How long can I keep homemade salad dressing

...in the fridge? Especially if it's got minced garlic and/or shallots in it? I usually use a base of 2 parts oil to one part vinegar, with at least one teaspoon of Dijon mustard.

I'd like to make up batches that would last about a week, but wonder if that would be problematic. Thanks for your advice.
