Well the other meatloaf thread got me hankering for meatloaf and I said I'd try Sharons recipe and so this afternoon I did just that. First of all I chopped all the veggie parts in my trusty old Moulinex FP and did all the uckky mixing in the Bosch Universal. I used the cookie paddles in the mixer and they did a great job. Always hated hand mixing ground beef LOL
We were so hungry by the time it finished baking I half forgot to take a picture and started eating quickly running back to the kitchen for this snap. Nothing fancy just mashed potatoes, country gravy, peas and corn which are all my favorites. I do pronounce this meatloaf the best I've made and God Bless All Who Sail in Her, or something like that LOL

How funny. I made this tonight as well. That picture sent me over the edge last week. I think it was the first time that I craved meatloaf. I doubled it and cooked it in a large pan. I also forget to take a picture. Mine didn't look like her picture of course. It shrunk quite a bit and had a lot of grease. I poured off the grease when it came out and it was yummy. I used the tomato puree instead of the soup though. A keeper for sure.
That looks good PK and I hope you like it cold in a sandwich too. With mustard and pickle on fresh whole grain brown bread it's to die for!
Joanm...there should be some but not too much fat in the grind of meat to keep it from being greasy. I've experimented with everything from best steak to a regular beef hamburger mixture and found it best when I chose the meat and had the butcher grind it twice for me. It needs some fat so it doesn't become a dry, compact loaf.
That meat loaf thread sent me to the ground meat department too! I'm always hounding hubbydubbydo about eating too much ground beef, (his favorites= meat loaf and hamburgers, and any casserole with ground beef). But I've been "forcing" some of those meat loaf dishes on him and he's loving it! I use my KA dough hook. It doesn't get it all, but it doesn't over mix either. The rest is easily incorporated with a spatula. Sharon's is next! Annie1971
1 1/2 cups soft bread crumbs - (tear up soft sliced bread - don't use fine crumbs as for breading) 1 1/2 lb ground meat (beef or pork & beef) (about 700 grams) 1 beaten egg 1 onion chopped fine 1/4 teasp dry Colman's (or similar) mustard 1/8 teasp ground sage 1/2 teasp ground thyme 1 1/2 teasp salt
1/4 teas pepper 1/8 teasp nutmeg 1 chopped green pepper 1 tin condensed tomato soup (eg Campbells's) 3/4 cup grated celery 3/4 cup grated carrot
1) Mix meat with egg, add onion and seasonings and bread crumbs, greens and carrots
2) Add half the tin of soup and mix everything well. Turn into greased loaf pan or glass casserole dish 8.5 x 11 inches and pour remaining soup over the top, smoothing it evenly over all.
3) Bake 350 F (177 C) for 1 1/4 hours.
