butter soaked into stone and smoking

I have a relatively new and cheap, $10, pizza stone. I suggested that my daughter bake cookies on it, so she did. The butter soaked into the stone, discolored it which is no big deal, but it smoked like a 6 alarm the next time it was in the oven. It smoked again.

I scrubbed it without soap, using hot and then cold water. Nothing.

I suppose I could try Dawn, but then wouldn't it have a soapy taste? Dh says to toss it, but my frugal dna won't allow that. It really smokes big time. Any ideas? tia.

You baked cookies right on the stone?

I only use a stone to bake bread or pizza.
I clean mine when I clean the oven. Leave it in during the self-cleaning cycle.

Do not use soap on your stone.

don't toss the stone....even if you don't have a self clean cycle, just baking at a high temp will burn it off....and don't use it for cookies again....

Ok I'll stick my neck out but upfront is a BIG disclaimer that in no way is this tested, approved or even recommended. And add all that stuff the fast talking lawyers say on the adds on TV, ok? ;) The BBB Boston Baked Beans is the closest to your recipe posted above. 1 qt. dried navy beans (about 2 lbs.) 1/2 lb. salt pork cut into pieces 3 large onions, sliced 2/3 c brown sugar 2 tsp. salt 2 tsp. dry mustard 2/3 cup molasses Since you will be using the Bush canned beans I won't include the part in the recipe about pre-soaking/rehydrating the dried beans. Pour beans into a baking dish or bean pot. Add pork and onions. Combine remaining ingredients and 4 cups of the reserved bean liquid and add water to make 4 cups if necessary. (I would measure the juice from the Bush cans and bring it up to 4 cups with extra water, maybe even add a can of tomato sauce to it.) Ladle sauce over the beans, cover and bake at 350 degrees for about 3 1/2 hours. Add water if necessary as beans should be soupy. Pack hot beans and sauce into hot jars leaving 1 inch headspace.** Remove air bubbles. Adjust 2 piece caps. Process pints 1 hours and 20 mins, quarts 1 hour and 35 mins at 10 lbs. (depending on altitude). Now for the deviations: I see no problems with adding the pineapple as it is acid, HOWEVER it will change the density so finely chop it (not chunks) and add the pineapple juice too. Your recipe calls for less onions so use its lesser amount and the ketchup in your recipe to help compensate for the change in density the pineapple causes. This gets you everything EXCEPT the peppers and you will have to use dried, not fresh, for those - either dried pepper flakes of some kind or dried peppers that have first been rehydrated in vinegar, not water. Follow me? Just too much pH effect otherwise. Of course you can always add them after you open the jars at serving time too. **When it comes to filling the jars you MUST have this be SOUPY and thinner than normal, much soupyier than you wish. The other baked bean recipes say "fill the jar only 3/4 full and the rest of the jar with liquid, remove air bubbles and add more liquid If you have to add more water to the cooking liquid to have enough - do it. Better too thin than too thick. You can thicken it up at serving time by cooking it down or adding a bit of corn starch or flour. OK? Dave ~ ducking from the hail of stones ;)

Oh ... Old fashioned apple butter cooked in a big copper kettle over an open fire. DH's grandfather in WV used to make the most awesomely amazing apple butter. Never had anything come close since his passing :-( and nobody knows what happened to the kettle.

Don't take it too literally. Of course I mean that it is "wrong" in a tongue in cheek manner, of course. To me, it IS the worst thing to do to a pan of real cornbread to make it sweet. . It may not be to others. Once you have added sugar to the cornbread, you no longer have a. cornbread that goes with the meal. How do you eat cornbread and beans? You cut open that piece of cornbread and pour a ladle full of beans over it. I grew up on cornbread and beans. It was our mainstay meal. My mom used to make deviled eggs to serve with it. That is not a regional preference, just what mom liked. I keep cornbread around and chunk off a piece and warm it in a skillet. Then I use the still warm skillet and pour in some beans to heat up. A bit of Tabasco or hot vinegar over the top and it is a little bit of heaven that I never tire of. Some of those mills scattered down I95 through the Carolinas make some wonderful cornmeal. It was sold in the Publix, of all places, but the last time I was in Florida at a Publix I could not find it. Good meal does make a difference. If I can't find one of the ones out of the Carolinas from the small mills, I will go for Indian Head. White and yellow are not that much different in taste but I prefer yellow. They are both good. A good skillet of southern cornbread is a basic cooking skill. I put southern cornbread in to two categories. One is the cornbread that came to be favored by those who inherited the traditions from the mountains and inland and the other is the low country cornbread of the coastal regions. There are a couple of variations of each of them, but the main difference is that the inland folks began to use some flour and made a higher and richer cornbread. Some ever use sugar! Those low country folks around the coastal areas made a thinner cornbread with all cornmeal, less leavening and they used buttermilk. Sometimes I will use a bit of molasses and some whole wheat flour in a cornbread that is going to be had with a beef stew and vegetables in the winter. But that is not my go to cornbread. I understand that this is going to be something different from my "real" cornbread. Just once in a while when the weather turns colder and we begin to gravitate towards root vegetables, winter squash and the like, a small bit of rich sweetness can be welcome. If it is BBQ or beans or gumbo or any of that nature, there is nothing like a warm and crusty piece of low country cornbread. I don't use bacon grease like my mom did. I don't buy bacon but once in a long long while.

I can't remember just when, but I'm thinking the late 1990's, there was a confluence, here, of new attitudes about appropriate business entertaining behavior. Out went alcohol, altogether, during the day, out went exclusionary, sexist venues including strip clubs, steam rooms, etc., in came fine hotels trying to monetize their lobbies and patios, and restauants trying to drive between services traffic which wouldn’t interfere with the kitchen, and combined, these produced a big popularity of Afternoon Tea right out of Beatrix Potter. Okay, that's a joke, but ”Tea” as a meeting time, eating time, etc., here, at least outside of British enclaves, was entirely dolly tea party or teddy bear picnic, the ”tea” was water or lemonade (squash, I believe in UK terms), cola was the coffee, and quite likely the dishes had Peter and his sisters painted on them, and perhaps the Tailor of Gloucester. I think it has faded, and covid would have killed off most of the stalwarts, but my guess is that this is where a lot of American ideas of English Tea come from.

Thanks for your advice. She actually used 4-8(yikes, sure -not out of her budget!) circles of parchment paper under the butter rich cookie dough, and it soaked.

We don't have a self cleaning oven, not yet. But when I had the stone in at 450 deg for bread baking, no knead, it was smoking like crazy. I wish that I could leave it in the high temp oven and it would get better, but when I did, it got worse.

The butter is not coming thru the other side of the stone. It has only discolored the one side--which I why there may be hope, yet.

What do you all think about waiting til nicer weather and I can use it on the gas grill, and if it smokes, it smokes. As long as it will cure it. The abin5 bread folks use grills for breads and pizza, but I have no idea how huge wafts of smoke will affect good bread and pizza. Oy, what to do? tia

Just bake your bread on it and open the window to let out the smoke....eventually it will burn off.

Can you put an exhaust fan; on low speed, in a window near the oven ???

If so, turn the heat all the way up and leave the stone in the oven for about an hour,
or Bake it until the smoking stops.

Try sprinkling some baking soda on the stone's grease spots the next time you heat the oven. Position the stone to the lowest level and the smoking should go away in a few minutes. Then you can continue baking whatever without taking out the stone - or you can take the stone out. Never use water to clean the stone. Just scrape any burnt pieces off. Discolorations will happen - sort of like being well-seasoned. Mine is looking black after all the years of use.

Also, the baking soda works well whenever a casserole or pie drips over the edge and some major smoking can occur. Just open the oven door and sprinkle some baking soda on the drippings. Soon the smoking will go away. I've used that tip several times and it works.

. Once the stone cools and then you reheat - does it still smoke?

I think the baking soda will only work if it is smoking.

Good suggestion about the baking soda....I might also suggest putting corn meal on the stone and rubbing it in...then brushing it off and repeating until ti seems the grease has been absorbed.
But...$10 is Ten Dollars !!

I have a pampered chef pizza stone and I have made cookies on it. But I seasoned it before ever baking on it by brushing it with oil and baking the stone. I did this a couple times. The stone isn't so porous then. Mine is pretty darned black too but nothing sticks to it now.

It really isn't recommended to oil or grease a pizza stone.

It is because the stone is porous that it is able to withdraw the moisture from the dough, making for a nice crisp crust. You do not want to "seal" your stone. Defeats the purpose of the stone.
