A pint is a pound. 8 cups is 4 pints. I'd buy 6 pounds of 'maters to more than account for the loss from the seeds, goo, and skins.

I agree, Eileen, I'd buy about six pounds to make sure I got the 8 cups. Since I grow my own, I just keep peeling and seeding until I have enough, I've never stopped to think about how many or how many pounds, I had to actually work it out in my head!

My husband broke our water pipe to our well so I have no water right now. I'm still going to go buy the tomatoes and if I have to, I'll wait until tomorrow when I can wash them. Figures huh? I wanted to do this right now.

Six pounds will be more than enough, your average sized grocery store tomato will equal about 3/4 cup when peeled,seeded and chopped medium.

The pint weighing a pound pertains to liquid measure.

Next time, just buy a few extra tomatoes.
I'm sure they won't go to waste.

Most of the stores have water to rinse off the tomatoes and
put them in another plastic Bag.
They will even give you some water if you bring containers.

When the Power went out here I drove to the Lake and brought back buckets of water to flush the toilet.
And put bags of snow in the frige.
I already had 5 gal.Water Cooler bottles full.

Then I bought a Generator. We never lost power again.

Shaun, I've never frozen it, but I know some people who do and they say it freezes just fine.

No, you don't have to process it at all, if you can eat what's left in a week or so, just stick it in the fridge and eat it when you want it.

We ate some of the salsa last night; some that I didnt process.

It was a little sweeter than the salsas I've had in the past. Wondering if it's because of the tomato sauce I used? I used the 6N1 tomatoes. Man that stuff is good!

Anyway the people who tasted the salsa said they loved it.

All my jar lids are sealed; I pressed the center of the lid and it wouldn't dent in. But for the life of me I can't remember to wipe the rims of the jars before putting the lid on! After forgetting to do it on about 3 jars; I suddenly remembered and wiped the rest. I used a clean damp papertowel. But they all still sealed, guess I didnt get anything on the rims of the jars by using that funnel.

So it's a winner that Salsa! Thanks for the recipe Annie and to everyone else for answering all my questions.

If it's too sweet for you, leave the sugar out. You don't need it for safety issues, I just add it because my girls like it a bit sweeter. Cut it down, leave it out, use fewer onions and more peppers, or fewer sweet peppers and more hot peppers, whatever YOU like. Just don't change the total amount of low acid vegetables or use less vinegar and you're fine.

Annie, it's not too sweet, just sweeter than I've had before. So far we all love it! Gave my daughter a big jar to take home. She already opened it and is eating it.
