nutrients in cereals and legumes?



i hope this post is in the relevant section.

i wanted to know whether the nutritional content of cereals and legumes was measured while they were still green and tender and containing much moisture, or while they were dried as they are mostly sold and stored.

i'm asking about this because the amount of water will always make difference in the accuracy of the measurement and the reported content of nutrients.
