sauce for fried rice?

ok the rice cooker thread and some left over pork roast got me thinking 'fried rice' but I don't have any oyster sauce. I know I could use soy but what about a miso teriyaki sauce? or maybe char siu? sounds more flavorful than plain old soy...what are your thoughts Hobson? [ps extra points if you can name the movie that last phrase came from :)]

I use soy and a little bit of Gravy Master or Kitchen Boquet.

I've made a friend's main dish fried rice several times. It's so good I wonder why I don't make it more often. Leftover plain rice from a Chinese restaurant is perfect for this. There aren't any measurements and I've probably never made it exactly the same way twice. The ingredients are bacon, onions, green bell pepper, garlic, green onions, cooked rice that has sat on the stove for several hours, beaten egg and water, lots of shrimp, frozen peas and soy sauce.

Thanks for posting this Carol, now I can print out the recipe and get THAT messy instead of my Craig Claiborne cookbook (grin). I used frozen peas and carrots (pre-cut!) or any other veggie I wish as a short cut.

Here's one that I've made and liked. The orange juice adds something to it! Asian Fried Rice (Bonnie Stern) This is best made with day old rice so next time you are cooking rice for dinner - make lots to have lots leftover. Types of rice to use for this are basmati, jasmine or fragrant rice. Makes 4 servings 4 eggs Â½ tsp salt Â¼ tsp pepper 2 Tbsp rice vinegar 2 Tbsp orange juice 2 Tbsp soy sauce 1 tsp Asian sesame oil 1 Tbsp vegetable oil 1 clove garlic, finely chopped 1 small onion 1 Tbsp chopped fresh ginger root 1 sweet red pepper, diced 1 cup frozen peas 6 cups cold cooked rice 3 green onions, thinly sliced on the diagonal Â¼ cup chopped fresh coriander or basil In a small mixing bowl, beat eggs with salt and pepper. Reserve. For the sauce, in another bowl or measuring cup combine rice vinegar with orange juice, soy sauce and sesame oil. Reserve. Heat oil in a wok or large non-stick skillet. Add garlic, onions and ginger. Cook, stirring constantly, a minute or two until onion is tender and lightly browned. Add red pepper and cook 2 minutes longer. Add peas and rice, breaking rice up with a wooden spoon. Stir sauce into rice and combine well. Make a hole in the rice in the centre, all the way down to the pan. Add eggs allowing some to set on the bottom so that some of the eggs scramble and some of the eggs coat the rice. Combine everything. Stir in green onions and coriander, and cook a minute longer.

The only liquids I use in fried rice are oil, which is added at the start, and a sprinkling of soy sauce near the end of cooking. I think that's the traditional way.

I agree with Jim! Any fried rice I have ever had or made only used just a little soy sauce near the end of the cooking.

Fish all bathe together. Athough they do tend to eat one another...I often think : Fish must get awfully tired of seafood. What are your thoughts,Hobson?

I make it often, and serve it with powdered mustard mixed in vinegar, and duck sauce on the side, like they do in the restaurants...

Yes, we saw it and both LOVED IT big time! Loved it! Growl, snap, grooowwwwwllllllll. Low undertone.......get off my lawn..............

I sometimes add tamarind sauce, which gives it an Indonesian or Thai flavor. I generally dilute tamarind paste with lime juice to make the sauce. Black rice vinegar is also good.

Fried rice is a staple at our house and I never use any sauce other than the oil to start the cooking. Here is another question. Do you add the eggs on top of the rice or do you add the eggs with the rice pushed aside and scramble them first before stirring them in?

I make a thin omelet first by spreading beaten egg around the oiled wok. The omelet is cut into small pieces and added later with other ingredients.

Thinly shredded iceberg lettuce is a good substitute for bean sprouts. In fact, I like it better. Stir it into the rice near the end of cooking. You won't be aware that you are eating lettuce but the fried rice will have a nice freshness and lightness.
