My pinto beans are always bitter

So, how do make your pintos?

We love refried beans (for chalupas and tacos and such) and bean soups. I refrain from making pintos because they often have a bitter quality. I just buy the refried beans in a can, but I would love to make my own.

Also, when I buy whole pintos in the can, they are always soft, the skin is very tender, and the whole bean is not split and bleeding into the liquid. Is it possible to get that same texture by cooking them from scratch? Or is that just a processed thing?
