What 3 pots/pans are most important to your everyday cooking?

I've been trying to figure out what I actually need as far as putting together a traveling kitchen. As much as I'd like something stylish, I settled on my three on a basis of how versatile each pot was individually. (Lightweight and inexpensive got extra points!) I decided on one enameled cast iron skillet, and two different sizes of non-stick woks. I thought I could stir-fry, sear, saute, bake, boil and reheat in these, including making stove-top popcorn (which I do a lot of).

So if you could only pick three, which pots/pans would you deem essential to cooking what you normally do?

My three:

8-qt Circulon non-stick interior, stainless stewpot
12" non-stick frypan
3-qt non-stick saucepot

and if I might add one more essential: heavy-weight half-sheet cake pan. I have two and use at least one three or four times a week.

Of course I would rather not pick only three, but if reduced to that, I would pick my large Magnalite (similar to Caphalon, but discontinued in the 1990s) skillet/saute pan with a large domed lid, a large stock pot with insert for pasta and steaming, and my largest sauce pan. I would also like to have a cast iron skillet and a cast iron grill pan, but they are heavy, and the Magnalite can work almost as well as the cast iron plus do things well that they cast iron cannot. I would want to have a small sauce pan and a wok as well, but they would not make it into the top three.

If I had to carry it on my back, the Magnalite skillet would be the only one I would take (I'm thinking Davey Crockett style).

In my camping gear/earthquake emergency supply, I only have a medium sauce pan (with lid) that fits on a propane burner plus a coffee pot for boiling water, but for tea instead of coffee.

Hi carecooks: I'm kind of like my bread drawer. We switched from a standard depth fridge to a counter depth one with the reno, so I thought I'd keep our bread in the drawer rather than the fridge because of the lost fridge space. However we ended up keeping regular sandwich bread and tortillas in the fridge anyway to avoid mold. (Some of the tortillas seem to get moldy really fast, like a few days, if they're at room temp.) So we use the bread drawer for oatmeal, crackers, MW popcorn, stuff like that. Now I'm thinking I should use it for pasta too, because that gets kind of buried in my pantry. I like having the acrylic top -- I don't know if it really keeps things fresher, but it makes me feel like it will! And regarding #3 above: weigh the food processor first and ask the cabinet maker/supplier about keeping it in a drawer. I thought I would keep my KA mixer in a drawer and our cabinet maker said a pantry shelf (built in, not a roll out) would be better because of the weight. I do keep my blender in a drawer, with the glass part separated from the base due to height. (It's in the drawer in my first picture above.) Regarding #2: set them up on the counter(or better yet in a box) how you would imagine them in a drawer, giving yourself the confines of the planned width and depth of the drawer, then measure how high they go. My skillet handle fits in between pots on an angle because it's so long, so I had to work around it to make things fit. Someone posted a picture of how they hung their pots in a cabinet... maybe the "hidden gems" thread? It was clever and nicely organized.

"While water won't get hotter than 212 (at standard temperature and pressure) I don't believe there's anything preventing steam from getting hotter. Using a similar roasting pan and a cucumber to approximate the chicken, oil in a pan easily got hotter than 212: Even taking it to the extreme and "steaming" the oil, it got hotter than 212" Here's how I believe if works. Sorry if I'm overlapping w/ dcarch's posts, or repeating myself. - Steam can get hotter than 212F if it is under pressure higher than standard sea-level atmospheric (14.7PSI). The link gives the temp-pressure relationship. - Since the pot is not a pressure cooker, the pressure inside is not much above 14.7PSI and the steam in the covered pot is not much above 212F. - The atmosphere in the covered pot is a combination of steam and air. Unlike steam, air can be hotter than 212F even at 14.7PSI. Since the steam and the air are mixing, the atmosphere's temperature will be somewhere between the steam temperature (appx 212F) and the air temp (hotter). - Early in the cooking process, there is lots of steam in the covered pot, so the pot's atmosphere's temperature is close to 212F. During this time, the chicken is being moist-cooked at low temperature. - If you keep cooking and boiling off the liquid in the pot, turning it into steam that escapes through the vent or around the lid, the atmosphere inside the pot will beome drier (less steam) and hotter (closer to the air temperature). Eventually, if you boil the pot dry enough, the atmosphere in the pot can come close enough to the oven's temperature (400F, let's say), and the chicken will start to roast and brown. - But the chicken has lots of internal liquid. If that liquid is dripping and boiling into steam, as is pretty much bound to happen, it has to be dried out too. So if you did want to get a chicken in a covered pot to the same degree of all-over brown as an uncovered chicken, the covered chicken could be a bit more dried out. I'm not sure, have never compared them side-by-side. - Using oil as a comparison doesn't work because oil does not boil at 212F like water, so it can be heated up way past 212F. Vegetable oil starts to smoke around 500F (soybean, safflower, etc - olive is much lower, like 375F). The oil's boiling point is well above that (around 570F for soybean). And above that, somewhere around 600F, is the oil's flash point and around 700F the oil will ignite. Most of us have never seen ''boiling'' oil, and hopefully we never will because it is dangerous. - I believe this is why it took laurie_2008 so long to roast the turkey. The liquid in the turkey and whatever else was in the pot (veg? stuffing?) had to boil off. I have one lower cabinet, 14" wide. Traditional depth, with two roll out shelf/drawers. Top drawer has a 12" pan I use almost daily with lid kept on the pan. Two small stainless saucepans with lids on in front of big pan. Second drawer has 8" skillet with the 4 quart pot on top of each other. They are the same size, so the don't nest, just stack. The lid fits both and kept on which ever pan is on top. Medium saucepan in front of that with the lid on. Cast iron skillet is kept in the broiler. Are the pans you are nesting really being used on a daily basis? Can you remove any of those not frequently used and stop nesting? I cook almost every day of the year and it's important to me to just reach in and grab what I need without having to move something. I need new pans and HD wanted to pick up a set at Costco. Nope, says I. I'd rather pay more at a specialty shop and get just the size pans I need and will fit in my storage. Gloria

Chicagoans, your egg story is as funny as Marcolo's pie weights! (My own ketchup story is just sad, not funny.) For those who've never heard of them, pie weights (which have been around in one form or another for at least a hundred years), beans, rice, or a second pie tin, are put in a pie shell that one is pre-baking to keep it from bubbling. The Fagor Splendid multi set, with a 8qt stockpot and a 4 qt saute/fry pan would count for 2 pans. You can use either pan as a pressure cooker or as a regular pan. It lists for $119 but is routinely available online in the $80 to $90 range.

Then an inexpensive aluminum nonstick frypan of whatever size is appropriate to your needs. Sam's and Bed Bath & Beyond have them.

Similar to jkom51, but I'd say

8-qt Circulon dutch oven (can be used in oven)
12" non-stick fry pan
2-qt copper-bottom saucepot

and if I could add one more it would be a cast iron fry pan. :)

Only 3!! On regular basis, I use a 2 qt non-stick sauce pan, one of 2 different non-stick skillets, and try to rotate use of cast iron skillets. Sure I have WAY more pots/pans than one person actually NEEDES, but they don't collect dust.

12" skillet with lid, sauce pan in the neighborhood of 2.5 quarts, 8 quart dutch oven. For durability and weight considerations the sauce pan and dutch oven would be SS clad. I'd reluctantly make the skillet non-stick. Unless I could sneak in a fourth pan. :)

Of the pans that I currently own...I'd choose the 6qt Presto pressure cooker, 12" Calphalon skillet & 3 qt Member's Mark annodized aluminum saucepan. (I plan to upgrade to a 8 qt pressure cooker one of these days.)

1. Large (12"?) sautÃ¯Â¿Â½ pan, aluminium with stainless steel interior, pretty tall sides and helper handle, a KitchenAid that my second mom found at a flea market for $15-ish and decided I needed. Uses: general frying, braising, sautÃ¯Â¿Â½ing. A couple times each year I take a buffing pad, drill, and metal polish, shine the interior to a mirror, the pan is slick like ice for awhile.

2. Medium (10"?) cast iron pan, some cheapo Taiwanese no-namer, that the same friend got for me at the same market for the same price. Uses: searing, stirfrying, general frying. So easy to clean, nothing ever sticks, happiest when it's smoking.

3. 7 qt Kuhn Rikon pressure cooker, bought with the encouragement of the CF, and opened whole new vistas through the magic of time compression. Uses: slow cooking fast, fast cooking faster, stocks, stews, pot roasts, legumes, grains, also works as an everyday deep pot.

If I was putting together a traveling kitchen, I might bring the smaller pressure cooker and a smaller sautÃ¯Â¿Â½ pan, just depends on space restrictions.

I think what I use the most are the one very large non-stick skillet with a lid, my dutch oven and my largest sauce pan. That would probably get cooked whatever it was I needed to cook while traveling...

Me too bought a big dutch oven,love,griddle,sauce pan,cant think of name red heavy castiron.
