Thank you all for your inputs, Birthday dinner delivered!

So dinner was made & delivered for my FIL's 88th birthday. Here's the menu: Ham, lentil & veggie soup, Oven baked chicken fingers, Spinach cranberry salad, Orange chocolate chip muffins, and Cheddar biscuits. Al

Al, it looks delicious, and Happy Birthday to your FIL.

Now, are those red counters I see? I've got orange counters and I don't like them, I have a built in table with the same top and no matter what dishes you put on them, they clash...

Yachter, thanks for your comments on this table. Not Chrismasy but winter is what I was hoping for when I set it. I set it in such a hurry that I see I didn't turn my trees with the pretty side out on all of them. Magpie, I should of stated DDaughter so you would of known for sure. Either one, glad you liked it. Yes, Karen, Jane and Creek are all having trying times with DDads. OA, thanks and I may try a MG table but don't know if I have much to put on it. I fell in love with these trees and some others at Shopko this year and DD never fails me. She listens to close sometimes but is always thinking of my tables for me while shopping. My jaw really dropped when I seen these stems. May be a little to upper class for me.lol Luvs, this was an accident with the trees and stems but they do seem to go together. When I received them I was thinking about using DM's 3 wisemen and setting a table but didn't have time. Jeanne, 20 years is perfect. Your still young enough to enjoy all the sports and life with them. I always told our children that they needed to be able to support their family if they were alone so it takes alot of hard work to be able to do this. Your DGD will appreciate life more with having to work to achieve it. Both our children own businesses and it's paying off. DD and I are 24 years apart and her and her DD are 25. She had to finish college, get married, own a home before having children. Wish we were all so disciplined in life.lol Thanks for all the wonderful comments on this table. Broiled Arancini Italian Rice Balls (Arancini) These rice balls are great as an appetizer or a main meal with a nice salad and broccoli and garlic side dish. 1 lb white rice 4 eggs 1/2 cup grated parmesan cheese 1 lb mozzarella cheese, cut in 16 cubes 1 1/2 cups Italian seasoned breadcrumbs olive oil Cook rice until sticky. Let cool. Mix rice, 4 egg yolks and grated cheese in large bowl. Form rice mixture into balls (the size of a large meatball)) enclosing cube of Mozzarella inside each rice ball. Beat egg whites. Dip each rice ball in beaten egg whites and then in bread crumbs. Drizzle with olive oil and broil on all sides until well browned. To serve, split open and top with tomato sauce. Makes 12 to 14.

Dacor ALL GAS (no electronics) range input

The only review I can think of on a Dacor AG range was this. Of course you can bake in a gas oven. There are some differences but if you understand what you are trying to do, you can work around them for the most part. What do you bake in now? Baking and roasting have many variables. The internal conditions in the oven can affect how heat is transferred and so cooking. Humidity, air flow, radiant heat from the sides of the oven and cookware all have a part in how something you are baking turns out. Some of these can be manipulated to produce the results you want. There is a difference in the way gas and electric ovens are engineered. Gas ovens are ventilated quite a bit more than electric ovens. This results in two things that will affect your cooking. The first is that although gas ovens will release water as a byproduct of combustion, it is lost, along with more heat to your kitchen. You end up with less humidity and the increased airflow is also drying. This is great for browning and crispiness, especially roasting meats and some baked goods. Superficial water must be removed in order for the Maillard reaction to take place. Electric ovens hold onto the moisture from the food cooking so is more humid, which is good for things that have to rise. Water promotes starch gelatinization which allows more rise and changes the way crusts form. There are ways to add moisture to a gas oven if you want to for bread baking. You can turn on your convection in an electric oven to get more "drying". If you look at what convection does, by the air movement it is drying and increases the rate of heat transfer. In a conventional oven the heat does come from the bottom. When you use convection, it evens the heat in the oven and changes the direction of the heat to come from the sides and top more. This can change the way a cake rises. Airflow is determined by the number and speed of the fans as well as any baffles that direct it. Some electric ovens have a slower speed of the fan for baking if you select "convection bake". I don't use convection for baking cakes or muffins until the rise is complete. The third element convection is helpful in keeping temperature even when the oven is full. Many electric ovens incorporate that element in their roasting and baking cycles and some have cycles that are "pure convection". With a gas oven, you just do a little more tending. Many people want the simplicity of few electronics while others like the different modes. I think it is much harder to get an oven with all the electronics right. When it works it is great but if it doesn't it is miserable. A gas oven while it may not have all the benefits, you probably have less chance to get something that is horrible. A couple of comments about the Dacor range you are considering. I really like the larger burner platforms. I use a lot of bigger pans so this would be great. The simmer seems pretty good at 800 BTUS . One other thing to consider is the broiler. In a gas oven, the infrared ones can be narrow. They have really high heat though. If you use it to broil a couple of steaks, it is great. I use mine to brown trays of appetizers so I need the wider electric broiler.

My kitchen remodel was absolutely designed around how I cook & how we use the kitchen. Three things I wanted were: 1. Lots of natural light - I cook from-scratch meals almost every day and spend a lot of time here. In addition to prep/cooking, this is where most casual entertaining happens, where I fold laundry, work on the computer, and where DH & I eat most meals. I used to have one small window and we looked at walls of upper cabinet boxes (depressing). We eliminated many uppers, added storage in the island, put the range in the corner so that this is now what I see when I'm working there. 2. Induction range - I also chose my stove for how I cook. I prefer the look of a pro-style gas stove but chose induction because the perfect stovetop temp control works best for my style of cooking. I don't do wok or high sear frying, but for 9 months of the year you'll likely see a pot on my stovetop. I do lots of stocks, soups, stews & chowders. Induction was made for simmering! Here's the pot of chicken stock I have going on this rainy day. 3. Big stone (no prep sink) island -I chose to have a big, uninterrupted island top that, in addition to being our preferred everyday eating spot, also works as a serving table for buffets (has the plugs for crockpots/warming trays). It also allows for a number of people to work around it with room to spare. Like when the grands come over for the annual Christmas cookie bake ;) There are SO many elements I just love in other kitchens posted here but some just wouldn't have worked as well for me. I've used this kitchen for almost a year now, though, and still appreciate it every day. Great thread to get people in the planning stages to really consider their priorities for use over just looks. Al, what's so unhealthy about what you delivered? they look wonderful, healthy and delicious.

Let me give you a little piece of information to your FIL.

Do you remember the date when the Olympic event started in China? I do. It was highly reported here. It was 8/8/08. The Chinese believe the number 8 is highly auspicious. You make it to 88, you are going to be extremely lucky. In the report, it was said that the license plate 8888 was auctioned off to the high bidder for $10 million dollars in Hong Kong.

Thanks Annie! I hope my in-laws will enjoy the meal. I made 12 muffins and 8 biscuits so we had some left at home. Little man and hubby loved the biscuits & muffins. Little man ate 2 muffins after dinner. Hubby ate one and when I asked him how the muffin was he said "It should be illegal to make muffins so ridiculously good!" LOL I took it he really liked it.

And yes, those are red counters. Hubby's choice! Red looks good but I hear red color stimulates appetite so not sure if it's a good thing! LOL

Thanks Dcarch. The soup, salad, and baked chicken fingers are perfectly healthy. On the other hand, the cheddar biscuits and orange chocolate chips muffins are loaded with fat, sugar, and white flour. But hey, like what you said, he lives to 88 and he must be doing something right. All we want is to give him a birthday meal that he enjoys.

I don't think it would be a problem to eat muffins or biscuits like that OCCASIONALLY. The problem with my dad, is he would eat ALL the muffins and biscuits at one meal, and skip the soup and salad. And then polish off half a bag of potato chips and a dozen cookies before bed. That meal look SUPER YUMMY to me, and totally wondeful that you cooked such goodies for FIL. I'm sure it was an 88th to remember for him, he's lucky!

Al, looks like a lovely dinner, I would have enjoyed it (without the ham!)

Question for ya: give that your in-laws said -

We took them to Red Lobster for lunch last Sunday. They loved the biscuits there

In Red Lobster, MIL dropped another hint for chocolate chip muffins. She didn't want apple bran, or carrot orange muffins, only chocolate chips

I'm curious how they liked your additions!

LOL 1pinkmountain. Sounds like something my mother-in-laws would do. I know my FIL liked lentil soup because I had made that for him a few times. MIL, not so much. LOL

Jessy & Linda, I got a thank-you call from FIL after our dinner. He said they really liked the meal especially the biscuits and "buns" aka orange chocolate chip muffins. The "other dish" aka spinach cranberry salad was not something they were familiar with but they "liked" it - being polite. :-)

Well, I gave my best shot and they got what they wanted. Hubby came home, after delivering, and told me that his dad had a big grin on his face when he saw what I made for him. That's all it counts!
