G'doc ANNIEÂS SALSA 8 cups tomatoes, peeled, chopped and drained 2 1/2 cups chopped onion 1 1/2 cups chopped green pepper 3  5 chopped jalapenos 6 cloves minced garlic 2 tsp cumin 2 tsp pepper 1/8 cup canning salt ¼ cup chopped fresh cilantro 1/3 cup sugar 1 cup vinegar (for BWB or 1/3 cup vinegar for PC) 16 oz. tomato sauce 16 oz tomato paste Mix all ingredients, bring to a boil, boil 10 minutes. Pour into hot jars, process at 10 lbs of pressure for 30 minutes for pints. Or BWB 15 minutes. Makes 6 pints Nancy

Just posted this on the Cooking Forum. It is very moist due to the oil and the pineapple. Hawaiian Pineapple Banana Bread 3 cups flour 2 cups sugar 1 t. baking soda 1 t. cinnamon 3/4 t. salt 1 cup chopped pecans 3 eggs, beaten 1 cup vegetable oil 2 cups mashed bananas (about 5) 2 t. vanilla extract 1 8 oz. can crushed pineapple, drained Preheat oven to 350 degrees F. Combine dry ingredients in a large bowl. Stir in nuts. Combine wet ingredients in another bowl. Mix wet ingredients into the bowl of the dry ingredients. Mix just until all is moistened. Put into two greased and floured regular (8.5") loaf pans. Bake for 1 1/2 hours at 350 degrees. Cool in the pans for 10-15 minutes then turn out onto a rack and cool completely. Makes two loaves. Cranberry Cornbread Stuffing 2 C cranberries 1 C water 1/2 C sugar 1 lb. sausage meat, I use Jimmy Dean Sage breakfast sausage 8 C cornbread, cubed and dried in a very low oven 2 large Granny Smith apples,peeled and diced 2 medium stalks celery, diced 1 medium onion finely diced (1/2 cup) 1/4 C chopped parsley 2 tsp. thyme leaves 1/2 tsp salt 1/4 tsp. pepper 2 tsp marjoram leaves Combine cranberries, water and sugar in saucepan. Bring to boil, lower heat and simmer 10 minutes. Drain well. Transfer to large bowl. Saute sausage in medium skillet breaking into small pieces, 5 minutes. Drain. Combine cranberries and sausage. Add cornbread, apples, celery, onion, parsley, thyme, marjoram salt and pepper. Toss gently to mix. Can be made day ahead. Stuff turkey just before ready to roast.
