...Budini (plural) is just a prettier name for pudding, Italian pudding, in this case. The Chocolate Budino is similar to my MLCs, but the 'lava' has a bit more body just like ...uh... pudding.

The Caramelized Budino is firmer than the Chocolate Budino, firm enough to cut through, cleanly. And here endeth my kibitzing.

These are two of my favorites, hope you'll enjoy.

Caramelized Coconut Budino

2 cups very finely grated sweetened coconut

2 cups sugar

8 large eggs

3 tablespoons AP flour*

1 teaspoon Vanilla paste **

Preheat oven to 325°F.

Place the coconut on a baking sheet and toast in the oven until light golden, tossing ocassionally, 10-12 minutes. Reserve. Increase oven temperature to 375°F.

In a heavy, stainless steel frying pan, melt 1 cup of the sugar over medium heat. Do not stir, instead, swirl the pan to melt the sugar uniformly. Cook until it starts to turn golden brown. Immediately remove pan from the heat and pour mixture into an 8" cake pan. Set it aside.

Whisk the eggs together in a bowl. Add the remaining 1 cup sugar, the milk, coconut and flour, whish until well blended.

Pour coconut mixture into the caramel-lined pan, and place in a larger pan. Pour boiling water into the larger pan to a depth of one inch. Bake in the oven until set, and a skewer in the center comes out clean, 55 to 65 minutes. Remove the pan from the oven and let it sit 10-15 minutes. Invert the Coconut Budino onto a serving plate, serve warm, or room temperature.Serves 8.

*I used cake flour.

**The recipe does not call for vanilla, it is optional.

Chocolate Budino

8 ounces bittersweet chocolate

4 ounces (1 stick) butter

1½ tablespoons Rum, Grand Marnier or Vanilla extract

1½ tablespoons cake flour

3 large eggs

½ cup sugar + 2 tablespoons brown sugar

¼ teaspoon salt

Preheat the oven to 375°F. Gently melt the butter and chocolate in the microwave (70% power) for 1 minute. Check the mixture. If chocolate hasn't softened enough, put it back in the microwave and nuke it again, but stir the mixture every 15-20 seconds until smooth.

In another bowl, beat the eggs and sugar until very fluffy, 5-7 minutes. Fold a little of the beaten egg mixture into the chocolate mixture. Combine the chocolate mixture into the remaining egg mixture.

Pour batter into four 8" ramekins. Place on a cookie sheet and bake about 20 minutes or until cracks start to form on the top but pudding is still soft and runny inside. Serve hot with Vanilla Ice Cream.

Terri, I didn't forget about your dear husband. I've just ran out of time playing here, but I will type up my recipe for Creme Caramel later. I think your DH will really like that.
