If you feel you must prune, wait until the leaves have mostly dried and fallen off. Right now, the plant needs those leaves to support the root system, which is trying very hard to establish in its new planting. Pruning newly planted or transplanted plants (either before or immediately after the planting process), unless dormant, has been demonstrated to slow or impede proper root establishment and that could hamper the plant's ability to overwinter its first year successfully. I would go with Option A, pruning only what you feel may be damaged by winter conditions and leaving the structural pruning until early spring.

There are a lot of hostas that aren't available. Occasionally, I've come across a nursery that has some that are difficult to find but usually they just aren't available anywhere. With far fewer sellers now, I'm sure that this issue is going to become a lot more prevalent. My go to place, Wade & Gatton is gone and several local nurseries only have very popular hostas and don't have any less common plants for sale. As mentioned above, I first try the originator. Casita Azul says they have Strawberry Banana Smoothie in stock but I've never shopped there. Try Solberg and see if he has any.
