Here are some empanada and pastie recipes from Spain: (on the leftof the photo) These are wonderful little turnovers (empanadas) made from spinach, pine nuts and raisins. The dough: 8 oz water 4 oz olive oil 4 oz. orange juice 100 grams lard (just under 1/2 cup) 1 egg 700 grams flour (5.5 cups) The Filling: 3 bunches spinach, washed, drained and chopped 100 grams seedless raisins (3/4 cup) 25 grams pine nuts (1/4 cup) 3 spring onions, washed and chopped fine sweet paprika - to your taste salt olive oil - 2 TBS 1) Put oil in saucepan and lightly stirfry the onion, without browning them. Add the spinach, salt, raisins and pine nuts and stirfry a few moments more. Remove from heat and add paprika. Mix well and reserve. Put egg, orange juice and lard in a large bowl and mix with fork until creamy. Add water and oil, mix again. 3) Add flour a little at a time to make a consistent dough. Roll out into circles, fill by putting a spoonful of filling in the centre of each circle and fold over, press edge. Roll up edge over filled part and shape into corded edge, as in photo. Place on greased cookie sheet in 350F oven for 20 minutes until golden. Source: Chatbalear.com Here is a delicious sweet potato pastry turnover which is typical to Canary Islands, and which I love: Filling: 2 1/4 cups sweet potato (batata) (500 grams) 2 cups ground almonds (250 grams) 1/2 cup fine granulated or castor sugar 3 egg yolks grated rind of 1 green lemon anisette liqueur \- a few drops rum \- a few drops 1 teasp powdered aniseed 1 teasp powdered cinammon pastry: 3 TBS lard 1/2 cup olive oil 4 1/4 cups flour (500 grams) Preparation: 1\) Filling: Boil, peel and mash the sweet potatoes and mix with the ground almonds, lemon rind, sugar, yolks, a dash each of anisette and rum, and a teaspoon each of powdered aniseed and cinnamon. 2\) Pastry: Mix the lard, oil and flour to a consistency suitable for pastry. Leave for half an hour, then roll out thinly on a floured board. Cut out saucer\-sized circles, place some filling on one side, flip over the other side to cover, press the edges together and flute with a fork to decorate. Pierce one side of each trucha lightly with a fork. 3\) Finally fry pasties in abundant hot oil, drain on kitchen paper, sprinkle with sugar and arrange on serving dish. These pasties will keep well in an airtight tin. (My advice \- best keep in the fridge in warm weather if not eaten all at once.) Blend until smooth. Put in container in fridge or spread on pastry rounds to make deep fried turnovers. Recipe 2: 1 tin tuna drained 1 small tin red sweet pimento drained 3 small triangle portions of soft spread cheese (eg Laughing Cow) Method: Blend together and put in fridge or make into tuna paté turnovers. Recipe 3: 2 tins tuna in olive oil, drained 1 small tin anchovies, drained 1 hard cooked egg Method: Chop together and blend until smooth, using a bit of oil from the tins to moisten. Use as paté or in turnovers. Recipe 4: 2 eggs 1 tin of tuna in oil 1/2 red pepper, finely chopped 1/2 onion, minced Method: Boil the eggs 10 minutes until hard cooked. Jo, I hope it's the cream cheese spread for roll ups you are referring to... can't think of another. Cream Cheese Spread for Roll ups 16 oz cream cheese 6-8 green onions chopped (mostly the white part and just a little of the green 3 Tbsp Sherry 2 tsp Ranch Dressing Mix Combine all in a food processor until almost smooth. I use the above to spread on flour tortillas, then add other fillings. Roll up and wrap in plastic wrap. Refrigerate for several hours before serving. Can be cut into pinwheels for appetizers or cut larger for sandwiches. If you need filling ideas let me know. Nancy

Veal Calvados from The Commander's Palace New Orleans Cookbook by Ella and Dick Brennan Serves 4 8 veal tenderloins or cutlets (about 1/2 inch thick, 2 1/2 ounces each) 2 tsp Creole Seasoning Mix* All-purpose flour 3 Tablespoons unsalted butter 8 apple rings, 1/4 inch thick each 1/2 cup diced peeled apple 1 cup diced onions 1/4 cup coarsely chopped shallots 2 oz Chablis 3 oz Calvados 10 Tablespoons heavy cream 3 oz demi-glace Freshly ground black pepper to taste Sprinkle veal with creole seasoning, then dredge lightly in flour. Heat butter in a saute pan; when bubbling, add veal and saute until lightly brown on both sides, turning once. Add apple rings to butter in pan and fry for about 1 minute on each side. Apple rings should remain crisp. Remove rings. Add to pan the diced apples, onion, shallots, Chablis, and Calvados. Stir gently over low heat. Remove veal and keep warm. Whisk cream and demi-glace into sauce in pan and bring to a simmer, whisking constantly. Return veal to pan and cook over low heat, uncovered, until tender. About 10 minutes. Do NOT put apple rings in pan. To serve: Arrange veal on top of apple slices and keep warm. Reduce sauce to the consistency of thin cream sauce. Add a pinch of black pepper. Lodis are great for applesauce and are unusual because the apples are at their peak in July, which is why the PA Dutch often use that variety for making schnitz (dried apples). I'll be stocking up on leftover Thanksgiving cranberries next week to make and freeze a winter's supply of this family favorite applesauce. HOLIDAY APPLESAUCE 4 lb. sweet apples cut into chunks (dont peel or core) 3 cups cranberries (12 oz.) 1 cup unsweetened apple cider Two 3-inch strips lemon zest 1/2 cup sugar 3/4 tsp. ground cinnamon In covered pot, simmer apples, cranberries, cider and lemon peel, stirring occasionally, for 1/2 hour or more, until apples are very tender. Add sugar and cinnamon. Simmer, covered 10 minutes. Discard zest. Pass mixture through a food mill. Add honey, sugar, or brown sugar to taste. Makes about 2 quarts. Canadian whiskey 8 tsp. butter 8 tbs. Canadian cheddar cheese, finely grated 1 double pie crust recipe 1 egg, well beaten 1 tbs. water Preheat oven to 400 degrees. In a bowl, mix brown sugar, walnuts, whiskey and butter till well mixed. Roll out each piecrust into a 12" by 12" square. Cut each square into to quarters. In the center of each quarter, place 1 tablespoon of cheese, top with apple with a heaping tablespoon of the sugar mixture. In a separate, bowl beat egg and water together. Brush edges of piecrust with egg mixture. Bring four corners of each crust together at top sealing seams and folding up corners. Apple should be sealed snugly in crust. Baste with egg wash. In a large mixing bowl, beat together sugar, sour cream, eggs, and vanilla using electric mixer on low speed until combined. Then, beat on medium speed for two minutes. 2. Stir together flour, baking soda, baking powder and salt. Add to sour cream mixture, and beat on low speed until combined. 3. Stir in apples and half the pecans. 4. Open out a square/rectangle of the defrosted pastry 2. Beat together 1 egg, quark and sugar. Spread it over the pastry. 3. Sprinkle with chopped apple and raisins to your taste. 4. Add the apples and walnuts, and mix until the apples release some of their juice and the crumbly mixture becomes a thick batter, somewhere between cookie dough and brownie batter in consistency. Spread the batter in the prepared pan, smoothing it with your wet fingers. Bake the cake for 45 minutes, or until the cake tests done. Remove from the oven and place on a rack, to cool completely; don't remove the cake from pan. When the cake is completely cool, frost with Brown Sugar Frosting. Frosting: Melt the butter in a small pan over medium heat. Stir in the brown sugar and cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl to cool for 10 minutes. After 10 minutes, stir in the confectioners' sugar and vanilla. The recipe for the filling we've been liking lately is derived from a recipe in King Arthur Flour Baker's Companion, called "The Best Apple Pie." I changed a couple of ingredients due to what I had on hand, and it worked so well, we've kept the changes, and never made it the way it's written. I'll type the recipe as presented in the book but make note of the changes I made. We used AnnT's Butter and Lard pie dough recipe, using shortening instead of lard. The Best Apple Pie One 9-inch double piecrust 3 1/4 pounds (about 9 whole apples) Cortland, Granny Smith, or other baking apples, peeled , cored and sliced (7 to 8 cups) (* my note* I used a mixture of apples, with Granny Smith in the majority) 1/4 cup (2 ounces) apple cider (*my note* I was out of apple cider, so I used orange juice) 1 tablespoon rum (optional) (*my note* I used amaretto, as I was out of rum, and had amaretto. I also thought it would taste really good, especially since I was using orange juice. It did.) Juice of 1/2 lemon (about 2 tablespoons) 2 teaspoons vanilla extract 3/4 cup (5 1/4 ounces) sugar 1/4 cup (1 ounce) cornstarch 1/2 teaspoon salt 1 1/2 teasoons apple pie spice (KAF's note - If you don't have apple pie spice, use 1 teaspoon cinnamon and 1/4 teaspoon each nutmeg and allspice. That's what I did.) Preheat oven to 425 degrees F. In a large bowl, stir together the apples, cider, rum, (or the substitutions) lemon juice, and vanilla. Whisk together the dry ingredients, mixing until well combined. Stir the dry ingredients into the apples to coat them evenly. Roll one piece of pie crust into a 10-inch round and lay it gently in a 9-inch pie plate. Spoon in the filling. Roll out the other piece, lay it atop the filling, and seal and crimp the edges. Brush the top crust with milk and sprinkle it with coarse sugar, if desired. Or save a bit of the crust and cut decorative leaf designs, laying them in the center of the crust, or around the edges. Cut a few slashes in the crust, or a round hole in the center, to vent steam. Bake the pie for 15 minutes. Reduce the heat to 375 degrees F, and bake for an additional 45 to 55 minutes, until the top is brown and filling is bubbly. Another thing I like to do with apples occasionally for a different breakfast, is to spread peanut butter on bread, lay sliced apples on top, sprinkle with cinnamon, and broil just a minute or so, until hot and slightly browned. This could be done in a toaster oven I imagine, but I don't have one, so I use my oven's broiler. It's good with orange slices, too, but this thread's about apples. Be careful when eating, though, as hot peanut butter can really burn your mouth. Grease the bottom and 1/2-inch up the sides of a 9x5x3-inch aluminum loaf pan (dont use glass, it will not set up right). Set aside. In a bowl stir together flour, baking powder, baking soda and salt. In a large mixing bowl beat together sugar, sour cream, eggs and vanilla with an electric mixer on low speed until combined. Beat on medium speed for 2 minutes. Add flour mixture to sour cream mixture, beating on low speed until combined. Stir in apples and 1/2 cup of the pecans by hand. Spread batter in the prepared loaf pan. Sprinkle with the remaining pecans; press lightly into batter. Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Peel and core the apples. Then combine with the sugar, raisins, nuts, cinnamon, and lemon rind. Take 1 sheet of fillo and spread out on a dry board. Brush with the melted butter and sprinkle with 1 tablespoon of breadcrumbs. Place a second fillo leaf on top. Brush with butter and sprinkle with breadcrumbs. Place half the apple mixture at the end of the fillo sheets, leaving a 1 inch border. Starting with that end, carefully roll, jelly-roll fashion, ending with the seam on the bottom. Brush the top with more butter and place in a greased jelly-roll pan (a cookie sheet will do fine). Repeat with the remaining filling and fillo dough. Bake 35 minutes, or until golden. Add the nuts at the end so they don't get soft or lose their "saltiness". Serve cold as salad, dessert, side dish or snack. When I was working, I took it to the library with me for an afternoon pick-me-up; I often shared it with teachers as they passed through the library to see what goodies (if any) I'd brought that day. We often have this on a cold winter's morning -- they like to put it on top of oatmeal -- or for a quick dessert after dinner on an especially busy day when I only have time to cook a very simple meal. apples (any variety, any number -- I usually use at least 4 or 5 large apples, cored and sliced) I don't peel them, in order to retain vitamins. 3 T. butter 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. sugar, optional If I use more apples, I adjust the other measurements accordingly. This is also very good with pears! I melt the butter in a saute' pan on medium heat, then saute' the apple slices for just a minute or so. Then I sprinkle the cinnamon and nutmeg over them, put a lid on the pan, and turn down the heat to low. I let them simmer for about 5 minutes. There is plenty of liquid in the apples, so I don't add any. After about 5 minutes, the apple slices are softened but still have plenty of texture. Bring mixture to full rolling boil on high heat, stirring constantly. Quickly stir in both sugars. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into hot, clean jars, leaving 1/4" headspace. Wipe jar rims and threads. Cover with two-piece lids. Screw bands on finger tight. Process in boiling water bath for 10 minutes. Ok, I get LOTS of questions about the apples/water measurement. Dice 4 cups of apples. Place in a 4 cup measuring cup, then add water to cover the apples up to the 4 cup mark. It is NOT 4 cups of each. Slowly bring to a boil. Cook to the jellying point. Stir frequently, so it doesn't stick.Pour into hot jars leaving 1/4 inch headspace. Adjust caps. Process 10 min in BWB. Yields about 8 half pints. Crust Place 1 1/4 cups flour, 1 teaspoon sugar, and the salt in the bowl of an electric mixer fitted with a paddle. Mix on low for 15 seconds to combine the ingredients. Add all but 2 tablespoons of the chopped walnuts ( the reserved will be sprinkled on the crust just prior to baking) and combine on low for 15 seconds. Bring to a boil, then adjust the heat and allow to simmer for 6 minutes, until slightly thickened. Remove from heat and add the cranberries, 1 1/2 cups toasted walnuts, and the cinnamon; stir with a rubber spatula to thoroughly combine. Line a 9 inch pie pan with plastic wrap. Tranfer the hot filling to the pie pan, spreading the mixture evenly to the edges. Refrigerate until ready to assemble the crostata. Place rolled dough on a parchment lined cookie sheet. Invert the chilled cranaberry filling onto the centre of the pastry. Fold the edges of the dough towards the centre to enclose the craberry walnut filling, leaving a 3 to 4 inch window of fruit and nuts. Refrigerate 10 minutes. In a small bowl whisk the remaining egg yolk. Brush the top of the pastry with the whisked egg. Sprinkle the reserved finely chopped walnuts over the crust and then sprinkle with remaining tablespoon sugar. Place in oven on centre rack and bake for 30 minutes or until golden brown. Remove and allow to stand at room temperature for 15 minutes. Serve warm. NOTE: I cut the butter into the flour and nut mixture in the food processor and then poured the mixture into a bowl before adding the egg and water. Mixed with a fork. Place over medium heat. Stir while bringing to a boil. Lower the heat and continue to stir slowly while the mixture cooks. After about 7 minutes, test by pouring a small amount into some cold water. You want it to form a soft ball. (about 235°F to 238°F on a candy thermometer) When it reaches soft ball stage, remove from the heat, and let rest for about 10 minutes. After 10 minutes, add the vanilla and the white chocolate and stir until the white chocolate melts. You will notice the the fudge starts to thicken almost immediately. I made this bread a year or two ago, and am thinking of making it again. The dough requires an overnight rest in the fridge, so plan ahead if you want to make it. I think that's why I haven't made it again, because when I'm wanting to make bread, I look for a recipe, see this and think, "that looks good," but then I see I have to wait overnight to finish baking it. I've become much more patient now, having made other breads that require overnight rests, and tasting the results. They're worth the wait. From the book, "Baking With Julia" by Dorie Greenspan. Cranberry-Walnut Pumpkin Loaves Makes 3 small loaves 2 2/3 to 3 cups bread flour 1 teaspoon cinnamon 1/2 teaspoon grated nutmeg 1/2 teaspoon salt 2 tablespoons tepid water (80 degrees F to 90 degrees F) 2 teaspoons active dry yeast 5 tablespoons unsalted butter, at room temperature 1/3 cup sugar 8 ounces (1 cup) pureed cooked pumpkin or butternut squash, fresh or canned solid packed (see Note) 1 large egg, at room temperature 3/4 cup walnut pieces, toasted 1 cup plump golden or dark raisins 2/3 cup cranberries (if frozen, thaw and pat dry) Mixing and Kneading: Whisk 2 2/3 cups of the flour, the cinnamon, nutmeg, and salt together in a large bowl just to mix; set aside until needed. Pour the water into a small bols, sprinkle in the yeast, and whisk to blend. Allow the yeast to rest until it's creamy, about 5 minutes. In a mixer fitted with the paddle attachment, beat the butter and sugar at medium speed until creamy. Add the pumpkin and egg and beat until blended. Don't be concerned if the mixture looks curdled; it will come together when you add the dry ingredients. Set the mixer speed to low and add the yeast, then begin to add the dry ingredients, about 1/2 cup at a time. As soon as the mixture starts to form a dough that comes together, scrape the addle clean and switch to the dough hook. If your dough does not come together (it might be because your pumpkin puree was liquidy), add a few more tablespoons of flour. Mix and knead the dough on medium-low speed for 10 to 15 minutes, scraping the sides of th bowl and the hook now and then with a rubber spatula. At the start, the mixture will look more like a batter than a dough, but as you continue to work, it will develop into a soft, very sticky dough that will just ball up on the hook. (This dough develops much the way brioche does.) With the machine on low speed, add the walnuts and raisins, mixing only until incorporated, about 1 minute. Add the cranberries and mix as little as possible to avoid crushing them. (Inevitably, some cranberries will pop and stain a atch of dough red, think of this as charming, and proceed.) First Rise: Scrape the dough into a lightly buttered large bowl, cover tightly with lastic wrap, and set aside at room temperature to rise until nearly doubled in bulk, about 2 hours. Chilling the dough: When the dough has doubled, fold it over on itself a couple of times to deflate it, wrap it tightly in plastic, and refrigerate overnight. Shaping the dough: At least 6 hours before you want to begin baking, remove the dough from the refrigerator. Leave the dough, covered in its bowl, until it reaches at least 64 degrees F on an instant-read thermometer. (This will take as long as 3 to 4 hours - don't rush it.) If you don't have an instant read thermometer, look for the dough to be slightly cool and just a little spongy. Lightly butter three 5 3/4 x 3 1/4 x 2 inch loaf pans. Baking the Bread: Center a rack in the oven and preheat the oven to 350 degrees F. Bake the loaves for about 35 minutes, or until deeply golden. Remove the pans to a cooling rack; after a 5-minute rest, turn the breads out of their pans and allow them to cool to room temperature on the rack. Storing: The breads can be ket at room temperature for a day or two or frozen, wrapped airtight, for up to 1 month. Thaw, still wrapped, at room temperature. Note: To use fresh pumpkin or butternut squash, split the squash, remove the seeds, and place, cut side down, on a baking sheet. Mushroom Pie ½ cup diced onions ½ cup chopped celery 1 lb sliced mushrooms 3 tbsp butter 1 can Cream of Mushroom Soup 1 cup chopped walnuts 3-4 hard boiled eggs, sliced into ¼" round slices. Double crust for a 9" pie In a large sauté pan over medium heat, sauté onions and celery in butter until translucent. Add mushrooms and continue to cook until the mushrooms have released their liquid. Add the can of mushroom soup. Mix well. Add chopped walnuts. Line pie plate with crust. Add a single layer of sliced hard boiled eggs. Pour in mushroom mixture. Add top crust, seal edges and cut a few vent holes. Sometimes I lay the top crust flat and cut out mushroom shaped holes before I place it in position and add the extra crust pieces as decoration around the edges. Package dried) 8 ounces raisins 8 ounces brown sugar 1 pound walnuts 1 pound dates 1 orange 2 teaspoons cinnamon 2 ounces whiskey 1/4 teaspoon black pepper 1-1/2 cups water Frosting: 3 cups powdered sugar 4 ounces butter orange juice . . Preheat oven to 375 degrees. Crust: In large bowl, cream together first 3 ingredients. Add orange juice and orange rind. In separate bowl, combine flour and baking powder. Add to creamed mixture along with vanilla. Filling: Prepare several days ahead of time. In a food grinder, grind figs and raisins. In large saucepan, simmer raisins and figs with brown sugar and water for 15 minutes. Grind walnuts, dates, and orange. Stir into hot mixture along with cinnamon, black pepper, and whiskey. Remove from stove, mix well, cover, and let mellow for 3 days. Note: This recipe makes enough filling for 2 batches of crust and can be divided and frozen for up to six months. Roll dough into 3" wide strips on pastry cloth. Lay filling down the center and wrap dough to form a long "sausage-like" cookie. Roll back and forth until crust seems very thin. Cut in diagonal about every 1 1/2 inches. Place on cookie sheet close together and bake for 10-13 minutes. Cookies should be barely brown. Cool and store in tins 5 days, then frost. Frosting: In medium bowl, mix together margarine and powdered sugar until well blended. Add enough juice to make a thick glaze. Top cookies with a thin coat. Let frosting dry a couple of hours then store in tins as follows. To Store: Line tins with foil, place a layer of cookies, then a layer of wax paper (NOT plastic wrap). Bake at 350 for 15-20 minutes, (or in a convection oven, about 9 minutes) If you undercook these, the filling is so heavy that it will break through when you pick them up, so I make them crunchy. You could also not make the depression in them as deep and there would be more dough to suport the filling so that it did not break through. These are my family's favorite cookies, and we have never ever seen them anywhere else. (They were my secret weapon) Also, if I make a huge depression in them, I sometimes make half again as much filling so I don't run out. It has great flavor and is well worth the trouble. Walnut Bread I just discovered this at Thanksgiving 2006. This is wonderfully nutty with a touch of sweetness. This recipe is adapted from Jimmy Schmidts Cooking Class by Jimmy Schmidt. The recipe makes 2 small loaves. Ingredients 1 package (2 ½ teaspoons) dry active yeast ¼ cup maple syrup 1 ½ cups luke warm water 2 cups flour 1 cup whole wheat flour ¾ teaspoon salt ½ teaspoon coarsely ground black pepper 3 cups walnuts divided 2 tablespoons extra virgin olive oil In a small bowl, combine yeast, syrup and water. Allow the yeast to activate and foam (5 to 10 minutes). Take two cups of walnuts and chop until fine (I do this in a food processor). In a large mixing bowl combine 1 cup flour, 1 cup whole wheat flour, salt and pepper. Add the chopped walnuts. To the yeast mixture, add one cup flour and mix. Add the yeast mixture to the walnut / flour mixture. Mix until a ball forms. Add the remaining walnuts and olive oil. Place in a greased bowl and cover with a clean damp cloth. The dough will be more like a batter. Let rise until dough (batter) doubles in size. Punch down dough with floured hands. Place half the dough in a greased 9x5x3 inch baking pan. Repeat with other half. Cover with a clean damp cloth and allow to rise to 1 ½ its volume. Bake for 10 minutes at 400 degrees F; turn down temperature to 350 degrees F and bake for 15 minutes. Hints, tips, tricks and how to cheat I changed the amount of maple syrup to ⅓ cup. I used all all-purpose flour (3 cups total) instead of using the whole wheat flour (mainly because I didnt have whole wheat flour in the house at the time).
