WizardNancy....Soup question re chowder/cheeseburger soups

I had wondered about the last bits of the salmon chowder that had potatoes in it. I had no intention of eating it...y'all know I don't go wild for potatoes unless they are french fries. I told Dick the soup wouldn't freeze, but now I'm looking at your recipe for Cheeseburger Soup and you note that you DO freeze it.

This is a T+T soup that I have made many times. Great with some homemade bread for dinner. I often double and freeze the extra for a "no time to cook night".

So...you can freeze potatoes in soup??? who knew...

SPICY CHEESEBURGER SOUP

2 C cubed potatoes (peeling optional)

1½ C water

2 carrots, grated

½ C chopped onion

½ C chopped green pepper

1 jalapeno pepper, chopped

1 clove garlic, minced

1 tsp salt

1 Tabsp beef bouillion granuals

____ Combine the above in a large pan and cook until potatoes are tender.

1 lb lean ground beef

____Brown and drain ground beef and stir into cooked potatoes

2½ C milk

3 Tabsp flour

____Combine flour and milk and stir into soup. Bring to a boil then reduce heat.

½ lb Velveeta Cheese, cubed

½ tsp cayenne pepper

____Stir into soup, just until cheese is melted.

bacon crumbles (optional)

____Top each serving with bacon if desired.

Makes 4-6 servings
