Do you have any special recipes for tailgating parties????

I have tried to recipe exchange forum, but I haven't gotten any ideas yet from them.

Just hoping someone here has some unique ideas....just to add variety to the fun!!!

Oh my gosh.I didn't mean to offend......just thought that I would get a bunch right now since tailgating is a big thing for alot of people!
I had hoped that there were others thinking of what to bring and starting to plan for all the fun....and could share their ideas. I did appreciate your idea and will try it....I would love to try all different things this year. Kindof got into a rut the last few years....and noticed that alot of our friends did too. Everyone seems to bring the same stuff.....and while it's nice, could be more of a culinary adventure!

I'm a viniculturist, but I have thoughts on soil management. A soil with high pH 'locks in' iron and potassium, so using ammonium sulphate in solution for short time or sulphur for permanentcy will increase the acid level. For any magnesium deficiency use a tablespoon of magnesium sulphate (epsom salts. g.). For tomatoes I use 5-10-10 at planting then osmocoat when the fruit are as big as golf balls plus an ounce of Amm. Sulphate. (My soil is 7.4 pH.). As for umbrellers, gentlemen farmers work for prizes at the County Fair, as opposed to commercial growers. (grin again)

We usually all get together for each family member's birthday. A lot of the time it will be on the Sunday afternoon/early evening nearest to their birthday. They are all so busy with the kids in sports, we have to work around it. With my cousins, we go out to lunch once a month. When the month rolls around that our birthday are in we celebrate it on our lunch day with gifts. We all live in the same town. My aunt and uncle that raised me had 5 children of their own....plus me. Between us there were 20 grand children and now lots and lots of greatgrands. Also quite a few great greats too. Only two of them moved away. The two that moved away were both greatgrands and both boys named Scott. Only five of them have divorced.(that is among the children,grands and great grands. And four have passed away...the aunt and uncle that raised me and one of their daughters and one son in law. All the rest of us still live here. Says a lot for family and our town, at least I think it does. patti

Here is something which would make a great feature for a tailgate party and can be made in quantity with very little work. Edamame would be a good vegetable finger food with this which also can be prepared easily. Ã¢ÂÂONE, TWO, THREE, FOUR, FIVEÃ¢ÂÂ SPARERIBS This is a light-hearted title for an extremely easy and delectable dish -- the 1 to 5 referring to the simmering ingredients. The sauce-coated meat is succulent, with a deep sweet and sour flavor. The dish serves 2 or 3 amply when accompanied by rice and a stir-fried leafy vegetable or a crisp salad. The ribs are also good as an appetizer. 1 1/2 pounds meaty spareribs Simmering ingredients: 1 tablespoon dry sherry 2 tablespoons dark soy sauce 3 tablespoons cider vinegar 4 tablespoons sugar 5 tablespoons water Separate the ribs first; then chop each, meat side down, into 3 pieces. (I always ask the butcher to cut the slab of ribs crosswise into 3 pieces. He does it easily on a band saw. I separate them.) Put them in a skillet or saucepan and set it over high heat; add the simmering ingredients and stir to mingle. When the liquid comes to a boil, adjust heat to maintain a very gentle simmering, and cover and simmer for 40 minutes. Stir and turn the spareribs from time to time. This one is always a huge hit when we go boating. Travels well, very tasty , substantial and a bit different. Don't let the ingredients list put you off it really is very easy to make. Real N'awlins Muffuletta (Weed) 1 cup pimento-stuffed green olives crushed 1/2 Cup drained kalamata olives crushed 2 Clove garlic minced 1/4 Cup roughly chopped pickled cauliflower florets 2 Tbl drained capers 1 Tbl chopped celery 1 Tbl chopped carrot 1/2 Cup pepperoncini drained 1/4 Cup marinated cocktail onions 1/2 Tsp celery seed 1 Tsp dried oregano 1 Tsp dried basil 3/4 Tsp ground black pepper 1/4 Cup red wine vinegar 1/2 Cup olive oil 1/4 Cup canola oil 2 (1 pound) loaves Italian bread 8 ounces thinly sliced Genoa salami 8 ounces thinly sliced cooked ham 8 ounces sliced mortadella orcappicola 8 ounces sliced mozzarella cheese 8 ounces sliced provolone cheese Directions 1. To Make Olive Salad: In a medium bowl, combine the green olives, kalamata olives, garlic, cauliflower, capers, celery, carrot, pepperoncini, cocktail onions, celery seed, oregano, basil, black pepper, vinegar, olive oil and canola oil. Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight. 2. To Make Sandwiches: Cut loaves of bread in half horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella ,mozzarella and Provolone. Iowajewel - I'm guessing you'll be tailgating at Hawkeyes games. Is that correct?

While any new recipe that is easy to pack/transport/serve is good, I like the occasional theme dish. (A great black bean dip with old gold corn chips perhaps?)

Do you guys bring a crockpot or grill? Are you open to hot dishes?

Otherwise - any threads pertaining to picnics would apply.

I believe this Tuscan bread salad, called Panzanella will work great for a tailgate party. I never though about it until a guest at one of my cooking demonstrations told me that. Basically it is stale bread, fresh tomatoes, basil and olive oil. The recipe is on my blog http://www.essentialsforentertaining.com/blog. If you do it let me know what you think about it.

Tailgating is a big deal here in Texas. But, it isn't usually "fancy".

We have served "Buffalo Wings" w/potato salad and side of bread.

Or: We have Purchased Smoked Salmon Spread from the Deli with Special Crackers. We also had veggies with ranch dip and fresh fruit.

When we Tailgate for the 4th at the Horseraces we take our RV and make Coney Island Hot Dogs.

For my next Tailgate: (Octoberfest-German Area) We will have Sausage with Sauerkraut on a nice homemade bun. Yum!

I have made muffalatta sandwiches which go over well.

Take a round loaf of crusty bread and hollow out the center about 1/2 way. Fill with italian meats and cheeses and olive salad. Wrap tightly to compress a bit and cut into wedges to serve.

Here in cheesehead country, we do a lot of brats, hamburgers and potato salads. Burgoo is another favorite if you have a big gang. The last tailgate that we had before the Packer game a couple weekends ago was actually a breakfast. When the football game starts at noon, you really have to be in your parking spots by 9:00 or 9:30, or you just can't find anything close to the stadium. We put together a brunch casserole the night before and baked it first thing in the morning before we left. I have one of those pyrex dish carriers with a hot pad that you heat up in the microwave, and it was still piping hot when we got to our tailgate spot. We also brought along bagels and cream cheese spread, some donuts, and of course bloody mary's and mimoso's. So we really didn't have to grill out, and it was easy to pack back into the car just before heading to the stadium.

Yep I do.

One pound of beef
One pound of sausage
Cook and poor off grease.
One pound of velveeta.
Heat well.
Then serve on toasted rolls and wrap in foil to keep warm.

It's considered a trashy meal I know. But, it makes it to every tailgating party and it's a hit. Sometimes I put them in a foil pan and cover in foil then if there is a gril put it on the grill to reheat.

I tailgate every weekend in Montana and my Cranberry Meatballs are a huge hit.

80 meatballs already cooked (find in the freezer section)
1 can of cranberry sauce -- jellied
1 jar of chili sauce

dump everything into a crockpot, add one can of water and stir. Let it heat slowly and serve.

I've seen that meatball recipe with a jar of grape jelly before. I like the cranberry sauce idea - may have to compare and contrast.

This is always a huge success :-)

LOUISIANA JAMBALAYA

1/2 cup (1 stick) butter (do NOT substitute)
2 red onions, chopped
5 green onions, chopped
1 large green bell pepper, chopped
4 garlic cloves, finely chopped
2 bay leaves
1 jalapeÃ±o chili, finely chopped with seeds
1 Tablespoon Creole Seasoning
1/2 teaspoon ground cayenne pepper
1/2 teaspoon dried oregano, crumbled
2 Tablespoons tomato paste
1 pound andouille sausage or hot Italian sausage, cut into 1/2-inch pieces
Â½ pound small or med. shrimp (precooked)
2 14-1/2-ounce cans chicken broth
1 16-ounce can plum tomatoes, diced, with liquid (or Rotelle)
3 cups long-grain rice

Melt butter in heavy large Dutch oven over medium-high heat.
Add red onions, 4 green onions, bell pepper, garlic, bay leaves, jalapeÃ±o, Creole Seasoning, cayenne pepper and oregano. Cover and cook until vegetables are tender, stirring occasionally, about 15 minutes.

Mix in tomato paste. Add sausage, shrimp, broth, tomatoes and rice. Bring mixture to simmer. Reduce heat to low, cover and cook until rice is very tender, stirring occasionally, about 1 hour.

Serves 10. DoesnÂt freeze well.
