the liquid in a blender. (For a smoother soup puree all the beans.) Stir the puree and diced meat into the soup. Heat the soup and adjust the seasoning as needed with salt and pepper. Pour into heated bowls, place a small pat of butter on top of each soup, and serve. Linda

I've loved reading this thread - so many great things. I received a wonderful Masala Dabba from my son and DIL with a spoon for each cup and a large capacity. I'm so happy not to have to search for all the spices used together in Indian dishes. You would understand if you saw how my spices are crammed here and there. Oh to have a whole divided drawer like Cathy's. Max gave me the new Suvir Saran cookbook "American Masala". I've just begun to look at it and I'm looking forward to trying some new to me Indian dishes. From my DIL's parents a fun bag of gourmet food items, sun dried tomatoes, jasmine rice in an airtight glass jar, a box of Gnocchi and much more. And a gift that will go on giving - from my DIL"S brother, a bag of frozen homemade Gnocchi and a LESSON on how to make them. His Gnocchi are really wonderful, I'm so excited about learning to do it from him. He has a handmade board from his Grandfather - I hope that's not his secret to success because I can't get a board like that. I'll take my camera when I go to learn from him. Lee

Since we will be spending Christmas Eve with friends this year, I will be makking the following. It has been a hit every time I made it! Alexa CHOCOLATE RASPBERRY GANACHE CAKE This pull-out-all-the-stops cake for special occasions may be prepared in steps in advance and glazes on the day it is to be served. For genoise 1/3 cup sifted unsweetened Dutch-process cocoa powder such as Droste (sift before measuring) 1/3 cup all-purpose flour 1/3 cup cornstarch a pinch baking soda 3 large whole eggs 3 large egg yolks 2/3 cup sugar 1/4 teaspoon salt For syrup 1/3 cup water 1/3 cup sugar 1/3 cup raspberry liqueur such as Chambord For ganache 1 1/4 cups heavy cream 2 tablespoons unsalted butter 2 tablespoons light corn syrup 1 pound semisweet or bittersweet chocolate (not unsweetened), chopped coarse 1/2 cup seedless raspberry jam For glaze 1 cup heavy cream 8 ounces semisweet or bittersweet chocolate (not unsweetened), chopped coarse Garnish: fresh raspberries Make genoise: Preheat oven to 350F. Butter an 9-inch round cake pan (about 2 inches deep) and line bottom with a round of parchment paper or foil. In a small bowl whisk together cocoa powder, flour, cornstarch, and baking soda. In a metal bowl whisk together whole eggs, yolk, sugar, and salt until combined. Set mixture over a saucepan of simmering water and continue to whisk until lukewarm. Remove bowl from heat and with an electric mixer beat mixture at high speed until it has cooled and doubled in volume. Sift one third cocoa mixture over egg mixture and fold in. Sift and fold in remaining cocoa mixture, half at a time, in same manner. Pour batter into pan and smooth top. Bake genoise in middle of oven for 30 minutes, or until it is firm to the touch and pulls away slightly from side of pan. Invert genoise onto a rack and immediately invert onto another rack to cool right side up. Genoise may be wrapped in plastic wrap and chilled 1 week or frozen 1 month. Thaw genoise before assembling cake. Make syrup: In a small saucepan bring water and sugar to a boil over moderately low heat, stirring occasionally until sugar is dissolved. Cool syrup and stir in liqueur. Syrup may be made 1 week ahead and chilled, covered. Make ganache: In a saucepan bring cream, butter, and corn syrup to a boil over moderate heat and remove pan from heat. Add chocolate, swirling pan to submerge chocolate in hot mixture, and let stand 3 minutes. Whisk ganache until smooth and transfer to a bowl. Chill ganache, covered, at least 2 hours and up to 3 days. Assemble cake: Let ganache stand at room temperature until slightly softened and pliable but still cool. With a whisk or electric mixer beat ganache just until light and fluffy. Remove parchment paper from genoise and with a long serrated knife cut cake horizontally into 3 rounds. Invert top layer of genoise onto a springform pan base or a 9-inch cardboard round and brush with one third syrup. Spread layer with half of jam and spread one third ganache over jam. Top ganache with middle layer of genoise and repeat layering of syrup, jam, and ganache. Top with third layer of genoise, smooth-side up, and brush with remaining syrup. Spread top and side of cake with remaining ganache. Chill cake until ganache is set, about 30 minutes. Cake may be assembled ahead, wrapped in plastic wrap, and chilled 5 days or frozen 1 month. Thaw cake before proceeding. Make glaze: In a saucepan bring cream to a boil and remove pan from heat. Add chocolate, swirling pan to submerge chocolate in hot cream, and let stand 2 minutes. Whisk glaze until smooth and pour through a sieve set over a bowl. Cool glaze to room temperature. With cake on a rack set over a pan (to catch drips) pour glaze through sieve onto center of cake. Quickly spread glaze evenly over top and sides of cake with a long, narrow, metal spatula. Let cake stand until glaze is set, about 5 minutes. Garnish cake with raspberries and keep at cool room temperature until ready to serve. Gourmet February 1997

Our holiday ham is NewYears day so very easy as a brunch menu...black-eyed peas, biscuits, horseradish cream sauce, collards. DH makes omelets to order. I usually make potato/onion/apple fritters similar to a latke. Very casual. If for a more formal event as a sit down meal i would make roasted root veggies. From the past couple weeks and Thanksgiving. I even left the skin on the winter squash. My family loves to try new things or just chose what they want. Pleases everyone. Makes a pretty centerpiece platter. This one i found i've bookmarked for DH's family. In muffin tins i can make some savory ones for us and then add some brown sugar and a marshmallow half for the kids that want that sort of thing. 375 for half hour covered with foil, uncover and add more cheese (or sweet topping) then toast the tops.

Mashed butternut squash goes very well with ham, because it's rather sweet.

Do mashed potatoes go & if so how are those pkts of gravy since I won't have any meat to make gravy from?

Forget the gravy on the mashed potatoes.....gravy packets are awful!...just add some roasted garlic and lots of sour cream when you mash them....who needs gravy if you have enough sour cream and butter!? LOL!

Then you MIGHT like the gravy packet....
Instant gravy what a concept....and instant mashed potatoes....much easier and better than real potatoes with roasted garlic and sour cream.

I think I'd skip the mashed potatoes if you think they need a gravy packet......

Mashed sweet or scalloped would be better potato choices. Baked beans is a "gotta have" when we have ham.

This question came up on another forum, and I copied several of the recipes: corn pudding, brocolli/raisin salad[yum!], and some kind of white potato casserole called a "filler." chery

Nothing better than grinding the left over pork and ham together to make croquetas!

Plain mashed potatoes just don't stack up to garlic mashed potatoes. In my opinion, you should go light on the garlic just to give a hint of flavor. A little pepper and butter. Mmmmm. Haven't tried the sour cream, but that sounds good, too. Or maybe a little Creme Fraiche instead of sour cream.

I dunno - if someone doesn't like the sound of garlic and sour cream in their mashed potatoes, then the gravy packets are perfect!

There is no accounting for taste (or lack of).

My did made a wonderful mashedpotato dish last T'giving...and I hope she does it again this year...
Pretty much what it was was about 5 large whith russets and one small sweet potato peeled, cut up and bliled and while theyw ere boiling there were a couple of cloves of gralic roasting in foil in the toaster oven.
When the potatoes were done, they got the roasted garlic squeesed into them and were mashed with butter and sour cream....salt and pepper...quite a bit of pepper.
You wouldn't know there were sweet potatoes in the mashed potatoes...but my were they good!

I like carrots with Ham -- either baby ones with butter and sugar or in a casserole form.

If your not feeling the mashed potatoes, how about potatoes Au Gratin?

Pineapple casserole and broccoli rice casseroles are other ideas.

I like things with cheese when I'm serving ham...they just seem to go --and hey, you can never have enough chesse. Even a homemade mac 'n cheese make work for a brunch.

We like scalloped potatoes, applesauce and roasted asparagus. I've also made corn pudding or a rice casserole instead of the potatoes - here's a couple of recipes for you.

Broccoli Rice Casserole

1 small onion -- chopped
1/2 cup celery -- chopped
10 ounces frozen broccoli -- chopped
1 tablespoon butter
8 ounces processed American cheese
10 3/4 ounces cream of mushroom soup, condensed
5 ounces evaporated milk
3 cups cooked rice

In a large skillet over medium heat, saute onion, celery and broccoli in butter for 3-5 minutes. Stir in cheese, soup and milk until smooth. Place rice in a greased 8 inch square baking dish. Pour cheese mixture over; do not stir. Bake, uncovered, at 325F for 25-30 minutes or until hot and bubbly.

Corn Pudding

1 can yellow corn -- drained
1 can creamed corn
2 eggs -- beaten
1 small onion -- chopped

Combine all ingredients. Bake in greased 9 x 9 pan at 350F for 45-50 minutes.
