What to do with lots of brown sugar?

Brown sugar is one of those things that I don't use that often and always end up overbuying because I can't remember if I have any! I have about three boxes (light and dark), although one is hard as a rock. I can just microwave it with a container of water, right?

Does anyone have any recipes?

Make Sol's brown sugar CC cookies...

It takes 2 cups!

Brown Sugar Chocolate Chip Cookies - Sol

2Â½ cups AP flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups light brown sugar, packed
2 large eggs
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
Â½ cup chopped walnuts, optional

Whisk together the flour, baking soda and salt. In a mixer, cream the butter and sugar until light. Add the eggs, one at a time, beating well after each addition. Add vanilla. On low speed, add the flour mixture, and mix until barely blended. Add chocolate chips and nuts. Drop by tablespoons onto sheet pan and bake in a 350Â°F oven, for 12-15 minutes.

Make Woodie's Creme Brulee French toast..it takes 1 cup. LOL

CrÃme Brulee French Toast (Woodie)

1 Stick Butter
1 Cup Brown Sugar
2 Tbl Corn Syrup
1 10 inch round country loaf or
1 Lb French bread or 1 Challah
5 eggs
1 1/2 Cup half and half
1 Tsp Vanilla
1 Tsp Grand Marnier (optional)
1/4 Tsp salt

1. Melt butter, sugar and corn syrup in saucepan over moderate heat. Pour into 9 X 13 pan.
2. Slice bread into 6 slices and place on top of the sauce in the 9 X 13 pan, press together to fit.
3. Whisk together eggs, half and half, Vanilla, Grand Marnier and salt. Pour over bread.
4. Cover and chill 8 to 24 hours.
5. Bake at 350 degrees for approximately 40 minutes, until puffy and brown

(I never include the nuts though ...)

From Fannie Farmer Cookbook:

Butterscotch Brownies
(makes 36 brownies)
1/2 cup melted butter
2 cups dark-brown sugar
2 eggs
1/2 tsp salt
1 1/2 cups flour
2 tsp baking powder
1 tsp vanilla
1 cup chopped nuts

Preheat oven to 350Â°F. Butter a 9x13-inch cake pan. Mix all the ingredients together, combining them well. Spread in the pan and bake for 25-30 minutes, or until dry on top and almost firm to the touch. Let cool for 10-15 minutes, then cut in small squares.

bpgreen, thanks for the response. My lack of chemistry knowledge is probably showing. When I said something about our bodies not being able to digest corn syrup I was vaguely remembering reading that all cells can metabolize glucose but only our livers can metabolize fructose, and the particularly bad corn syrup is high fructose corn syrup, HFCS. Ok, I have no idea how to tell what sceince is reputable or not, but I did a quick search and found this article which talks about how HFCS is produced by processing corn starch to yield glucose, and then processing the glucose to produce a high percentage of fructose. And that the fructose contains both glucsoe and fructose, but that when testing rats (of course) it's the fructose that was harmful. Whew. Like I said, sceince is not really my thing, especially the part of sorting out what is valid and what isn't. If you are scared by everything you read, you'd live on rice and water, you know? But just intuitively I feel that coffee is a much more "natural" and less processed drink, so it is currently my vice of choice. Of course, on a nice hot day like today and being at the grocery store looking at the great deals on Dr. Pepper, espcially Diet Dr. Pepper which really does taste the best out of all diet soda when we are so close to swim-suit season, I am tempted, really tempted. But then my intuitive part kicks in and I wonder why I would avoid putting chemical fertilizers in my garden but then pour artifical sweeteners in my compost, I mean my body. ;) But then again, I don't even put sugar in my coffee, much less artifials sweeteners, I use blue agave. That is what happens when a southern girl move to California. ;) Ok, enough rambling. Here is the one link I found quickly searching just to get the jist of what freaks me out about corn syrup. Oh yeah, I had that once on my albomarginata. When I took it out of the pot and pulled it apart, I saw that white stuff. I washed it and repotted it (2 pots) in new soil. It's fine. It was huge and old and very thick. I attributed the growth of the bacteria to too heavy soil and being really crowded. This one's not crowded. It's not in heavy soil, as I just potted it up in my homemade mixture late last summer. Well, whatever. I have another one (it was a gift this spring). My inclination is to toss the diseased one. (Both came from the same grower, or, at least have the same tag.) I'm short on space and don't need two of these. The second inclination is to clean it up and repot it and give it away. Could I just excise that eye and repot it, or will I have to wash it down to the roots like I did the albomarginata? bkay

I grind mine "as needed" and just store the dried peppers in quart bags that are stored in 1gal bags. I can blend whatever peppers I want for whatever I am making. I usually have some left, so store that in old spice jars and label it with masking tape. I usually have 2-3 different blends sitting in my cabinet. But, it's a small enough amount that I don't have to worry too much about it going bad. In your case, since you already ground and mixed everything, you're kind of limited on different "blends". But, you could keep the peppers separate from other ingredients until you're ready to use them. Also, it just sounds like you need to add more sweet peppers. As you harvest more, you can keep adding sweet peppers and just save the hot ones for something else.

gnappi, Aww ... what a sweetie! They both look very nice with one single straight stem. I also try to keep most of my fruit trees to go straight up with a single stem if at all possible. The larger one has a lot of new flushes. The smaller one looks bushy too for its size. I think you've taken very good care of them. I can see you've "spent time" with them by your lawn chairs placing close to them. I heard that when you talk to your plants, they do much better :) I know .. I'm doing the same to my favorite plants. I hope you'll have plenty of these little brown dessert treats to eat soon. So, just out of curiosity, how many times do they fruit for you in a year? Thanks so much for posting the pictures--I've enjoyed them.

To soften brown sugar I use a slice of fresh bread in the container or a few slices of apple. It takes a day or two. I don't know about the micro technique but the moisture always does the trick!

Store it in Food Saver jars or bags (or any vacuum sealed containers). It will last forever! (disclaimer probably need here! but it still lasts a long time!) I'm going for those cookies and bars though. My mom used to make the Fannie Farmer Butterscotch bars. They're great!

Wow, I feel a sugar rush already!

I'll make the french toast for DH and me, and the cookies and blondies for my office/classmates.

This is an old recipe served on the Illinois Central RR back in the glory days of railroad dining.

ORANGE PRALINE TOAST

1 cup brown sugar
1/4 cup strained fresh orange juice
1 Tbs. grated orange rind
1/2 cup chopped pecans
8 slices toasting bread
2 Tbs. butter, room temperature

Preheat oven to 400 degrees. In a small bowl, combine well the brown sugar, orange juice, orange rind, and pecans. Toast the bread slices, then butter lightly. Spread one tablespoon of the praline mixture on each piece of toast. Place toast on an ungreased baking sheet and put in oven until sugar melts.
