Can we talk about Flour?

I have read about King Arthur Flour being the closest thing to what the French use in baking. I picked an all-purpose flour to make sourdough bread. I was trying for a fat fluffy loaf like my Mom used to make. Instead the loaves were kinda flat. They didn't even reach the top of the loaf pan.

Did I need to add something to the flour to make the loaves rise? I came across something on adding "wheat gluten" to flour to get large puffed up loaves. It also suggested to just use "bread flour", having all you need added in. I like the more from scratch approach, the chemistry and hands-on of it all.
