Peanut butter: Can you make and store it yourself?

So, now that I am Vitamix-equipped, DH would like to know whether I can make my own peanut butter (yes), and also store it long term ( sounds iffy to me). What would one do to prevent spoilage, rancid oil, etc.?

I just went to the vitamix website where they tell you how to make peanut butter and they don't give a timeline on how long it will keep, however, it does say that you may freeze the peanut butter for longer storage.

I would make smaller batches. What you would use in a few weeks. I've read it has a few months shelf life in the fridge but it seems to change if longer than a month. I always date the top to keep track. I use it in a noodle dish and a sesame chicken salad but not often. Might make wide rice noodles tomorrow so i'll need a small amount and might try using warmed coconut oil as the blending oil.

Oh, good idea and tip...after you remove it from your jar, the bit remaining can become a nice salad dressing or marinade...just add a 1/4 cup ac vinegar, (or any vinegar), a bit of toasted sesame oil and some neutral oil, lemon juice, maybe some fresh herb and honey...helps clean out your jar and no waste.
I'm always using bits left in the jar for some type of invented dressing before cleaning. Humus makes a nice dressing also.
Like mentioned, freezing is an option. My freezer is still stuffed. I seem to like making things more than eating...

I'd love it too! I like to eat all over in Grand Rapids, I've got a list of new places to try and I have old favorites too. There's a relatively new Mexican place downtown called maggie's Kitchen, they even have barbacoa made of beef cheeks, there's a Caribbean place with some kind of goat dish that's only got curbside service, a fish place on Kalamazoo down by the Mediterranean Market, and there are old standbys like Pietro's. I love the Blue Water Grill but that's clear over off Plainfield on East Beltline, and there are a lot of places I haven't even tried downtown near VanAndel and The B.O.B. Any preferences? Sushi? Indian? Fish? Diner? Even chain restaurants if you have a favorite, heck, we've even got a Sonic now, right across the street from Gordon Food Service on Alpine, LOL. You tell me when and we'll find a where! I'm definitely going to have to check D&W for Koeze's, though, and the one on 44th has DeRueze's Gourmet Market right next door. They now have a cut rate gourmet department where they get pallets full of stuff for really cheap, it's fun but you never know what you'll find for a buck... Annie

Now then back to my problem... The natural peanut butter I buy has at least two tablespoons of oil floating on the top... If I mix it all in the peanut butter it is way too runny, it actually runs out of the sandwich... I only pour off the top layer of oil, there's still an oil slick on top of the peanut butter that I do mix in, and it's more than enough oil to keep it gooey... ( I do not put peanut butter in the FRIDGE [ lol ] ) There for a while we were going through a jar a week and I now have a quart of oil... For the record the peanut butter 'solids/juice' kinda sinks to the bottom of each layer of oil... So I'm guessing that if I let it all come to room temperature all the peanut butter will sink to the bottom of the jar and if I'm very careful I might be able to pour off the oil for frying and not start a fire... I just thought someone here might know... Oh well, if you don't hear from me you know I set the kitchen on fire... lol Rita

As the mother of a 7 yo with a severe peanut allergy I thought you could use the latest info from Food Allergy Network. On a personal side, I did not bf, I did eat peanut products during pregnancy, no one on both sides of family have peanut allergy, although ragweed, mold allergies are on both sides. The study of causes of allergies is just beginning - no one has all the answers. John Yunginger, M.D. - FAN Newsletter Oct/Nov 2001 Medical studies have focused on three areas, including the mother's diet prior to and after the infant's birth; infant breast feeding; and the delayed introduction of allergenic foods into the infants diet. Elimination of allergenic foods such as cows milk and egg from the mother's diet during the last three months of pregnancy does not seem to reduce the infant's chances of developing food allergies after birth. Pediatricians and allergists usually support breast feeding of infants, particularly those born into families whose members have food allergies, eczema, asthma or hay fever. However, small amounts of potentially allergenic foods consumed by a lactating mother may appear in her breast milk and could, theoretically, sensitize her infant. Large scale studies in which mothers avoided eating egg, cows milk, fish, soy and peanut during lactation showed that development of food allergy in their infants could be reduced appreciably, but not prevented entirely. The elimination diets are difficult to follow and have the potential to compromise the mothers nutrition. If such diets are used, the assistance of a registered dietitian should be requested. Early infant exposure to sensitizing foods such as cows milk, egg and soy may be associated with development of eczema. Many allergists suggest delaying introduction of these foods into the diet until the infant is at least six months old. More highly allergenic foods such as peanut, tree nut and fish should be withheld even longer. I will have to try this. I haven't been able to eat peanut products for years but finally found a peanut butter substitute that looks and tastes like the peanut butter I remember and the best part you can use it in recipes just as you would use peanut butter. This is a tricky one. Peanut butter has a fairly good shelf life (3-6 months according to some of my food storage charts), it's the oil that separates from the nut butter that can quickly go rancid when exposed to oxygen.

Refrigeration helps to keep the oil from separating quite so much, but it's actually perfectly safe to store fresh peanut butter at room temperature - especially if you plan on using it quickly. It's the separated oil and oxygen that is the cause of the oils going rancid, and why hydrogenated oils are added to commercial peanut butter - it stays suspended in the nut butter.

With a quick search I haven't been able to find any real research on the subject, but that doesn't mean there isn't something out there on the subject.

I do home food storage and store peanuts for making fresh peanut butter, and for long-term storage I have cans/bags/jars of commercially made powdered peanut butter (which has much of the oil removed).

I store peanut butter (and tahini) with the jars upside down, and I do store them in the fridge. I don't have peanut butter now and haven't for several years, but I go through a lot of tahini. Storing it upside down helps when stirring the oil back in, but I have heard that it is supposed to help against spoilage.
